Provisions New England Lobster RollsEvery Summer we cater one of our favorite parties at Marvin & Keri Putnams house.
We try to change up the menu from year to year, but one thing we can't ever change is our Mini Lobster Rolls. This recipe makes 12-16 portions, depending upon how generous you like to fill each roll!
You can order special mini rolls from Natural Ovens or you can buy basic hot dog rolls and cut them in half.
We make these for over a hundred guests each year -that is a lot of lobster!!
In a large bowl combine the following:
1 pound of cooked lobster meat, tail and claws
1/4 cup finely chopped celery
1/4 cup creme fraiche
1/8 cup freshly squeezed lemon juice
2 tsps grated lemon zest
2 tsps fresh chopped dill
2 tsps fresh chopped chives
1/2 tsp celery salt
1/2 tsp sea salt
Butter the inside of each roll and cook butter side down until golden brown.
Fill rolls with Lobster mixture.
Eat immediately with a beautiful Summer Rose.
