JUNE IS FRUIT AND VEGETABLE MONTH

Your mother probably told you to eat your fruits and veggies and now we are, too!  Besides, June is fruit and vegetable month.  It's a great time of year to eat fresh produce.

Fruits and vegetables are critical to promoting good health. Most people should double the amount they eat every day

since they are packed with vitamins, minerals, fiber and disease-fighting phytochemicals.  Eat plenty to reduce your chances of heart disease, high blood pressure, Type II diabetes, and certain cancers.

Wonderful in-season fruits and vegetables may be found now in local supermarkets.  And don't forget to also seek produce that is sold through local farms and farmers' markets.

Summer Salad

1 bunch lettuce, chopped (use romaine or mixed)

3 large ripe tomatoes, sliced

6 thin slices of fresh mozzarella cheese

1 cup pitted Greek olives

1 small cucumber, chopped

1/4 cup feta cheese (with sundried tomatoes)

Red onion slicesl)

Chopped fresh basil (optional)

Layer above ingredients on a platter and top with dressing.

Dressing:

1 clove chopped garlic

6 TB olive oil

2 TB balsamic vinegar

Pinch dried tarragon leaves

1 TB honey

Whisk dressing ingredients until well blended. Dressing recipe may be doubled.
