Whether it's driving to soccer practice, a small kiss on a scratched knee, practical advice or a kind word when you need it most, life is much better when mom is around. This month, we honor mothers and all that they do. And this weekend if you are lucky enough to spend time with your mom, give her a big hug and a kiss, and tell her that you love her. That's worth more than all the flowers in the world!

Our commitment  to donating $500 per month to a  local charitable organization has just become a reality. The first non-profit to receive the funds from our ABC Giveaway is HopeWorks.  The organization seeks to serve the poor through outreach programs that develop individual worth, encourage personal responsibility and promote the honor and value of work.

The
ABC Giveaway is Above and Beyond's way of trying to make a difference where it counts most, close to home.We accept nominations through the mail or you can submit a charity of your choice online. A non-profit is selected each month via a random drawing of all the nominations.

Don't forget to tell your friends and family to enter, as well! The last donation for the year will be awarded to the charity with the HIGHEST accumulated votes.

Happy Mother's Day

jandnAt last, the beautiful month of May is here. It's my favorite time of year. Everything is green, the weather feels great and business is booming. But most importantly, it's the time to tell my wife how much she means to me. On the 20th of this month, we will be celebrating our 10-year wedding anniversary. Even though it hasn't always been easy, the last 10 years have been the best of my life.  So for the many joys and many more years of happiness together, I thank you, Jenny.

Besides my wife, I also want to thank all mothers for what ya'll put up with. I truly believe that women are amazing. From the many tasks you seemingly manage all at once to the patience of dealing with kids to all of that unconditional love, you are remarkable.  I am so grateful for my mom, my wife and all other mothers out there. On this Mother's Day, I hope every mom not only gets a nice break but also gets to hear those magical words that seem to always keep her going, "I love you, mom."

Tell mom to step away from the stove. Nothing says, "I love you," more than a meal prepared by you and it doesn't have to be hard or fancy! This easy brunch recipe will get you started.

Oven-Baked Fried Chicken

6 boneless, skinless chicken breasts
2 cups buttermilk
3/4 cup flour
2 tablespoons nonfat dry milk
1 teaspoon salt
1/4 teaspoon pepper
10 tablespoons butter, divided

Place chicken breasts in large baking dish and pour buttermilk over. Cover and refrigerate for at least 8 hours. In medium bowl, combine flour, dry milk powder, salt, and pepper and mix well. Cut in 4 tablespoons butter until particles are fine. Cover and refrigerate.

When ready to cook, preheat oven to 425 degrees F. Spray a heavy duty 15" x 10" jelly roll pan with nonstick cooking spray and set aside. Remove chicken from buttermilk and discard buttermilk. Drain chicken, then drop into flour mixture, pressing to coat. Let chicken dry on wire rack for 30 minutes.

Cut 6 tablespoons butter into pieces and place in prepared pan. Place in oven for 4 to 5 minutes or until butter melts. Remove from oven and carefully place chicken in hot butter. Bake for 10 minutes, then turn Baked Fried Chicken and bake for 10 to 14 minutes longer or until juices run clear and internal temperature reaches 165 degrees F.

She knows all the secrets but she won't tell. In this special Mother's Day issue, we would like to honor Nathan's mom, Laura Harmeier.
 
My Fondest Memory:  Nathan always wanted to mop the kitchen floor with tons of water. He would splash it all around and make a complete mess. Luckily, he always cleaned it up. 

Favorite Quote: Do unto others as you would have them do unto you.

Best Lesson: My dad told me this on my very first date, "Baby, just remember, you don't owe him anything. You did him a favor just by going out with him."
