Vegan Enchilada Casserole


Serves: One (2-quart) casserole

Ingredients:
*all organic if possible  

1½ cups brown basmati rice, soaked for 12-15 hours
1 tbsp.
Premier Olive Oil
1 red onion, chopped
3 bell peppers (try multi-colors like 1 green, 1 orange, and 1 yellow), chopped
1 medium jalapeno pepper, seeded and chopped (leave out if you want less heat)
1 package organic taco seasoning mix
2 cans Eden Organic Black Beans (pre-soaked and BPA-free), drained and rinsed
homemade enchilada sauce, about 2½ - 3 cups (you can use all of it if you like)
1 package Daiya Pepper Jack Cheese (or Cheddar for less heat)
1 cup chopped green onions
Pink Salt & pepper to taste
handful or two of tortilla chips, crushed (this recipe used sprouted flax, quinoa, sunflower, and sesame seed chips)
2-3 ripe avocados, sliced
1 jar of salsa
