Imagine the scents of Sage, Cinnamon, Nutmeg and Cloves floating through your kitchen this holiday season. Whoops -- unless the spices are too old and flat. Now I have Watkins Organic Curry, and its scent is luscious. Plus it tastes great in the Scallop Stew recipe I invented this week. Check the recipe out in this edition of Watkins Gourmet News. The best way to check your spices is by look, smell and taste. Toss spices with faded color, diminished scent and flavor. From Thanksgiving through New Year's Day, here are the spices most often needed for holiday meals: Watkins Organic Cloves The dried, unopened buds of the myrtle flower have a strong, sweet penetrating flavor. Our ground cloves from Indonesia are one of the world's most aromatic and important spices. The name for this spice comes from the Latin clavus, meaning "nail," which is what the whole spice resembles. One of the most aromatic and important spices, cloves originated in the Moluccas, or Spice Islands.
Use in baked goods, confections, liqueurs, pickles, chili sauce, catsup, meats, vegetables, mincemeat, beverages, sauces, marinades, marmalades and puddings. Watkins Organic Nutmeg The hard kernel of the peach-like fruit imparts a
rich nut-like flavor. Watkins selects only the finest seed from Indonesia. Use in baked goods, eggnogs, custards, cheese, eggs, fish and poultry dishes, whipped cream toppings, fruits, ice cream, coffee cakes and applesauce. It's a long-used holiday spice with centuries of tradition. Watkins Organic Sage No bird is ready for the oven unless its stuffed with this flavorful sage from Croatia. This Mediterranean herb got its name because of the ancient belief that it strengthened the memory and imparted wisdom. Watkins Allspice From the dried berries of an evergreen tree growing in Jamaica, Mexico, Guatemala and Honduras, it takes its name from its flavor, which is said to be a combination of cloves, nutmeg, cinnamon and pepper. Excellent in baking or in Caribbean or Middle Eastern meat dishes; also great in puddings, baked fruits, cakes, cranberries, barbecue and brown sauces, cooked vegetables, cookies, pickles and relishes.
Watkins Organic Ginger We have found the very finest ginger roots in Indonesia. They have been carefully dried to preserve their warm, spicy flavor. Ginger is used primarily for baking in the West and for savory dishes in the East. Gingerbread, cookies, cakes, pumpkin pie, orange/yellow vegetables, pickles and conserves, baked beans, and Asian stir-fries. Many people put powdered ginger in capsules as a natural remedy for motion sickness. Watkins Organic Cinnamon Our flavorful cinnamon from Indonesia is the best quality available anywhere. The best cassia available today is from the Indonesian island of Sumatra.Use in all types of baked goods, such as pies, cakes, rolls and cookies. Susan's Organic Curry Scallop Stew Sweet and Delicious
Hey, I had only six scallops for dinner. They were very fresh, but I
couldn't serve that as a stand alone. So I threw the scallops into a
frying pan with a generous dose of white cooking wine and virgin olive
oil. I cooked them on medium heat until they were almost done, adding a
shake of Watkins 100% Organic Dill, Watkins 100% Organic Cumin, Watkins 100% Organic Garlic Powder and Watkins 100% Organic Curry Powder. Wow that curry powder is good. I didn't have to go digging in my cupboard for my spices as I have a Watkins Spice Rack sitting on my counter top and all I have to do is whirl it around and 16 different organic spices are immediately at my fingertips.
After the scallops were almost cooked I used a slotted spoon to put
them in a bowl and set them aside. In my fabulous fishy curry juice in
the pan, I added chunks of fresh garlic, chunks of half a red onion,
small chunks of one fresh zucchini
from the garden and small chunks of one small fresh eggplant. If I'd
had mushrooms, then mushroom chunks would have been very good in this.
So I sauteed the vegetables until they were soft but still crunchy, adding olive oil as
needed so my curry juice wouldn't disappear. Then I put in half a stick
of butter and a tablespoon of flour. And I added milk, making a lovely
white vegetable sauce to accompany my scallops. Now I added my Watkins Sea Salt, and a lot more Watkins curry to taste. Wow, this was tasting
good! I put the scallops back in and I had a sweet Scallop Curry Stew
in less than 40 minutes. My husband was very happy. And he got lots to
