The month of October brought more great events to showcase our organically grown extra virgin olive oil and delicious balsamic vinegars. Last weekend we attended the Fredericksburg Food & Wine Fest. It was a beautiful day with lots of wonderful wine and food. Several of our family members were in attendance along with the newest additions to our team, Ben and Martha Hightower. ou can look for them next Saturday at Cedar Park Farms to Market in North Austin.
In addition to all the public events we attend, we are often asked to provide private group tastings. One such recent event was hosted by Elsa Gramola, the amazing woman who organizes and produces the Taste of Italy at Laguna Gloria every year in Austin. Elsa is also known for her cooking and Italian language classes taught at private events all over the Austin area. We'd like to thank Elsa for allowing us to be a part of many of her events. If you have a group of 20 or more and would be interested in a private tasting, please do not hesitate to give us a call. We will be glad to come out to you for a tasting and to allow your guests to purchase our products.

Exciting Month By Rick Mensik (Founder/Co-Owner)
October has been the most exciting month for Texas Hill Country Olive Co yet! Last year we had a small harvest and used a neighbor's mill to process the olives. This year, we will be able to mill our own olives! Our olive press has been delivered and installed. We had lots of help from Gianni Stefanini of Apollo Olive Co. in California as well as two technicians who traveled here from Italy to train us to operate the press. This press is known for creating the highest quality extra virgin olive oil. This machine is incredible and we will be milling delicious oil right here in the Hill Country very soon.
The home of our olive press, The Texas Olive Store, is very near to completion. It has been painted and trimmed and the exterior stone has been set. All the remaining parts of the Texas Olive Store will be completed soon. The actual opening date will be provided in our November newsletter. We are working very hard to make our store the premier olive experience in Texas and we can't wait for you to visit us once the store opens. |

 Micki's Simple Brownies
Ingredients: 4 ounces unsweetened chocolate baking squares 1/3 cup pure Texas olive oil 3 large eggs 1 1/2 cups granulated sugar 2 tsp. pure vanilla extract 3/4 cup flour 1/2 tsp. salt 1/2 cup semi-sweet chocolate chips for added decadence
To prepare: Preheat oven to 375°F. Coat eight-by-eight-inch pan with olive oil cooking spray. Place chocolate and olive oil in a small glass mixing bowl. Heat in microwave for 1 minute. Stir until melted and smooth. Set aside. In mixer bowl add eggs, sugar and vanilla, and mix on medium/high speed for 5 minutes. Add in chocolate mixture and blend until smooth and creamy. Fold in flour and salt.
Mix until just moistened. Do not over-mix. If adding chocolate chips, gently blend in. Bake 20 to 25 minutes or until a knife inserted into the center comes out clean. Remove and cool slightly. Makes 9-12 squares.
