Pumpkin Butter Cupcakes

Cupcake Ingredients
2 1/4 cup all-purpose flour 1 tbsp Watkins Baking Powder1/2 tsp baking soda 1/2 tsp salt 1/2 tsp Watkins Organic Cinnamon1/2 tsp Watkins Organic Ginger1/2 tsp Watkins Organic Nutmeg1/2 cup butter, softened 1 1/3 cups sugar 2 eggs 1 cup Pumpkin Butter3/4 cup milk 3/4 cup chopped walnuts Brown Sugar Frosting1/4 cup butter 6 tbsp brown sugar 6 tbsp half-and-half 2 cups powdered sugar 1 tsp Watkins Original Double-Strength Vanilla
Cooking Directions
In
medium bowl stir together flour, baking powder, baking soda, salt,
cinnamon, ginger and nutmeg. In large bowl cream together bu  tter and
sugar until light and fluffy; beat in eggs. Blend in pumpkin butter.
Stir in dry ingredients and milk, blending until batter is smooth. Stir
in chopped walnuts. Spoon batter into paper lined muffin tins. Fill
about 2/3 full. Bake at 375°F/190C for 18 to 22 minutes. Makes 16
cupcakes. Brown Sugar FrostingIn 2
quart/2 liter saucepan melt butter over medium heat. Add brown sugar
and half-and-half. Continue cooking, stirring occasionally, until
mixture comes to a boil (2 to 3 minutes). Remove from heat and add
powdered sugar and vanilla; beat until well mixed (1 to 2 minutes). Let
cool to spreading consistency (5 to 10 minutes). Frost cupcakes. |
Sugar Cookies with Hazelnut Frosting
Add Watkins food colors to the frosting and delight your children with color creations for any season or party theme
Ingredients
1 cup butter softened
1 cup sugar
1 egg, beaten
1 tsp Watkins Original Double-Strength Vanilla
1/2 tsp Watkins All-Natural Pure Almond Extract
2 tbsp milk
2-1/2 cups all-purpose flour
1 tsp Watkins Aluminum-Free Baking Powder
Hazelnut Frosting Ingredients
4 cups powdered sugar
1/2 cup butter, softened
3 to 4 tbsp milk
1 to 2 tsp Watkins Hazelnut Extract to taste. Food coloring, if
desired
Or for a new twist, try Watkins All-Natural Pure Lemon Extract or Watkins All-Natural Pure Orange Extract
Cooking Directions
Combine butter, sugar, egg, extracts, and milk in large bowl. Stir in flour and baking powder; mix well. Cover with plastic wrap and
refrigerate until firm (about 2 hours). Heat oven to 400ºF. On
lightly floured surface, roll dough one third at a time to 1/4-inch
thickness. Cut with floured cookie cutter. Place 1 inch apart on
ungreased cookie sheets. Bake for 6 to 9 minutes or until edges are
light brown. Immediately remove to wire rack to cool.
Hazelnut Frosting
Combine all ingredients; beat until smooth. Frost cookies.
Makes 5 to 6 dozen
Tips: Add Watkins
Hazelnut Extract to maple or pancake syrup, chocolate syrup, coffee
or coffee creamer, whipped topping, milk shakes, ice cream, frosting, coffee
cake, fudge, cookies, scones, biscotti and anything else for a rich Hazelnut
Flavor.

Irish Cream Caramels
Give the Caramels for Christmas, or give the ingredients:

2 cups whipping cream 1 cup granulated sugar 1/2 cup light corn syrup 2 tsp butter 1 tsp Watkins Irish Cream Extract1 tsp Watkins Original Double Strength Vanilla1/3 cup chopped walnuts
Combine
cream, sugar, syrup and butter in large heavy saucepan. Using a candy
thermometer, heat to 245°F, stirring constantly. Remove from heat
at once. Stir in extracts; pour into buttered 8 x 8 x 2-inch pan. Cool just until firm. Loosen candy around edges with a knife;
invert on cutting surface. Cut into 1-inch squares with a sharp
knife. Cool completely and wrap each in waxed paper. Store in a cool
place. Note: These caramels keep well, and may be made several weeks in advance. |
