2007 Canals & Munne Insuperable Brut Gran Reserva

40% Macabeu, 30% Xarel*lo and 30% Parellada. In light of its aging, this cava is an excellent value for the money. 25 months. Brut (Reserva). Pale yellow in color, with fine bubbles forming multiple strings of pearls and persistent rings on the glass. Pleasantly fresh, floral and varietal aroma. Brut: Aperitifs, smoked meats, Iberian cured meats, green salads, vegetables, fish, poultry and desserts. The rich, mouth-filling Insuperable Brut Reserva is one of the better cavas we've tasted - it has been on the lees for 25 months. It shows light honey biscuit aromas on the nose and offers a fine mousse and clean palate of brioche, citrus, and almond flavors. Great value!

2010 San Dionisio Santonegro

85% Macabeo, 15% Airen.  Co-op wine, Albacete, Spain. Bodegas San Dionisio Soc. is a cooperative founded in 1957, located in the town of Fuenteálamo, Albacete, Castilla la Mancha. White tree fruit of pear and apple, white floral nose. Pretty acidity and freshness. Lingering finish. Clean and light. Macabeo - The most popular light-skinned grape of northern Spain. High in production, the Macabeo takes well to hot and dry regions. It also buds late which makes it less likely to be harmed by frost. Together with the varietals Parellada and Xarel-lo it is used in the production of the sparkling Spanish wine Cava. Wines from the Macabeo grape are dry, medium in acidity, and have notes of delicate wildflowers and bitter almonds. Macabeo is best consumed young. Airen - The most widely planted grape in the world, Airén owes its popularity more to its high productivity and resistance to drought than to any distinguishing flavors or aromas. An extremely vigorous grape, Airén grows in almost every wine producing region in the world. It is quite resistant to heat and lack of water, and will adapt to almost any soil type. It has very neutral aromas and flavors, with hints of citrus, green apples and nuts. Airén is best consumed as fresh as possible.
