Healthy Components of Olive Oil
By John Gambini (Founder/Co-Owner)

When I decided to get involved in the olive oil business, I had two specific goals in mind.  The first goal was to create a family owned and operated business with my children and extended family, the Mensiks.  The second goal was to do as much as I could to maintain good health as I get older.  Due to the fact that I lost my father in a car accident when I was very young, I don't know what health conditions my father may have passed on to me.  Without knowledge of my father's health as he grew older, I chose to learn as much as I can about how to stay as healthy as possible.

I've done extensive reading on the health benefits of extra virgin olive oil and have concluded that a diet that includes extra virgin olive oil, when combined with regular exercise, is conducive to overall good health.  The following components found in extra virgin olive oil have been shown to promote good health:

Essential Fatty Acids: Extra virgin olive oil contains Oleic acid, Linoleic acid, and Linolenic acid as well as both Omega 3 and Omega 6 fatty acids.  These types of fatty acids are known to be good for the heart.

Antioxidants: The polyphenols and Vitamin E found in olive oil provide natural antioxidants which have been scientifically proven to provide many healthy benefits such as healing sunburns, lowering cholesterol, blood pressure, and heart disease.

Calcium, Iron, & Potassium: Olive oil contains only trace amounts of calcium, iron, and potassium, but when combined with other calcium-rich foods such as green leafy vegetables, iron-rich foods like spinach, and potassium-rich foods like tomatoes, it becomes a powerful, and tasty, way to get the nutrients that are necessary for good health.

Vitamin K: Extra virgin olive oil contains Vitamin K, which is necessary for good health because it aids in binding calcium to bones, thereby aiding in promoting good bone health.

There are many books about olive oil, but I want to specifically recommend The Healing Powers of Olive Oil by Cal Orey. This book provided the information I've given here.  I heartily recommend reading this book in order to gain even more powerful knowledge of why Texas Hill Country Olive Co olive oil is good for you and important to your daily diet.

Event Round-Up
By Rick Mensik (Founder/Co-Owner)

Last month we attended the Blanco Lavender Festival in Blanco, TX.  Our booth couldn't have been in a better spot.  They had us between the stage and the beer tent, perfect placement for enjoying live music all day and a cold beer to celebrate the end of the festival.  The festival takes place all around a town square filled with rustic buildings and antique shops and the entire town seems to join in, making it a lot of fun.  If you have an opportunity to make it out to this festival next year, I guarantee you'll have a great time.

Awards

Two of our extra virgin olive oils won awards at the 2010 Los Angeles International Olive Oil Competition which featured almost 500 entries from all over the world.  Our Texas Blend won a Silver medal in the robust category and our Terra Verde won a Bronze medal in the medium category.

Farmer's Markets in the Austin Area
By Nicole Swanson (Co-Owner)

We have good news for our local customers: Our products are now being offered at Farmer's Markets in Dripping Springs  and Cedar Park on Saturdays. Soon we'll also be at the new Lakeway Farmer's Market at Oak Meadow Plaza Shopping Center on R.R. 620.

You can purchase all our products on the website, but there's
something new at our farmer's markets. We're selling a customizable gift set. The set is made up of a three spot wooden box, in which you can mix and match any three of our products. For example, a large bottle of our delicious Terra Verde extra virgin olive oil can be paired with a bottle of fig balsamic vinegar and a bottle of traditional balsamic vinegar. This box makes a great gift, even for folks who have already adopted a tree with us. The gift box really makes a great dinner party gift.  It's just as useful but far more creative and special than an expensive bottle of wine.

It seems like every month we're adding somethin
g new to our products, so keep an eye on our website to see what's coming next!

Mediterranean Rice Salad (Serves 8)

Salad:
1/2 cup pine nutsColumn
3 cups cooked long grain rice
1 cup crumbled feta cheese
1 cup English cucumber, peel left on, sliced
1/2 cup red bell pepper, diced
1 Texas zucchini squash, grilled tender-crisp and cut into chunks
1 Texas yellow squash, grilled tender-crisp and cut into chunks
3 Texas green onions, sliced thin, including tops
1 cup kalamata olives, pitted
1 cup grape tomatoes, halved

Dressing:

1 or 2 cloves garlic, minced
2 T. fresh rosemary, finely minced
1 T. fresh mint, finely minced
6 T. Texas extra-virgin olive oil

Zest of 1 large lemon
3-4 T. lemon juice
Salt and pepper to taste

To prepare: Toast the pine nuts in a dry, nonstick skillet over medium heat. Stir often.  Watch carefully - they burn easily! When lightly browned, transfer the nuts into a small bowl and set aside to cool. In a large bowl combine the cooked rice and feta. Add cucumber,
bell pepper, grilled squash, onions, olives and tomatoes.  Stir gently to mix all the ingredients.

To prepare the dressing: In a small bowl combine garlic, rosemary, mint, lemon zest and lemon juice. Very slowly drizzle in the Texas olive oil while whisking continuously until the mixture is emulsified. Adjust seasonings. Pour over rice mixture and lightly toss all ingredients together. Refrigerate until ready to serve.

Make-ahead tip: This salad is delicious made a day in advance to allow flavors to blend.

Chef's variation: Add cooked, diced chicken or cooked shrimp for a heartier salad.
