A Gift For The Hostess | It's November and that means lots of entertaining and guests. I think the greatest thing you can give a hostess is a way to avoid being exiled in the kitchen, a slave to cooking and cleaning.
Holiday entertaining can be stressful. A great way to beat stress is to keep your body well-fed with nutritious food. If you start your day with a healthy juice, gorge on a leafy green salad at lunch, snack on nuts and seeds between meals, and eat a sensible dinner, your body will have the fuel it needs to enjoy all the fun you want to have.
It's true that juices, soups, and salads are best prepared fresh, but if you're 'under the gun' and rushing out the door in the morning, chop your vegetables the night before. And many of the dips, pâtés, sauces, salad dressings, and desserts in my books Raw Food Made EZ for 1 or 2 People and Raw for Dessert keep for several days. With two salad dressings and two pâtés on hand, you will be set for the week. As you get familiar with the recipes, you'll discover your own favorites to make in advance.

4-Star Meals in Minutes
| The holiday season is heating up, but your kitchen doesn't have to. When friends and family drop by -- often unexpectedly, and often around meal time - having a well-stocked pantry with lots of fresh, go-to ingredients is all you need so that you'll always be ready to welcome your guests with something good to eat. Instead of spending time with 'shake and bake' or 'stand and stir,' you can quickly 'slice and dice' and 'peel and serve' your way to all kinds of main courses, salads, desserts...or the new trend in dining: tapas. 'Tapas' is the name given to a wide variety of appetizers served in Spanish cuisine. These 'little bites' have become the big thing in contemporary cuisine, finding their way to the menus of top restaurants around the country. Some tapas are cooked and served warm, but many are raw...such as olives. An unique raw tapas to serve to guests is Stuffed Dates in Marinara Sauce. Dates are traditionally stuffed with bacon, sausage, and/or cheese. Tasty, but high in sodium, fat, and cholesterol. Weekend Warriors and Armchair Quarterbacks

 Fall is the time when a lot of people (both young and old) get into football on TV. And when the gang comes to your house to settle in for a night watching NFL games, you can satisfy their appetite and score a point for good health, too. Instead of store-bought dips and high-calorie chips, plan a game-day menu with homemade Mock Sour Cream and Chive Dip, a healthy twist on traditional onion dip. Soaked raw cashews are the winning player in this recipe. Processed with water, lemon, and accented with a team of flavorful spices, this hearty dip scores big taste points when eaten with sliced carrots, zucchini disks, celery stalks, and red pepper slices. Don't Be Scared Be Prepared
| | If you've ever been a Boy or Girl Scout, you know the creed 'Be prepared.' So to be ready for holiday guests, I recommend that you spend about an hour prepping some ingredients in advance so you can make all kinds of raw food recipes super-fast. You'll be glad you did. As soon as you return from the grocery store, wash and dry all of your vegetables. Tear lettuce into bite-size pieces and you can store it in a salad spinner for up to three days in the refrigerator. Most other vegetables can be sliced or shredded and stored in sealed glass jars or containers in the refrigerator for three to five days. For example, slice half a head of cabbage to use in salads and slaws, and shred beets and carrots for the same use. Shake them into a bowl and all that's left to do is add dressing when it's time to serve. Separate broccoli into florets and slice carrots into sticks and store them in ziplock bags and you'll have 'instant' hors d'oeuvres waiting to satisfy the appetite of the hungriest visitor.
