Hello !

 

  Finally, the cooler weather! And thank goodness Labor Day weekend has come and gone!  We can all now breathe a collective sigh of relief, knowing that our schedules are back to some sort of normalcy, and we can now settle down to a more consistent way of eating and moving forward. 
 
This week's "Tea Time" was written late at night; although I am not going to apologize for it, I do feel an explanation is necessary-then again, maybe I can let you be the judge of that!  I have to forewarn you that it is geared more towards the girls, but boys, please don't let that dissuade you from reading on; it might very well give you some insight into the and psyche of the woman in your life.  You might even find a little bit of the piece pertinent to your situation. I touch upon what we, as women and young girls, might have been led to expect while growing up, the indoctrination that might have influenced our perception of reality.  This particular subject is important, since it very well might be one of those buried reasons that cause us to overeat as we do.
 
The  "Did You Know" covers a very exciting fact about food that you might find surprising!  Yes, Virginia, there really are foods that can help you lose weight faster!! 
 
The last, but certainly not the least of our topics is the "Favorite Foods." Today, I'm serving up my mother's mussels!!  Many of you might never have tried mussels, or might even think they're similar to other shellfish (like oysters and clams), but they're not!  These  low fat, high protein
little packages have a very meaty taste that you will find surprisingly satisfying.

Mirror, Mirror, on the Wall?
 
As a little girl I believed. I believed that life should be easy and it would be.  I believed that I should be pretty and I would be.  I believed that I should be loved and I would be.  I believed that love should and would conquer all. I believed that all of my dreams should and would come true. I believed it was just a matter of my being good-you know, kind, clean, tidy, generous, honest, reverent, and hard- working. These were the attributes of a good girl, a good daughter, a good sister, a good wife, mother and friend, and I believed that I should and would be all of those things. With all of my heart, I believed it all.
 
Who made up those fairytales? What started a little girl thinking beyond all doubt that she was the fairest of all and her knight in shining armor would one day fight to the death for her; that her Prince Charming would swoon at the mere mention of her name; that people the world over would marvel at her special self, and every other girl would want to be just like her?  Where did those limiting stories originate? And why did we all believe them at one time or other-until the fateful day when we looked into that mirror and asked for the last time, "Who is the fairest of all?"
 
On that day, the mirror sneered back at us, "Move over Rover, so I can see who else is in the room!" 
 
Aghast, we cried, "What? Not me?  You mean I got this whole thing wrong?  What are you saying?  I'm Cinderella at the ball; I have the dress and tiara to prove it! Wait! All you have to do is wave a magic wand and you'll see that I'll clean up  good! Really!"
 
What a rude awakening it was the hour I was slapped into consciousness standing in front of a mirror that showed me just the person I did not want to see: me.  I was just a girl who needed to go to school just like every other girl. I was your basic pimply girl with very big frizzy hair and a body that was as ordinary and plain as that of pretty much every other girl. So, what is a girl to do but to pick up a broom and start sweeping up the shards of disillusionment? After the reality check, I was stuck to the wall with the glue of my plainness, not noticed and not missed.  Who did I think I was, expecting to be unique, the fairest of all. Silly little girl!


But deep inside, I had a secret. A secret that I have never told anyone. You seem even after that day in the mirror, I still believed the fantasy should and would come true.  I believed that if I worked hard enough, if I did enough for everyone around me, if I gave to everyone more than I had to give, more than they could think to ask, I would be rewarded with the prince and the glass slippers.  If I just loved more, cleaned more, helped more, the trophy would be mine. To no avail, I continued to wish; sadly, no prince ever asked to see my sparkling glass slippers. Undeterred,  I held on. For as long as I could, I held my breath because I just knew;  I knew that one day I would be chosen, that my turn would come because I was a good little girl, a very good little girl.
 
And then we came of age, and the long awaited time to strut our stuff had arrived. Invitations went out, and my friends were thrown into the whirlwind of fittings and facials and fingernails. I was left to feed my disappointment. I mean, why not?  It wasn't as if anyone were going to notice. And with every retelling of the lovely evenings reserved for others, I secretly ate some more...I had a lot of secrets back then. 
 
I never told anyone, not even my closest girlfriends, what I wished and waited for because I knew they would laugh at me. They would absolutely laugh at me because they were living my secret, and we both couldn't live it. Someone had to go without. And so, when they acted as if they were the fairest of all, I went along. When they told me Prince Charming was taking them to the ball, this good little girl not only let them wear her gown (since it didn't fit anyway, she threw in the tiara, to boot. Yup, I showed them how to walk and how to talk. I was the good little friend. I was the girl who gave and gave and was happy to do it because I still had the glass slippers hiding under my bed, ready for the day when my turn came. But then, one day, one of the fairest asked for my glass slippers.  My slippers!  How could she?  I had given everything else I had to give!  I had given all of it, and now they wanted my glass slippers!
 
