Greetings!

 

Wow! We are knee deep in the holiday season aren't we?

 

As a holiday gift (and a thank you for your company, comments and camaraderie here in my newsletter) - I contemplated giving you a recipe for a sweet dessert, a sweet interior design, or a wish for a sweetly designed Life. I opted for doors #1 and #3.

 

And so -in light of the crowds, to-do lists and overwhelm that can over take us during this season, enjoy this sweet, easy dessert - and also this poem on the ABC's of Life. Wishing you a Merry Christmas, a Happy Hanukkah and a Bright and Blessed New Year!

Easy Holiday Peppermint Candy Cookies

Ingredients
  • 2 packages Famous chocolate wafer cookies
  • 2 16 oz. cans vanilla frosting
  • 1 1/2 packages Starlight peppermint candies 
 Directions

Remove wrappers from the candies and place in a resealable plastic bag (be sure to remove as much air as possible from the bag). Use a mallet to crush the candies into a powder (it's OK to leave some of the candy in small chunks).

Spoon the contents of both cans of the vanilla frosting into a mixing bowl.  Pour the candy over the frosting and mix thoroughly.

Spread about one tablespoon of the candy mixture onto one chocolate wafer cookies. Cover that with another cookie to form a sandwich.

Place cookies into a plastic container and refrigerate overnight.

 

Makes about 24 cookies.
