with Jacob Holman
Jacob Holman is a winemaker at Les Bourgeois Vineyards. He is also a board member for the Missouri Wine Technical Group.
How long have you been making wine?
"Twelve years."
Where and how did you learn to make wine?
"I learned on the job starting as a part-time summer help working in the retail side of the business. That winter I was asked if I wanted hours in production. I instantly enjoyed the work. From there I submerged myself in winemaking. I learned most of the principles and practices at Les Bourgeois and spent time traveling to other regions to work with other winemakers."
What did you do before becoming a winemaker?
"I was a student majoring in Biology, which was handy because I knew my way around the lab already."
How would you describe yourself in three words?
"Whimsical, thoughtful, patient."
What is your favorite wine to make?
"I like making Solay that is Les Bourgeois' blended dry white I like the white varieties we grow here in Missouri. I think this wine really showcases what they can do."
What is the toughest challenge about winemaking in Missouri?
"Our climate and all that comes with it."
Is winemaking an art or a science? Or both?
"Winemaking is both. It is also like running a never ending marathon. These elements keep it interesting. It is a challenge from year to year and you are never finished."
What is your favorite food and wine pairing?
"I can't really answer that question honestly. One of my favorite things about wine is that there are so many different types and styles. Within that there are endless pairings so to try and pick a favorite for me is impossible."
If you didn't make wine, what would you do?
"I would count waterfowl in the great north woods."
