(taken from www.scrumptiouschef.com)

We received some stunning news yesterday.

We'd planned on using the ancient brick pit at Three Little Pigs to smoke the briskets for the party on Sunday, but we got a better offer. Back when Home Grown Catering had the touring contracts with ZZ Top and Willie Nelson, they had to be able to cook large amounts of brisket, sausage and ribs for the hungry musicians. They carted along a giant mobile pit so they could cook Texas-style barbecue for Willie, Billy Gibbons and the rest of the crew{s}.

Chef Raymond Tatum inherited that pit when the former owner of Home Grown, Kent Hayner {RIP} passed away earlier this year. We knocked out a batch of Walter Jetton's, perhaps the most famous pit boss in the history of Texas, barbecue sauce yesterday, and now we're preparing to cook on the pit that fed the Willie Nelson Family Band and ZZ Top?

Texas forever.

We'll be offering a 10% discount to holders of Drew Thornley's {Man Up Texas BBQ} Q Card on Sunday as well. Details on how to get one http://theqcard.com/

Friday Night Tasting Lineup

2011 Altosur Chardonnay

100% Chardonnay, 90% Stainless, 10% 2 & 3 year old French oak. Nice zip & malic acid. Some more mineral. Riverbank - Limestone. Flowery nose. Not clobbered with oak. Really tasty for the money, from 4,000 ft altitude vineyards that are hand harvested. Lemon & apple notes, round fruit balanced by enough acid. Gets some creaminess from the oak aging. Aromas of pineapple and stone fruit consisting of white peach and apricot. A little ginger spice. Soft on the palate, with nice intensity of stone fruit again and some toasty vanilla from the barrels. Grilled lemon and melon. Caramel and ginger note on the clean finish. We like it!

Our Price: 11.97

2011 Altosur Malbec

20% French oak, 2 & 3 year old. Scrubby. Tasty at the price, will replace Uma Collection Malbec. Aggressive pricing. Black plum. Strong buy. Same high altitude vineyards - harvested in the cool mornings to preserve fresh blackberry & blueberry fruit. Soft tannins, light oak. Small family winery. Solid red for steak & potatoes, beef stew. Juicy & velvety. Rich, deep black fruit flavors.

Our Price: 11.97

2011 Altosur Cabernet Sauvignon

Nose more shy. 80% stainless. Juicy, ripe. Some grape skin grip. Milk chocolate, pretty red fruit, currant. Cherry, blackberry, blueberry, plum, spice, and flowers. Sweet & round tannins, concentrated. Cool growing season & strong sunlight. Big diurnal temperature shift. Finish gets more tannic. Nice textbook Cabernet Sauvignon flavors, firm & rich. Lengthy finish for Cabernet for this little money. Balanced & pure fruit, structured. Will work with game, sharp cheddar, and cabeza tacos from your favorite truck. BBQ meat, venison, rabbit, feral hog.

Our Price: 11.97

2010 Finca Sophenia Reserve Cabernet Sauvignon

Inky, cocoa bean, black cherry, light leather, pencil shaving. Classic cherry, balance between acid / tannin / fruit. Light spice box palate, more bright / fresh currant, red cherry palate. Gets grip, not overblown. Finish is long with toasty oak that accentuates instead of covering the fresh fruit. Estate grown in loose, rocky soils. Parcel selected, low yield grapes. Red & black fruit, spice, mineral. Great winemaking, bringing the fruit to the fore without turning it into a fruit-bomb. NY Strip, Asian marinated tri-tips, a good burger. Tasty goodness.

Our Price: 17.57
