Irish Soda Bread

3-1/2 c. flour
1/2 c. sugar
1/2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 pint sour cream
2 eggs
2 T. caraway seed (optional)
3/4 c. raisins
Directions:
Combine dry ingredients in large bowl. Beat eggs and stir in sour cream in small bowl. Add egg and sour cream mixture to dry ingredients and stir with a wooden spoon (batter will be very thick), Add raisins and caraway seeds and stir well with wooden spoon or knead in with your hands. Place batter in a greased 9" springform pan. Dust the top with enough flour so that you can pat the batter with your hands. With a knife make a shallow crisscross on the top. Bake for 50 min. at 350.

Legend says that each leaf of the clover means something: the first is for hope, the second for faith, the third for love, and the fourth for luck.
