Orchard and Mill House Update By Rick Mensik (Founder/Co-Owner)
The temperatures at the orchard last month were scorching, but we got lots of sunshine which is good news for our olive trees. We have a great irrigation system in place, so we are able to keep our trees from too much stress due to the extreme temperatures. The leaves are shimmering with the wind and the orchard is a beautiful sight.
Now to the mill house and the Texas Olive Store... Construction is nearly finished and this building is simply amazing! The stone work will take your breath away. We are excited to be so close to being able to open for business. The gift shop is spacious with lots of windows, 10 ft ceilings, and beautiful handcrafted cabinet work. The Cafe is perfect and the outdoor kitchen and seating area is just fantastic with large pillars wrapped with natural stone and a massive cedar canopy.
Thanks again to everyone who has adopted a tree or purchased our products at the farmers markets. Hope to see you soon in Dripping Springs at the Texas Olive Store.

Triple Berry Crisp
Serves 8-10 1 cup fresh or frozen blackberries 1 cup fresh or frozen raspberries 1 cup fresh or frozen blueberries 1 cup brown sugar, divided 1 cup flour 1/2 tsp. salt 1/2 cup quick oats 1/2 cup buttermilk 2 tsp. pure vanilla extract 2/3 cup pure Texas olive oil 1/4 cup granulated sugar
To prepare: Preheat oven to 375°F. Coat an eight-by-eight-inch pan with olive oil cooking spray. In mixing bowl, combine all cups of three berries and 1/2 cup of the brown sugar. Let stand for 10 minutes. In a separate mixing bowl add flour, salt, oats, the remaining brown sugar, buttermilk, vanilla and olive oil. Mix well by hand to make a thick batter. Pour batter into prepared pan and spread out.
Spoon fruit mixture over batter and sprinkle ¼ cup sugar on top. Bake 45 to 50 minutes or until crust is light brown and puffy.
To serve: Serve with frozen yogurt or vanilla ice cream.