"What do you need them for? Your feet are bloated and my feet...well, look how pretty my feet are?" she said. And she was right, so I reached under my bed and handed over the keys to my kingdom, knowing that from that point on I would always be lost. How would my Prince find me without the only glass slippers in the kingdom?  So, there I was: empty and cold and barefoot. And who was to blame?
 
Okay, you must think that I have lost it, that I have written one e-zine too many!  But this fantasy that so many little girls embrace growing up can come tumbling down right atop our heads. When my crash came, all the king's horses and all the king's men couldn't put poor little delusional Berta back together again!  We are crushed when we realize that life is so much harder than we thought it was going to be: that beauty is not simply wearing the hot dress and the fantastic shoes; that you have to work your butt off to lose even a pound or two; that you can give and give and give and no one really cares-well, they care, but not about you.  If they think at all, most people think that you like to give; that you like to take on more than you can; that you like to see other people wear your treasured glass slippers. Our real pain arises because despite all evidence to the contrary, we little princesses continue to believe that the fairy tale will one day come true, and on that day, we will begin our happily-ever-after life. 
 
Is it so surprising that you haven't made any serious effort to eat well? After all, you believe in fairy tales.  Are you waiting to take a bite from the proverbial apple?  You know, the forbidden one we women, collectively, have eaten, despite what we know about it?  And why has that apple tempted each of usl?  Please, don't suggest that we have been so very, very, hungry! No, it's because, in our minds, that special apple will make all of our dreams come true. Isn't that why you're beguiled by one diet after  another, hoping and praying that this time your dreams of a slimmer you will finally come to pass, that you will be transformed by some magic wand into the fairest of all? Ahhh, but guess what?  When you took a bite of that apple, it put you to sleep. That's right! For years and years you have been sleepwalking, waiting for something to happen.
 
Well, wait no more! Get ready because now I'm going to lay one on you! Ready? Pucker up because it is going to be a doosie: this kiss is the sweetest one you will ever get because it's full of honesty and truth.  They're not fairy tales that you've been waiting to see manifested in your life; they're lies. We all want to be the fairest of all. I want it. You want it. Everyone wants it! So, let's get it together and put away those fantasy stories and get to the crux of the problem:  you and I have believed in the lies. We have believed life would imitate impossible or improbable stories. We were so invested in them that we forgot to write our own. And in so doing, we forgot to be our own person. Not knowing who we are and not valuing that person has relegated us to a place of waiting for someone else to affirm and define us. If we continue on this path, we shall remain in a perpetual state of sleep, dreaming our lives away.
 
Wake up little girls. Wake up and smell the roses! I have taken off the thorns and left a trail of breadcrumbs (organic, whole wheat, and low fat; no bird would eat them) to show you the way.  You will get your hands dirty and callused, but those will be battle scars earned in the fight for truth, the fight to take back your self and your soul. So close your eyes, pretty little girls, and tap your heels three times saying,  "There's no place like home." Keep saying it until you bring yourself back to the reality of the miracle that is you. Then toss that stupid mirror out the window because it doesn't work: it has never reflected your unimaginable beauty back to you!

Did you know... 

that that some foods really do help burn fat?  Food has what is called a "thermic effect." The thermic effect refers to the amount of energy the body must expend to break down the food so can be utilized to fuel the body. As you know, we expend energy every moment we are alive, whether we're contracting our muscles to breath or digesting our food to acquire energy. Since excess fat is really only stored energy, you might find some solace in looking at your extra weight as evidence that you are highly efficient at storing energy!  Anyway, to get rid of that energy, you have to burn more calories than you took in-a simple concept, but not always an easy one to put into practice.  So, why not try to start today and help the process along? I'll tell you how!  Protein requires the greatest amount of energy to process; protein causes your body to burn hotter, and that helps you burn more calories.  To put this in prospective, after eating protein, your metabolic rate can rise as much as 30% above your resting metabolic rate. Dietary fats put you at about 2 or 3% above your resting metabolic rate, and carbohydrates are somewhere in between. 
 
Obviously, we are wise to consume foods that require the most energy to process, and so our first choice should be the kinds of proteins that keep our bodies burning more energy all day long.  Please be sure to choose proteins that are low in fat: cod, tuna, halibut and other beneficial animal proteins, such as organic chicken breast (skinless, of course). I always prefer fish over meat since the overall fat content is usually lower and the fat is healthier. It makes sense to go for the fish that is loaded with wonderful omega 3 fatty acids, as opposed to the meat that is high in saturated fats.  Let's not forget all of the non-animal protein foods that are just as good, and in many cases much better than the animal proteins. These include beans: soy, lentils, and Lima beans, as well as many more. These are all high fiber proteins, making them another alternative to the meats that contain no fiber whatsoever.  Keep on going for the tasty, high fiber, low fat proteins, and watch that fat melt away!
 
