Welcome back !


Hi everyone and welcome back.  Hope you all enjoyed the festivities of the Fourth and were able to honor your commitment to yourselves, but I know some of you just weren't quite in the zone, and I ask you please not to throw in the towel!  There will be many more opportunities to work out your way of dealing with the summer party.  It is a process and a journey, and this is just the bumpy part that forces you to develop a consciousness around your choices. Not to worry! You will continue to improve without even realizing it!

 

In case you did not see my e-zine last week, I want to explain that this is the first e-zine not attached to a blog. I decided to put the blog on hold for the moment, in favor of channeling my efforts toward finalizing my website.  The e-zine will continue as it has in the past, and the blog page will still be available. Please go back and read the blogs when you need a boost. If you are new, you can take advantage of the early blogs and allow me to hold your hand as you begin your journey.

This week's e-zine deals with setting good intentions and how to actually adhere to them, no matter what.  We often verbalize our good intentions, but we rarely follow through. However, it's not hard to have a perfectly clean day. Read on and rethink the way you respond that voice in your head. Perfect just one day, and you're on the way. I know you can do it!

Setting Good Intentions
 
You know how you get psyched after reading or hearing  about  someone who has "done it" by visualizing a new, thinner self? You know the feeling: you suddenly decide that today is the day to change gears. So you set those good intentions down on a sheet of paper and tape it to the mirror knowing that tomorrow will bring the birth of the brand new you. You're unstoppable! I mean, how could you go wrong; you've set your good intentions and you're committed, right?
 
Except the next morning comes, and you fly out of bed, and before you know it, you have consumed the same bagel and cream cheese that you enjoy every morning, and the day has officially gotten away from you. In fact, you barely even remember setting your good intentions the night before.  "Wow!" you think to yourself, "A momentary memory lapse.  Really! If I had noticed the list on the mirror, I certainly would have started off differently."   Alas, it's the same old story.  The next thing you know, you've downed a burger and fries for lunch and you're sitting there feeling a little bloated looking over that optimistic list of your good intentions.  What happened?  Is early onset senility to blame? Are you just weak? Or, could this behavior be labeled a bad habit?  The truth is that you aren't senile and you aren't weak; you are merely hounded by habitual thought patterns. So, how does one go about breaking these habits of the mind? How does on go about setting good intentions and living by them? We throw words about all the time, but that's the extent of what many of us do  with words: we just throw them around. How about trying to put them to work today?
 
To a certain degree, we all know how to begin.  Let's say, for instance, that you decide right now, this very moment, to start eating cleaner. By that I mean one day of consuming low fat, high fiber foods, with plenty of water and no excuses!!  When you do this, you will end the day feeling good about yourself and what you have eaten. You will also feel a little bit hungry just before you fall asleep, and, in essence, you will have had a perfect day. Doesn't really sound so hard, does it?  It's not, but when is the last time you had a solid day?  Just one?  Therefore, we are going to say that today is the day. If you are reading this later in the evening, then the first thing in the morning will be your turning point.  So, the night before, or at this very moment , I want you to notice how you feel.  Do you feel tired, depressed, bloated, uncomfortable, angry? Well, let's change all of that.  We just said that right this very moment you would take the first step toward having a good day, just one good day.  Right this moment, I want you to make a commitment to yourself.

I want you to do the following to set your good intentions for the rest of the day or for tomorrow morning. First off, please don't just read this and imagine that it would be a good thing to do! Please, let's stop for a minute, and let's finally identify, and then break, this habit!  I want you to close your eyes-okay, read the next part first, and then close your eyes and do it.  So then, with your eyes closed, set the intention that for the next 24 hours you will not allow any excuse to make you compromise a single meal or keep you from going to sleep a little bit hungry.  How does saying that to yourself make you feel? 
 
Listen to your breath, to your mind, to your energy.  Do you feel anxious? Are a few excuses popping into your head already?  Maybe something like, "Well, okay, I can try this, but today is already not perfect, so I will finish out the rest of the day and then do this in the morning." Or perhaps you are thinking, "Okay, this sounds good, but I have that get-together tonight at that really great Mexican restaurant, so I will set my intention to have 24 perfect hours after dinner.  If you had thoughts like these, I can tell you that you will not have a clean day today, and you will probably not have one tomorrow, either.  You see, this is the habitual mind chatter that you allow to stop you every step of the way.  So, let's try again. With your eyes closed, tell yourself that today, right now, you will begin to have a perfect excuse-free day.
 
Think through all the obstacles you will face. Obstacles are real, and you think obstacles have continually stopped you from getting to your goal weight; however, it's not the obstacles that have stopped you. You have stopped yourself.  There are no excuses that justify eating poorly right now, and if you truly want to lose weight, then why don't you?  Why do you fight yourself day after day?  I can tell you this: if now is not the time to start losing it, then it never will be time.  So, when the excuses start to pop up, put them aside and tell your mind to stop sabotaging you. We are only looking for one clean day!  No matter what you had planned for this day or this evening, put it aside, and allow your breath to begin to relax. Allow your mind to release itself of all the chatter and excuses as to why you can't do this now.  Don't just read these words; act on them!  Feel your body begin to relax to the realization that all that has stopped you from reaching your goal is yourself, not your hectic life or your job or your kids or your husband or your new girlfriend.  Only you have stopped yourself from losing that weight.  Keep listening to your mind and body and allow this truth to permeate your essence. Feel your truth growing stronger every time you push aside an excuse and become more of who you are. Good for you!
 
