Welcome back! Hope you had a great start of the year. If things didn't go so well, please try not to beat  yourself up too badly. All that really happened is that a couple of weeks passed by, as they inevitably will.  The  pressure to keep on track during the holidays makes life feel a bit  harder than it is, in reality. Add to that your wish to prove that you can keep this New Year's resolution, and you have set yourself up for some serious misery! 
 

I hope that you can eventually start looking at this whole process as a way of life, not something that you do continually, failing over and over for the rest of your life!!  That's just exhausting, and clearly doesn't work. So, let's look at this year as a new start, or even better, a simple continuation of breaking some bad habits and making better choices. Let's all leave the guilt behind and create good eating habits that we can sustain for life. Let's all start preparing foods that we truly enjoy, foods that not only support our good health, but also taste great and make our mouths water in anticipation of enjoying them!
 

Today's "Tea Time" is the second of a three-part discussion of the flubs we make time and time again.  Having an understanding of them is all you need to get a handle on them; awareness is key.
 

This week's "Did You Know" is one you should not miss!  I am often somewhat long winded, and I fear that many of you don't get through the "Did You Know" section before you are called away by one of your many responsibilities. I would really like you to try not to miss this week's because it explains how we really gain and lose fat! I think you'll find it very enlightening.



And for my "Favorite Foods" section, this week I have a crunchy salad that will, no doubt, end up being one of your favorites, as well.

 Flub number 2:  the mistakes we make

 

Last week I spoke of three flubs we tend to make when it comes to our weight loss regimen.  The first one had to do with our propensity for lying to ourselves and believing our lies. I would like to take this opportunity to continue the discussion.  Our all-consuming interest in the "how tos" of weight loss is fed by a mind-numbing plethora of advice about what to eat, when to eat, how much to eat, the benefits of eating, and why we're eating our hearts out in an effort to lose weight.  Too much! The irony is not lost on me that I have added my two cents to the weight loss discussion and am now one of the advisors, but the difference is that I want each of you to succeed, not for just a minute, but forever! In addition, I want it to be easier than it has in the past, and the first thing that will make it easier is simple.

 

Enjoy your food! I work with people who wish to lose weight for reasons stemming from simple vanity to serious health concerns. Unfortunately, most feel "forced" to consume foods or other substances that they do not enjoy. While many have learned, from a lifetime of dieting, to sustain this behavior for a period of time, they eventually break down and the gain-loss cycle repeats itself. Don't believe me? Check out yo, yo, mamma! You must finally understand that if you don't like what you are "supposed" to eat, you're not going to eat it!


 

I know, my ingeniousness knows no limits, but sometimes the simplest of truths gets lost in the haystack! As you begin to rethink your food choices, you might have to experiment a bit, but once you start looking at alternatives, you might be surprised to find that you enjoy many different foods, foods that you can eat without guilt, foods that will sustain your improved health and lower weight, foods that you can anticipate eating with real pleasure. This is your life; choose foods you like, and never eat anything you do not look forward to eating! 

 

People often joke about the lettuce leaves and tofu upon which they think I subsist, and while I have enjoyed both at different times in my life, neither are staples in my diet.  I love to eat, and I love to eat good food!  Admittedly, it took me  to some time to familiarize myself with new types of foods, and there was some trial and error involved in the preparation, but I believe it was worth every effort I made to discover foods that I could enjoy eating, knowing that they not only tasted great, but also were good for me. If the foods you eat to sustain your health and weight loss are only to be endured temporarily, I can guarantee that you will put the weight back on the minute you go back to the way you used to eat-the way that let you down and helped you gain weight and made you crave more food. Perhaps you are ready to try something new?

 

I am keeping this "Tea Time" on the short side for two reasons. First, I have made my point, and second because I know I am a bit wordy, at times, and some of you only get a chance to read the "Tea Time." I really want you to get to the "Did You Know" section today! Therefore, to sum up, flub number two is eating foods you don't like.  Weight loss and improved health result not from punishing yourself, but from giving yourself the gift of good, fresh foods-every day and at every meal!

You're bound to find some that appeals to your taste buds. The recipes are all easy to prepare, and every one of them will help you get to your goal.  

 

Give it a shot! What do you have to lose? Oh, right! Well, at least you're finally on the right track!

Did you know...


 

that there is a very good reason why we get fat!  I realize that we think we know the answer to this, but do we?  Fad diets and charlatans' promises that weight can be lost from specific areas drive me crazy because they are nothing more than shameless lies told to the desperate among us. Even if you get suckered in and actually lose some weight, you will have a very hard time maintaining the loss once you go back to your normal way of living.

 

Yet we persist in fighting the good fight, losing and gaining, again and again, following the advice of the "experts." Why do we cling to the idea that this is so difficult, impossible, even? Perhaps we have just been listening to the wrong people. Most of those telling us how to lose weight are in business to sell something. If you buy their product and temporarily lose some weight, you will tell others, and then everyone you know will buy whatever they sold you. And on and on it goes.