Now that you understand that high protein foods burn more fat than other foods, there is another interesting food fact. Some foods are known as "catabolic foods." These foods require more calories to process than they provide.  Catabolic foods are the opposite of anabolic foods. For example, a medium apple (catabolic), provides an average of 85 calories; however, your metabolism would require and additional 99 calories to metabolize it. Thus, your body burns more calories than you are ingesting for an overall net loss!!  So, to help your weight loss, you should eat about ten servings of catabolic foods each day. Then make sure to eat high quality proteins to burn even more fat.  Seems simple, right? 

Just make sure that you spread the wealth throughout the day; don't sit down and overeat at one sitting because the rules still apply! You need to eat smaller portions until you are a tiny bit less than satisfied, you must feel just a bit hungry right before you go to bed, and you must continue to drink plenty of water.  So, incorporate the catabolic foods into your regular breakfast, lunch and dinner. Have them for your afternoon snack, as well. You don't have to worry about counting calories; as you know, I don't believe in doing so anyway, but in this case you already know that you will exert more energy burning them off than what they contain, so don't worry about it at all! 

Below is a list of delicious catabolic foods that you can easily add to your daily meal plan.

Don't forget the low fat, high fiber proteins and every day will be the perfect weight loss day, with the added benefit of contributing to your improved health and the feeling of youthfulness. 

High Grade Catabolic Foods:

Fruits!

Black/blueberries, grapefruit, oranges, plums, strawberries, lemons, raspberries, limes, pineapple, cantaloupe, watermelon, Bartlett pears, raspberries, and apples. 

Vegetables!
Artichokes, parsley leaves, asparagus, cucumbers, peppers, tomatoes, broccoli, eggplant, celery, sweet potatoes, radishes, zucchini, Brussels sprouts, leeks (cooked), spinach, carrots, lettuce 

So, there you have it. It all seems so simple in theory, right? Well, it is equally simple in practice! If you understand why you should choose differently, you will do so with the goal of making this journey that much easier, and faster. And who can complain about the side effects of better health and the feeling of rejuvenation that you will enjoy for years to come? 

Take it a day at a time, and add some of these great, fat burning, energy-creating foods to your lives!  You won't regret it!
 

 

My Favorite Things to Eat!
 

Mussels al Diablo
 serves 4

 
When I was growing up, my mother, like most, was known to serve certain meals more frequently than most.  I never thought hers were unusual, but they were not meals served in the typical American home.  I took for granted those meals that are now entrees we order at a restaurant, or serve on special occasions.  I don't really know why they aren't served more often, since most of them are very inexpensive, healthy, and easy to make-that's why, I'm sure, they were staple meals in my home.  Anyway, at least once a week we would have mussels.  Mussels are a delicious, wonderful source of protein, and low in fat. They can be used as a main course or added to quinoa or another grain to make an absolutely delicious meal that will impress your friends.
 
Quick note:  On occasion, I have no problem using ingredients that might be considered higher in fat. In truth, we need a little bit of good fat.  One small, healthy meal that you enjoy and your taste buds find satisfying is worth eating on every level.  The saying, "Don't sweat the small stuff!" works here.  So, olive oil has essential fatty acids, and I am a great proponent of using it in all my meals. Other ingredients, such as the homemade croutons pose no problem, so long as you eat them in moderation as part of the meal. Just keep all your foods throughout the day well balanced and moderate.  You will see that this is a healthy and gratifying way of eating. Just watch what you have eaten throughout the day, keep portion size in mind and don't eat late at night. Enjoy!
 
What you need:
 
40 Prince Edward Island mussels or other high-quality mussels
1 cup olive oil
Mussels 2
¼ baguette, sliced on the diagonal into eight ¼" thick pieces
2 tbsp. chopped garlic
2 cups canned tomatoes with their juice, crushed
1 tsp. hot red pepper flakes
Kosher salt, to taste
1 cup dry white wine
½ bunch fresh flat-leaf parsley, stems removed and leaves slivered, plus more for garnish
2 tablespoons extra-virgin olive oil for garnish
 
What to do:
 
Preheat the oven to 425.
Clean the mussels by scrubbing well under cold running water. Remove the beards (you might find them already clean, but if not, this is very easy to do). 
Pour ½ cup of the olive oil into a shallow baking dish.  Toss the bread in pan and bake for 10-15 minutes, turning once or twice, until golden brown and crisp.  Transfer the croutons to a plate to cool.
Pour the remaining ½ cup of olive oil into a large sauté pan and heat over medium heat.  Add the garlic and cook for 2 to 3 minutes, or until lightly browned.  Add the mussels, tomatoes, and pepper flakes and season with salt to taste (use sparingly). Stir well and cook for about 15 minutes.
Add the wine and parsley, cover, and cook for about 3 minutes or until all the mussels open.  (Discard any that do not open.)
Pour the mussels and the sauce into a large serving bowl, Garnish with parsley and drizzle with extra-virgin olive oil.  Stud the bowl with croutons and serve.
