UNDERGROUND WINE TASTING DINNER

Back to School No Cook Easy Weeknight Dinner 

 

Heirloom Tomatoes

A great use for the end of Summer Tomatoes is a no cook Pappa Pomodoro Soup.  This recipe is adapted from RIVER CAFE. 

 

In fifteen minutes you have a wonderful and healthy meal for a family of 4 and lunch the next day! 

  

4 Tomatoes 

1 cucumber 

1 garlic clove 

2 fresh red chillies (optional) 

4 Ciabatta slices or day old baguette slices 

4 Tbs red wine vinegar 

3 Tbs Extra Virgin Olive Oil 

4 Tbs Fresh Basil leaves 

  

Soak Ciabatta slices in a small dish of cold water to moisten.  Sprinkle with vinegar and leave for ten minutes. 

  

Skin the tomatoes and cut in half and squeeze out the seeds.  Chop tomatoes and put aside in a bowl.  Peel and seed Cucumber and chop finely.  Peel and finely chop garlic with a teaspoon of salt.  Cut the chillies in half lengthwise and take out the seeds and finely chop.  Add everything to the tomatoes. 

  

Squeeze out the bread and chop finely and add to the tomato mixture.  Add some freshly ground pepper to taste and the olive oil. Mix thoroughly.   

  

Tear the basil into small pieces and stir into soup.  Serve with a drizzle more of olive oil.

After many requests from friends and clients we are finally planning an evening of instruction and imbibing, not necessarily in that order. Like all good parties, we'll start in the kitchen and then segue to the outdoor patio and enjoy the fruits of our labor

 

By the end of the evening, you'll have learned every aspect of making the perfect cocktail, from the simple syrup to the muddled fresh herbs.  

 

We'll also teach you how to make your favorite party passed appetizers to enjoy with your perfect cocktail.

 

Come to schmooze, unwind and nosh! Come for the booze and stay for the company!