 

The problem is not that losing the weight is so difficult. The real struggle is in keeping it off forever. Why is it so hard?  What can we do to stop this madness and Just Lose It, and keep it off? Why must we lose it and worry about getting sick, weak, and fat again?  How can we enjoy our food and stay healthy and happy with our bodies?  Let me break it down into a few very simple facts that just might change the way you think about what food is doing to your body and mind.

 

What is one of the main culprits of weight gain? A very easy answer: sugars and white flour. (Again, I am making this simple.)

 

As I have stated before, we did not all become overweight because we were very hungry for a long time and ate to alleviate that hunger.  That is just not the case for the majority of us. In an article I read recently, Gary Taubes told a group of medical professionals that being overweight and being overly hungry are side effects of carbohydrate-driven hormones. What does this means to us?

 

Basically, glucose and insulin (both products of carbohydrate metabolism) play an enormous role in fat accumulation.  Some, particularly diabetics, already know this, but how about the non-diabetics among us? Simply put, there is a chemical compound resulting from glucose that turns the good omega- 3 fatty acids, like flax and fish oils, into triglycerides, the type of fats our body stores.  Thus, anything that transports glucose into fat cells also works to deposit fat.  And that "anything" is insulin. 

 

When insulin is secreted, or when it is elevated fat then accumulates in the fat tissue! When insulin levels drop, fat is able to escape from fat tissue and we lose weight! So simple! Why didn't I think of it!  It's science, boys and girls, not magic!

 

Now then, since carbohydrates elevate insulin levels and a boost in insulin is what makes fat storage possible, carbohydrates account for fat deposits! Even worse than regular carbs are refined carbs. These create insulin surges and insulin dips that make us crazy with hunger. Not many have the strength to fend off this type of hunger!

 

What does all of this mean to us? Well, we need to eat fewer carbohydrates and eat more whole foods like meats (save red), fish (loaded with good omega-3's), eggs and non-starchy vegetables!  We should also remove bread, baked goods, potatoes, yams, rice, pasta, cereal grains, corn, sugar, ice cream (some things should be obvious!), soft drinks, fruit juices, bananas, other tropical fruits, and beer.  A long list, I know, but most of you have already eliminated many of these. The good news is that there are plenty of other really good foods to eat! I have an extensive list of recipes that include many delicious whole foods that you might just come to love. Taubes says that removing these carbohydrates from your diet will derail the insulin peak/dip roller coaster, and you will never again be voraciously hungry. This will make weight loss, and the more important maintenance, much easier.  I find that when eating this way, the fat just melts off; however, if you can't quite  live the  "No Carb!" lifestyle, at least choose carbs that are low on the glycemic load scale.  Eliminating carbs is as important as getting your animal protein from mostly cold-water fatty fish a few times a week. This is the way to provide the body with the omega-3 fatty acids necessary for optimal health.
 

Last year, we were focused on fighting our way uphill. This year we are going to make an important shift: we're going to give ourselves a break and put weight loss in our past! We're going to begin working on maintenance and getting our health back. Just imagine the possibilities...


 


 My Favorite Things to Eat!

 Crunchy Farro Salad with Artichokes, Red Bell Peppers, and Edamame!

 

This is a nice change from your stereotypical salad. It makes a nice lunch or light dinner!  Either way, remember that I want you to look forward to all of your meals, and I want you to enjoy your food this year.

 

Enjoy!

 

What you need:

 

1-cup farro or wheat berries (faro might be hard to find; wheat berries work just as well)

2 ½ cups low sodium vegetable stock

1 sprig rosemary

¼ teaspoon plus a pinch of salt, divided, or to taste

2 cloves garlic, peeled

2 ounces fresh basil (1 ½ cups leaves)

¼ cup pine nuts

2 tablespoons lemon juice

¼ cup extra-virgin olive oil

12 baby artichokes or one 13-ounce jar artichoke bottoms, drained

½ large lemon (if using fresh artichokes)

1 small red bell pepper, sliced

1 cup shelled edamame, thawed

Freshly cracked black pepper

 

What to do:

 

In a small, heavy saucepan, dry-toast the farro/wheat berries over high heat until hot and lightly fragrant.  Add the vegetable stock, rosemary, and a pinch of salt.  Bring to a boil, reduce the heat to a simmer, and cover.  Cook for about an hour, until tender.  Drain any excess stock and cool to room temperature.

 

Put the garlic, basil, and pine nuts in the work bowl of a food processor and process to chop very finely.  Add the remaining ¼ teaspoon of salt and lemon juice and process until smooth, Gradually add the olive oil to make a smooth paste.

 

Trim and halve the baby artichokes and put in a large bowl of cold water with half of the lemon.  Bring a large pot of water to a boil, drain the artichokes, and boil them until a knife inserted into an artichoke enters easily.

 

In a serving bowl, toss the cooked grain, dressing, artichokes, bell pepper, and edamame.  Crack black pepper over the salad and serve.
