Thursday Night Tasting Lineup
2010 Dom. Millet Sancerre
A powerful nose with aromatic qualities that are very representative of the limestone-clay soil found in the village of Bué. The wine has good acidity from the young vintage while at the same time displaying a surprising suppleness and roundness. This wine has a very long finish. Grapes: Sauvignon Blanc. Pairings: White fish with a citrus sauce, lobster, scallops, white meats. Sancerre Blanc makes an excellent Aperitif and a wonderful accompaniment for fish, crustaceans orthe famous local "Crottin de Chavignol" goat cheese. Well-matured vintages marry well with foie gras. Domaine Franck Millet, Loire Valley. Single Guyot cut. 6500 plants. Limestone-clay. Static racking of the must. Slow, low temperature Alcoholic fermentation in thermoregulated stainless steel vats for 7 to 10 weeks. No malolactic fermentation. Stirring of the lees for 3 to weeks. Light filtration.

2011 Le Petit Caboche Rose
Crisp, fruity, dry and simply delicious. A beautiful floral nose with flavors of raspberry and strawberry. The color is very pale pink, bright, with hints of gray-blue. The nose is expressive and elegant, with an attack floral, peach and red berries. The palate is creamy and fleshy attack and develops a nice crunchy currant dominant. The finish is delicately tangy. Grapes: Carignan. Pairing: chill it down and drink with just about anything. Domaine du Père Caboche, Vin de Pays de Vaucluse, Rhone Valley.

2007 Prieure de St. Benedictin
About 16 acres of this 25-acre vineyard, 11/2 hours south of Paris, are planted in Sauvignon grapes,the rest in Pinot Noir. The name of the village, St Céols, first appeared in records dating to 1259. 100% Pinot Noir. Domaine Le Prieuré de Saint Ceols, Loire Valley. The Cuvée des Bénédictins Rouge has an expressive aroma blending dark fruits, licorice, coffee and smoky notes with finesse. In the mouth it is a full bodied wine enveloping delicate tannins. The red fruit (strawberry, raspberry) leaves its mark on the palate. Overall a nicely balanced wine! Salmon, tuna, white meats (duck with a cherry sauce), pastas, some dark meats.

2009 Dom. Rouge-Bleu Mistral
Coming from the oldest Grenache vines on the estate (75 years old), and joined with Syrah, Mourvédre and Roussanne, this vintage of Mistral is very well balanced with all qualities - acidity, alcohol and tannins - in almost perfect harmony. Highly concentrated fruits, a result of low yields per hectare, lead to a complex wine, round in the mouth with hints of chocolate and a long finish. Domaine Rouge-Bleu, Rhone Valley. Named after the powerful wind that blows through the region, Espinasse's wine is a bold expression of the micro-climate and terroir. Stems, leaves, and wild yeast go into this amazing cuvee. Un-filtered, bold, intense. Wine Spectator - Rich and smoky, with mouthfilling charcoal, roasted fig, tobacco and plum sauce notes all rolling through the broad finish. This has muscle, but stays accessible and balanced. Grenache, Syrah, Mourvèdre and Roussanne. Drink now. 1,000 cases made. Score: 90. -James Molesworth, June 30, 2011.

2005 Ch. Bichon Cassignols - Graves
Château Bichon Cassignols, Bordeaux. Aged in vats and oak barrels, the nose carries elements of red and dark fruits. The body is well-structured and supple in the mouth. Grapes: 55% Merlot, 45% Cabernet Sauvignon. Pairings: Roasted or grilled red meats and game. A big mouthful with lots of extract. Tannins strong but fruit balances well. Aged in vats and oak barrels, the reserved nose carries elements of red and dark fruits. The body is well-structured and supple in the mouth. Pairings well with roasted or grilled red meats and game. Jean Francois Lespinasse operates the winery founded by his grandfather after the First World War. Located 20 km from Bordeaux, in the Graves appellation in La Brède (childhood home of the philosopher Montesquieu), the vineyard is adjacent to the appellation of Pessac-Léognan.

2010 Galan Chardonnay
This Chardonnay is in their entry level range and is quite different from the intense tropical fruit-flavored wines produced in Chile's Central Valley. Bright straw color with subtle aromas of peach, melon and spicy pear. Supple rounded pear, peach and fig flavors with a gentle creaminess and a touch of hazelnut. Highest terrace, light spritz, rationally oaked. Some orangey citrus, goes to buttery. Clean & juicy. Pretty solid. Used French & American barrels.

2011 Galan Chardonnay
Similar notes to above, a little more crisp acid, a little less nut and creaminess. In the cool-climate South American wine regions of Argentina's Uco Valley and Chile's Casablanca, Chardonnay has started to develop a presence. In the 1990s, Chardonnay became the second most widely planted white grape variety in Argentina-second only Torrontés. In Chile, it has surpassed Sauvignon Blanc and Sauvignon Vert to be the most widely planted white wine grape.

2010 Galan Carmenere
Dark ruby color. Notes of cherry, dark berries, tobacco and licorice on the nose. Light-bodied, but still shows concentration of black fruits, black berry in particular. Light black pepper on the finish. Now rarely found in France, the world's largest area planted with this variety is in Chile in South America, with more than 8,800 hectares (2009) cultivated in the Central Valley. As such, Chile produces the vast majority of Carménère wines available today and as the Chilean wine industry grows, more experimentation is being carried out on Carménère's potential as a blending grape, especially with Cabernet Sauvignon.

2011 Dona Catalina Carménère Reserve
This wine displays the brightest qualities of the Varietal Carménère. Ruby color, ripe red fruits, and a strong bouquet that accents hints of raspberries. Dona Catalina Carménère opens up with hints of vanilla and clove on the nose, but finishes with a strong black pepper presence on the finish. It is a true balance between fruit and spice for Carménère.

2010 Galan Cabernet Sauvignon
This 1st tier Cabernet Sauvignon offers the best of fruit-forward, lightly oaked Chilean Cabernet. The aromas of red berries and ripe fruit give one the first impression of a medium-bodied wine that combines classic cabernet aroma and flavour with the slightest touch of french and american oak.

2010 Galan Private Reserve Cabernet Sauvignon
The wine possess a dense ruby/purple color, and offers exceptionally expressive aromatics consisting of smoke, black cherries, raspberries, and a touch of blackberries and cassis. The Private Reserve wine's full-body with velvety tannins give way to a slightly spicy, long, and moderately tannic finish. In Chile, the wines were historically limited by the excessively high yields that were commonplace throughout the country. As producers begun to concentrate on limiting yields, regional differences began to emerge that distinguished Chilean Cabernets.
