La Vecchia Dispensa
This La Vecchia Dispensa balsamic is a genuine, barrel-aged, ten year old vinegar produced in small batches in Castelvetra, Modena. This vinegar's flavor and balance are the dominant characteristics; it is not simply sweet but full and richly complex with a rounding, tannic quality:

Mountina
Third generation cheese makers, brothers Darryl and Dwayne Heap of Montana's Vintage Cheese Company, have a winner on their hands. Mountina is a Swiss Alpine-style cheese which is fruity with a bit of nuttiness, and is reminiscent of an Appenzeller or a mild Emmental. Made from raw cow milk with a lightly washed rind, Mountina is a fine sandwich cheese or delightfully served as Raclette with crisp apples and a dark winter beer.
Mocha Mountina is washed as it matures, not with brine, but with coffee and unsweetened cocoa. The coffee and cocoa do not dominate the cheese, but rather complement its mellow flavor and encourage a somewhat more aromatic rind.

Scharfe Maxx
Scharfe Maxx is a raw milk cheese from the mountains of Switzerland. Alpine cheeses are characteristically pungent and full of flavor, and Scharfe Maxx does not disappoint. A buttery interior, partnered with a slightly moist washed-rind, make this a fantastic, funky and hugely flavorful cheese.
