Special Thanksgiving Edition
|
|
Have a Very Local Thanksgiving! Jacqueline Hannah, General Manager
Creamy mashed potatoes. Cornbread stuffing. Glazed carrots. Baked butternut squash. Sweet
potatoes candied with honey and pecans. Bread stuffing, oh and
sausage stuffing too. Ooooo, and who can forget the pumpkin pie! It
can't get any better, right?
Now just imagine these
fabulous Thanksgiving classics made with local vegetables, grains,
breads, meats and honey. Yep, it just got better. I am so excited
about all the local farms we can support while shopping to create
our holiday spreads for friends and family! Look at all these
delicious, local, foods available at your Co-op just in time for the
holidays:
Blue Moon Farm (Urbana,
IL): Carrots, three varieties of potatoes, Brussels sprouts, leeks,
spinach, turnips, and lovely butternut squash.
Country Cottage Farm
(Fisher, IL): Need eggs for all that holiday baking? Our
refrigerated department is stocked up with eggs from several local
farms, and Country Cottage is one of those terrific farms that
supplies the co-op with eggs. And why not try a unique twist on your
sausage stuffing this year with Country Cottage's lamb sausage?
Moore Family Farm
(Watseka, IL): You haven't had a real pumpkin pie until you've
had one made from scratch with the pie pumpkins from the Moores!
Buttercup, jarrahdale, and acorn squash. In our bulk department,
don't miss the Moore's stone-ground cornmeal for making
that cornbread stuffing. And if sausage stuffing is a tradition in
your family (as it was on the English side of my family,) try the
Moore's pork sausage this year; you can find it in the Co-op's
freezer section.
Pekara Bakehouse
(Champaign, IL): Starting Monday we will have rolls, rolls, rolls!
Lovely, soft, fluffy white bread rolls and hearty whole wheat rolls
from this local bakery, don't miss out!
Prairie Apiaries
(Salem, IL): Local honey for those candied yams and glazed carrots,
mmmm.
Triple S Farm
(Stewardson, IL): Free-range, organic-feed-raised, hormone-free,
antibiotic-free turkeys! Read a little bit farther down in this
newsletter and we'll tell you the whole story on how to get
your Triple S Farm's terrific turkeys!
Supporting our
community farms not only feels great, it tastes great! Local foods,
grown right here in Illinois soil, add something extra special to the
Thanksgiving table. Have a terrific holiday!
|
Local Turkeys! Get 'em at the Co-op! Details below on picking up or purchasing a local turkey!
|
We have turkeys from Triple S Farms in Stewardson, IL, in stock, in our freezer right now!
Stan Schutte, owner of Triple S Farms, has brought us our first 19
frozen turkeys and they are in the case for folks to buy *as we
speak*. Stan's heritage turkeys are free-range, raised on organic feed, as well as antibiotic and hormone free and raised with terrific
care. We've been out to the farm and have seen for ourselves what a great
job Stan does taking care of these birds and we are proud to offer them
at the co-op.
If you placed a turkey pre-order:
The turkeys are coming in
Saturday morning and will all be sorted and ready for pick up by noon.
The turkeys will all range between 10 and 20 lbs when we get them, and
we will do our best to give you a turkey as close to your requested
weight as possible. Just come on up to the register and request your
turkey and we'll go get yours for you. On Saturday, we will have extra
staff on hand that can get your turkeys for you--look for anyone in an
olive green apron, they will be happy to assist you. Turkeys are $3.55
a lb for those that pre-ordered.
If you did not pre-order:
We have some terrific turkeys in our
freezer now in the 10-11.5 lb range and some in the 18-19.5lb range. We
will be getting a whole lot more on Saturday that will be available by
1 pm. They will be $3.85 a lb.
We cannot, unfortunately, hold a turkey for anyone that did not
pre-order a turkey. They will be first come, first serve. Due to how
busy the store will be from Saturday until Wednesday, we cannot accept
payment for turkeys over the phone, so hurry on in! These turkeys are
frozen and need at least 3 days to defrost in the refrigerator, more if
over 13lbs.
If you have any questions about purchasing a Triple S Farms turkey
or about your pre-order, please don't hesitate to call us at 352-3347!

Recipe: Classic Pumpkin Pie
Jessy Ruddell, Produce Manager Sweeten your holiday spread with this classic pumpkin pie that calls for local pumpkins!
|
Ingredients List:
1 9" unbaked
pie crust
1 small pie
pumpkin
1 teaspoon ground
ginger
1 1/2 teaspoons
ground cinnamon
1/2 teaspoon
ground cloves
1/2 teaspoon
ground allspice
1/4 teaspoon
ground cardamom
Few grinds of
white pepper
2 teaspoons
brandy (optional)
Pinch of salt
3 eggs, lightly
beaten
1 egg yolk
1/3 cup brown
sugar
1/3 cup
granulated sugar
1 cup half &
half
1/3 cup heavy
whipping cream
1. Preheat
oven to 350 degrees. Cut the pumpkin in half lengthwise and scoop
out the seeds. Place cut side down on a cookie sheet and bake for 45
minutes or until the pumpkin flesh is very soft. Scoop out the flesh
into a bowl and measure out 2 cups. Reserve leftover pumpkin for
another purpose.
2. Stir
together pumpkin flesh and all spices until pumpkin has turned a
darker shade. Whisk in eggs, egg yolk, and brandy into mixture. Beat
in both sugars. Slowly add half & half and heavy whipping cream
to pumpkin mixture and stir until incorporated and mixture looks
uniform.
3. Pour
pumpkin mixture into pie crust and bake at 350 for about 50 minutes
or until a knife, put in halfway between the center and the edge of
the pie, comes out clean. The filling will finish cooking after you
take it out of the oven.
4. Let pie
cool completely. Serve with a dollop of whipped cream and enjoy!
