The Lexington Farmers' Market  

August 15th, 2012 

Tonight is the last night of our Wednesday market at the University of Kentucky.  Please come out and help us celebrate between 3pm-6pm.  We will be raffling off LFM tokens and merchandise to UK employees, spouses, and retirees.  As always you can pick up your fair share of fresh produce, eggs, meats, breads, jellies, and canned items.

 

The LFM would like the extend a big thank you to the UK Wellness team for helping us make this market happen.  As always an extra big thank you to our loyal shoppers who help keep our markets going and the dedicated farmers who without them none of this would be possible.  Thank you all!  We look forward to seeing you at our many other markets!

  • The annual Taste of Farm in the City Dinner is quickly approaching.  The event will be held this year on August 25th, downtown, in the 5/3 bank pavilion.  Cash bar will begin at 5:30pm with dinner to follow.  Tickets will be $45/ person and $20/ child.  Tickets are on sale now!  They will go quickly so be sure to stop by any market location to purchase yours before August 20th.

I'm a sucker for a good zucchini bread and am always trying out different recipes.  So, when I came across this gem I knew I had to try it out.  I turned them into mini muffins and they did not disappoint.  Enjoy!

  

Zucchini Muffins

  

   

Ingredients: 

  • 3 cups grated fresh zucchini
  • 2/3 cup melted unsalted butter
  • 1 1/3 cup sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • Pinch salt
  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup walnuts (optional)
  • 1 cup raisins or dried cranberries (optional)
Directions:
 
  1.  Preheat the oven to 350°F (175°C). In a large bowl combine the sugar, eggs, and vanilla. Stir in the grated zucchini and then the melted butter. In a separate bowl, mix together the flour, baking soda, nutmeg, and cinnamon. Stir these dry ingredients into the zucchini mixture. Stir in walnuts, raisins or cranberries if using.
  2. Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Use a spoon to distribute the muffin dough equally among the cups, filling the cups up completely. Bake on the middle rack until muffins are golden brown, and the top of the muffins bounce back when you press on them, about 25 to 30 minutes. Test with a long toothpick or a thin bamboo skewer to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin let cool another 20 minutes.

This week, Boone Creek Creamery will be featured on the Kentucky Proud Kitchen, hosted by award winning chef Brigitte Nguyen. The show airs this Sunday, the 19th, on FOX 56 television at 11:30 a.m.

 

Tomato season is still going strong so we will have our fresh handmade Mozzarella at the Markets from now until mid-September. Add a little of our Tuscan Sun, with organic sun dried tomatoes and basil, for a nice Italian flavor. We will also have a limited supply of one-year-old Parmesan available.

We couldn't have ordered better market weather for last week!  WOW!!  And this week looks like it will be the same or better!  It almost makes up for the ridiculously hot days we had in July!!
 
All the growing things are also appreciating the cooler weather, and a little rain now and then.  Our KALE is beautiful, and the BABY ROMAINE is thriving!  It's a variety bred to produce in hot weather, and it really has!  We've been through quite a spell without fresh greens, so we're thrilled to have it back!
GREEN ONIONS, CANDY and KEEPER ONIONS and SHALLOTS, SWEET RED PEPPERS, MIXED HOT PEPPERS.  BASIL!!!  Time to make pesto for the winter!  SWEET BASIL (Genovese), THAI, or LIME.  Just picture a nice piece of fish or chicken off your grill topped with a dollop of LIME BASIL PESTO....YUM!  We love the Thai basil for our homemade spaghetti sauce.
 
GARLIC SCAPE PESTO is great in mashed potatoes in place of the butter, as a pasta topping, a dressing for just about any vegetable, in meatloaf or most anywhere you need a seasoning!  Stanley Demos' Coach House CHAMPAGNE DRESSING isn't available anywhere any more, except from us!  Freshly made, using Blue Moon Farm GARLIC!

This has been a wonderful summer!  I hope it has been for you.  There is plenty of time left in the season to get such yummy treats like goat cheese from Bluegrass Chevre, which is next to me.  Perhaps you need some garlic from Blue  Moon Farm or pawpaws from the PawPaw Plantation to make pawpaw ice cream.  Now if you need fresh honey, you know where to come - Abigail's!!!!!

  

HONEY -  I have a nice locust/clover blend.  It is a very light mild honey. Very smooth.  A beautiful table honey.  My husband is going to take off work this month and we are going to do one last sweep of the hives.  Maybe there might be some honey or not.  We will see. 

  

SOAPS - They may look clunky but they work.  They leave your skin feeling refreshed and moisturized.  Compare them with commercial soaps.  You can't beat soaps with olive oil, canola oil, coconut oil, palm oil, Vitamin E and honey.  You just can't!!!!!

  

"Death By Bridle"  is the third installment in the Josiah Reynolds mysteries.  I have two left but I have ordered more.  "Death By Bourbon"  will be out in a month.  Have your fingers  crossed that I make the deadline.  All books are available at the LFM -  Josiah's market of choice.

QUARLES DAYLILLIES AND FARM

We've got a bit of much welcome rain over the last two weeks.  It's made the beans, squash and cucumbers sprout which is good.  Now if we can just get the carrots and beets to sprout.  It may not be meant to happen but we'll keep our fingers crossed.  Right now our zucchini, yellow squash and cucumbers are doing well and we'll have plenty at both markets in addition to onions.   

  

We'll also have plenty of beef in the coolers.  Steaks, brats, metts, roasts. hamburger patties.  Lots of variety.  For those of you that want organ meat, we should have plenty of liver soon.  We'll also have several other varieties of organ meat.  Just drop us a line and we'll let you know what we have left.  We'll also have beef BBQ ready to eat as sandwiches or heat and eat at home.  Good for nights you don't really feel like heating up the kitchen.  Sweet tea and lemonade is also available for those dying of thirst during their shopping ventures. 


Lots of breads will grace the table, just right for family gatherings or lunch box treats.  Buy several, take them home, slip them in a freezer bag and enjoy them throughout the week.

GOOD SHEPHERD

 Lambing season is over here on the farm at Good Shepherd Cheese.  Our final total of lambs is 69.  35 ewe lambs and 34 ram lambs.  Our 51 momma ewes are back in the pasture now, spending their days munching on Orchard grass & Clover from our rich Kentucky soil here in the rolling hills in Bath County.  The orchard grass, clover & native flora all combine to give our sheep milk it's own distinctive flavor.  This flavor contributes a wonderful earthy, nutty and buttery taste to our Good Shepherd Cheese.

LA PETITE CREPERIE

La Petite Crêperie brings a little taste of France to the Bluegrass.  

 

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.  The best part was that they were never far away. Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

 

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.  After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination. 

 

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market. We also make a hearty breakfast crêpe with market eggs, cheese and vegetables. Our menu will vary as other fruits, berries and vegetables come into season.
