BK Racing Team 2012


Landon Cassill is headed to Michigan this week - one of the fastest tracks on the circuit!  Racers should hit speeds well over 200 mph.   

 

Michigan is an exciting track for Landon - this is where he had his first Cup Start, and his career-best finish!

Stuffed Twice Baked Potatoes -
Easy Summer recipe!

 Yummy!  Easy summer recipe

Ingredients
  • medium russet potatoes
  • 8  ounces
    90%-lean ground beef, (or see Tips, below)
  • 1  cup
    broccoli florets, finely chopped
  • 1  cup water
  • 1  cup
    shredded reduced-fat Cheddar cheese, divided
  • 1/2  cup
    reduced-fat sour cream
  • 1/2  teaspoon
    salt
  • 1/4  teaspoon
    freshly ground pepper
  • 3 scallions, sliced

Directions
1.  Pierce potatoes all over with a fork. Place in the microwave and cook on Medium, turning once or twice, until the potatoes are soft, about 20 minutes. (Or use the "potato setting" on your microwave and cook according to the manufacturer's directions.)

2.  Meanwhile, brown meat in a large skillet over medium-high heat, stirring often, about 3 minutes. Transfer to a large bowl. Increase heat to high, add broccoli and water to the pan, cover, and cook until tender, 4 to 5 minutes. Drain the broccoli; add to the meat.

3.  Carefully cut off the top third of the cooked potatoes; reserve the tops for another use. Scoop out the insides into a medium bowl. Place the potato shells in a small baking dish. Add 1/2 cup Cheddar, sour cream, salt and pepper to the potato insides and mash with a fork or potato masher. Add scallions and the potato mixture to the broccoli and meat; stir to combine.

4.  Evenly divide the potato mixture among the potato shells and top with the remaining 1/2 cup cheese. Microwave on High until the filling is hot and the cheese is melted, 2 to 4 minutes.

Tips:
Vegetarian variation: Replace the ground beef with a soy-based substitute or omit the beef altogether and increase the broccoli to 1 1/2 cups and the cheese to 1 1/4 cups.

MAKE AHEAD TIP: Prepare and stuff potatoes. Cover and refrigerate for up to 2 days. Microwave and serve.

  Tire Pressure 101

 
It's getting warm out and everyone is getting geared up for the busy time of going here and running there... don't let your summer fun be spoiled by tire failure!

Fact:  Temperature change affects tire pressure, so NOW is the time to check your tire's pressure

            
Q.What is the proper tire pressure or how do I find it?
             A. The tire pressure is stamped on the side of the tire, this is the recommended pressure the tire manufacturer has determined for the weight load capacity of the tire and for the best ride.

  


             Q. What about the tag on the door of my vehicle?
             A. The tag on the door is the recommended pressure for the original equipment tires and that is for the best ride qualities also. 





As you can see in the above example: 
The tire reads 44 psi. 
The door tag reads 32 psi. 
This is why it is important to check the tire.  


Don't forget that properly inflated tires make a difference in fuel economy and longevity of the tires.



To learn how to check the air pressure with your tire pressure gauge, please attend Cassill Motor's Car Care Awareness Class offered each month on the 2nd Thursday at 6PM.  Jay answers your specific questions, so please mention that you would like to learn about this at the start of the class!  If you have other vehicle maintenance questions, you can ask about them as well!


And finally,- Please use caution when airing tires and NEVER air a tire that has been run down the road flat or very low for any period of time as there is probably sidewall damage and nobody needs a tire blowing up on them.