Next, I want you to visualize all of the interactions you will have with food for the next 24 hours. Think about when and what you will eat.  Think about the meals you will prepare. Where are you going to get the food? Do you have it in the house, or do you need to run to the store?  Think through every bit of your day. What if your mind says, "I just don't have anything in the house to eat, and I'm not going grocery shopping this late at night!" Well, that is your mind again reaching for a negative. If you go with it and agree with its restrictive message, then you-not the hour of the night or the lack of food-only you, are stopping yourself from reaching your goal.  Sure, it's going to be inconvenient at times, but so what? That's the way it is.  So, think about where you will have your next meal, what you will eat and how perfect it will be.  Let your breath relax and feel yourself fill with calming and self-assurance.  If the next stop is the grocery store, then go there with the intent of honoring your needs. 
 
While you're visualizing, think about the water you will drink in the next 24 hours. Where are you going to drink it, and how will you make sure that it is available?  Sound silly?  Well, it might sound silly, but it isn't at all!  It is necessary to set your intention while your body and mind are at peace and feeling relaxed, so that the importance of the intention can penetrate your mind and soul.  When you open your eyes, you will feel stronger, more prepared to continue with your day, and you will have taken the first solid step toward reaching your goal.
 
You might have to do this between every meal, but it only takes a moment, and we all have a moment. Now, if your mind just said that you don't have even a moment, and that Berta can't possibly understand how much you have on your plate, know that I don't care about your plate! I care about you and your weight and your health.  Those thoughts are habitual excuses that need to be  put to rest, firmly and finally.
 
Lastly, before you drift off to sleep, offer thanks and gratitude for having the strength and clarity of mind to have had a good day. Know in your mind and heart that tomorrow will also be a good day. Be thankful for your 24 hours of  fortitude and the peace of mind you are experiencing at this moment.  This will prepare you for the most important next moment, the one when your alarm chimes in the morning. Don't hop right out of bed! Instead, close your eyes, take that deep breath and visualize your day. Allow the excuses to surface and dissipate. Then see your breakfast, and envision everything you will eat and drink. Next, slowly move to lunch, then to dinner and keep going until you have seen your entire perfect day.  Stay where you are until your breath and mind are calm and at peace.  Continue this practice between meals just to make sure your mind is relaxed, and you will see how quickly your day passes without incident.  And on this night, once again thank yourself for another perfect day!

Cholesterol

 

what I believe to be the single most important thing you can do to lower your cholesterol?  I bet you don't, since it was a big surprise for me when I made the connection! There are many reasons why the body creates cholesterol and the pharmacutical companies have provided us with many medications to bring it down, there is one thing nobody is telling you, and that thing is probably more effective than all of their drugs. Curious?  Good, because I am about to tell you what my research has shown!

 

The much-touted reason for elevated cholesterol levels in the bloodstream is the Western love affair with animal proteins, right?  Eat a lot of meat and you will have higher cholesterol level. Reduce your intake of animal proteins, including dairy, and your cholesterol goes down, simple.  But it really isn't quite so simple. While it is true, for the most part, that consuming animal proteins elevates cholesterol, high cholesterol can be linked to other factors.  For starters, can "they" explain why people who consume the same diet have different cholesterol levels? These differences are often attribute it to genetics, but I don't buy that. Learned genetic behavior I do buy into, and I think that has a lot to do with the amount of cholesterol our bodies produce, regardless of what we eat. 

 

 

Let me share an example from my own life. I am from Spain, and generally speaking, the Spanish are genetically predisposed toward lower cholesterol levels.  While it is true that the Mediterranean diet is very healthy-lots of fish, fresh vegetables, grains and olive oil-they do drink a lot of wine. Now, does wine lower cholesterol? Am I suggesting that we should be drinking more wine? Well, no. However, I make the point for a reason, and I will get to that later.

 

Back to my story...

 

My cholesterol has always been pretty low: around 170. For those of you who are not familiar with the numbers, 200 is considered high, and over 250 is very high. Granted, I have never been a big meat eater, and I am Spanish, so I assumed that "we" just don't have cholesterol issues. While there are other factors to take into consideration-such as the ratio of HDL (good) to LDL (bad) cholesterol-that is not what I am talking about today. As I became more conscious of how I ate, I really began to pay attention to all of my blood work. I was able to get my cholesterol down into the low 160s. At this time, I had eliminated almost all dairy and animal proteins and was exercising  regularly and feeling that I was in a pretty good place. 

