Winter Farmers markets are resplendent with the most gorgeous Kale, Chard and Cauliflowers. We have been so inspired by the bounty that we can't stop working on new recipes! The recipe that follows will brighten any rainy day!!
Cauliflower Frittata 10 eggs 1/2 head of steamed cauliflower 1 onion finely chopped 1 cup pankow breadcrumbs 1/2 cup parmesan cheese 2 Tbs butter fresh thyme, salt and pepper to taste
In a cast iron or oven safe pan, sautee onions slowly in 2 Tbs butter until almost carmelized. Add chopped cauliflower and sautee until it is well mixed with onions. Add the ten beaten eggs, fresh thyme and salt and pepper. When the bottom is firmly set, add pankow breadcrumbs and parmesan cheese. Bake in oven at 400 until golden brown on top, about 5 minutes.
