Happy Holidays and Happy New Year! We are celebrating our fifth year in business and we want to thank all of our clients for another wonderful year. Christmas Vacation Cooking Classes for the kids
Looking for something to do with your kids over the LONG school break? Why not keep your kids busy with something fun and useful; teach them to cook for themselves and you! What you need: a minimum of five children and your kitchen. Stuffed Cabbage Recipe ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Of course there is nothing wrong with roast chicken or brisket, but try a new recipe for Hanukkah this year! (O.k., the picture is Kale, but it's in the same family.) This time of year reminds me of my grandmother, Bubby to her great-grand children, and her amazing stuffed cabbage. She always made it with veal, but I have adapted it to a more healthy and P.C. version with ground Turkey. I think she would approve.
Stuffed Cabbage 1 lb of Ground Turkey 1/2 lb of Turkey Italian Sausage 1 cup of brown rice 1/2 cup of carmelized onions (one onion chopped and sauteed in olive oil) 1/4 cup of chopped Italian Parsley 2 eggs, lightly beaten salt and pepper 1 head of Savoy Cabbage tomato sauce
In a bowl combine ground turkey, sausage, rice, onions, eggs,parsley, salt and pepper.
In a pot of boiling water cook the cabbage leaves for two-three minutes and rinse under cold water. Dry the leaves on paper towels.
Line a small ramekin with plastic wrap, and place one or two leaves in it and add a spoonful of meat mixture. Fold the leaves over the top and turn over placing the seam face down in a casserole pan. Repeat until all the cabbage is stuffed. Pour tomato sauce over the cabbage rolls and cook in the oven at 350 for 45 min to 1 hour. Serve with Hot Latkes!