 

Then, about 4 years ago, my older brother passed away, quite tragically.  We were all devastated and deeply saddened.  My sadness seemed to penetrate every part of my being. I was sad about his death, but I was also sad for the hardships he endured in life because of the choices he made.  During this period of mourning, I stopped eating entirely, but when I came back to food, I went back to eating a very low animal protein and dairy diet.  About six months after his death, I went for blood work figuring that my cholesterol would continue to be very low, and was stunned to learn that it was up to 178! 18 points? My cholesterol levels had not been that high in ages!  I asked the doctor to explain the spike, considering that my diet had been nearly perfect. He looked at me like I had two heads and said, "Are you kidding? Most people would die for cholesterol numbers like yours!" 

 

"Yes, as lovely as that is," I replied, "I am still questioning it because it doesn't make sense to me. How could my cholesterol levels go up when I am not consuming cholesterol?"  Basically, he just shrugged his shoulders and told me to have a nice day.  Puzzled, I left the office, but I continued to ponder this new development. 

 

We all know that after someone passes away those left behind go through various stages of mourning.  Well, after a few months, I realized that I had stopped feeling anything: sadness, anger, depression, nothing. It was a weird sensation, but that was how I felt, and it prompted me to look at my own life. I thought, "This is not okay.  Where have I been?" Granted mourning and working and living had kept me busy, but I seemed to have removed myself from my own life.

 

I thought about my brother not living up to his fullest potential, and leaving the rest of us with sad and negative feelings, and then I looked at my past year. I thought of all the tears, and I thought of my life before his death.  Had I been happy?  Truly happy?  Did I have the connection with my kids that I wanted to have. Did I have the quality of life that I dreamed of having? The answer was no; I did not, and I decided at that moment that I had to be done with the tears, done with the sadness, done with the excuses as to why I was not happy and grateful for my entire life. I know my brother would have wanted me to be happy, so for him, and myself, and my three boys, I chose happiness.

 

From that point forward, I worked to become more aware and connected to the people in my life. I played with my children more, talked to them more, and just hung out with them more.  They were and are the joys of my life.  I also left a relationship that was not working for either of us. Today, I have to say that the last few years have been the best of my life because I made the simple decision to choose happiness.  The point of this story is as follows: at the time of my decision to choose happiness, I also chose ice cream, and many other foods that were not so great for my cholesterol.  I became lax because I was having fun going out more with my kids and eating more casually and not caring as much about what I was putting in mymouth.  I had a lot of laughing to catch up on, so that's what I did, and it was a good year. 

 

I knew when it was time for blood work that it was not going to be good. I mean, for no reason at all, my cholesterol had gone up 18 points the year before, when I was so sad and depressed about my brother and eating perfectly. So, this year, what with the way I was eating, I expected to see a number I had never encountered before. Well, I wasn't wrong; it was a number I had never seen before! And I was totally shocked. Would you believe it was 132! My cholesterol levels had dropped 46 points! What was going on? My doctor only shrugged his shoulders and said, "Go figure." So I did.  I figured that it was crystal clear what had happened!  I was happy. Not everything was perfect, but I was choosing happiness.  While my food was fine, it was far from perfect, and my number had never been so low.  So, I guess there is a connection between good and bad numbers that has nothing to do with food!

 

Happiness. Such a simple way to lower cholesterol. It's not genetics, but it might be the wine-I said I would get back to the wine and Spaniards! Perhaps their cholesterol levels are lower because of their food choices, their lifestyle. Perhaps that wine makes them more relaxed and possibly happier?  These are only my observations, but I think they bear consideration.

My favorite things to eat!
Vegetarian Chili
                                                                      serves 4 to 6

This is such an easy and tasty meal that you can  cook up a vat and make it one of your staple, go-to foods.  That's what I like to do! Usually on Sunday I make a big batch, divide it up into some small containers and freeze them for an easy meal whenever I need it.  It's also a perfect dish to bring to a cookout, but I warn you, bring plenty because this dish is a big hit with every crowd!

 

What you need:

Berta by mantle 

2 cups chopped onions

2 garlic cloves, minced or pressed

½ cup water

1 tbsp. ground cumin

1 tbsp. ground coriander

1 cup red salsa

2 bell peppers, any color, chopped

3 cups cooked black beans (you can also use canned beans, drained and rinsed)

3 cups blanched, peeled tomatoes

2 cups corn kernels

Sea salt to taste

Hot pepper sauce to taste

¼ cup chopped fresh cilantro, or to taste

 

What to do:

 

1.       In a soup pot, cook the onions and garlic in the water over a high heat, stirring frequently, for about 5 minutes.  Add the cumin and coriander and stir over a high heat for a minute.  Stir in the salsa and bell peppers, lower the heat, cover, and simmer for about 5 minutes, stirring occasionally.

2.       Add the black beans and tomatoes, summer for 10 minutes.  Use a wooden spoon to break up the tomatoes. Add the corn and continue to cook for 10 more minutes.  Add salt and hot sauce to taste.  Stir in the cilantro, if desired.
