The Lexington Farmers' Market |
July 25th, 2012
|
Recently, while visiting my parents back home, I volunteered to help pick tomatoes for a local farmer. Now, I have picked my fair share of tomatoes growing up around my grandparents' garden. However I quickly learned there is a vast difference between a small tomato crop in a backyard and a farmers' rows of tomatoes picked for income.
Within the first hour of sitting, kneeling, standing, squatting, and sweating profusely to get one bucket of worthy tomatoes, I caught on to just how much work this was. In no way am I complaining about the work I did, in fact I was very proud of it. It was one of my more accomplished moments to look down that row of tomatoes, and see nothing but desolate shades of green where once every array of summer color stood.
I gained a whole new appreciation for farmers' who work dawn to dusk in the fields with aching backs and vine colored hands. From that day on, I haven't looked at a tomato without thinking of the hours of labor it took to get that succulent fruit into my hands. So, next time you are biting into a juicy fresh summer tomato take a little time to thank that farmer whose hands are forever green and backs constantly aching.

My roommate and I needed a quick recipe to take to a gathering Monday night and this one worked out beautifully. Not to mention every product used can be purchased in season at the market.
Melon, Tomato & Onion Salad with Goat Cheese
Ingredients:
- 1 cup very thinly sliced sweet white onion, separated into rings
- 1 small firm ripe melon
- 2 large tomatoes, very thinly sliced
- 1 small cucumber, very thinly sliced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1 cup crumbled goat cheese
- 1/4 cup extra-virgin olive oil
- 4 teaspoons balsamic vinegar
- 1/3 cup very thinly sliced fresh basil
Directions:
- Place onion rings in a medium bowl, add cold water to cover and a handful of ice cubes. Set aside for about 20 minutes. Drain and pat dry.
- Meanwhile, cut melon in half lengthwise and scoop out the seeds. Remove the rind with a sharp knife. Place each melon half cut-side down and slice crosswise into 1/8-inch-thick slices.
- Make the salad on a large platter or 8 individual salad plates. Begin by arranging a ring of melon slices around the edge. Top with a layer of overlapping tomato slices. Arrange a second ring of melon slices toward the center. Top with the remaining tomato slices. Tuck cucumber slices between the layers of tomato and melon. Sprinkle with salt and pepper. Top with goat cheese and the onion rings. Drizzle with oil and vinegar. Sprinkle with basil.

We've got a bit of much welcome rain over the last two weeks. It's made the beans, squash and cucumbers sprout which is good. Now if we can just get the carrots and beets to sprout. It may not be meant to happen but we'll keep our fingers crossed. Right now our zucchini, yellow squash and cucumbers are doing well and we'll have plenty at both markets in addition to onions.
We'll also have plenty of beef in the coolers. Steaks, brats, metts, roasts. hamburger patties. Lots of variety. For those of you that want organ meat, we should have plenty of liver soon. We'll also have several other varieties of organ meat. Just drop us a line and we'll let you know what we have left. We'll also have beef BBQ ready to eat as sandwiches or heat and eat at home. Good for nights you don't really feel like heating up the kitchen. Sweet tea and lemonade is also available for those dying of thirst during their shopping ventures.
Lots of breads will grace the table, just right for family gatherings or lunch box treats. Buy several, take them home, slip them in a freezer bag and enjoy them throughout the week.
Check out our website at quarlesfarm.com or visit our Facebook page at http://www.facebook.com/home.php#!/Quarlesfarm There's a few pictures of our newest aquisitions, hair sheep. We've bought four feeder lambs and four replacement yearling ewes so life should be entertaining for a while. Sheep have returned to Quarles Farm for the first time in over 40 years. We think it's about time.

Bleugrass Chèvre

We're busy slicing peaches, cutting up watermelons, peeling mangos and squeezing lemons for Saturday's sorbet! There have been a lot of questions from customers about ingredients, so here's the "scoop." We always use fresh seasonal fruit from the market, but obviously we have to purchase the tropical fruits elsewhere. A few flavors (such as roasted strawberry with goat cheese) contain a small amount of coconut or hemp milk for creaminess. One teaspoon of arrowroot per batch is the only ingredient we use for texture. Our ingredients are dairy-free, gluten-free and corn-free, but we will always have one flavor with goat cheese. The ingredients are usually very simple: pureed fruit, water, sugar and honey from the market. Elaine is practically a chemist now from reading stacks of ice cream and sorbet books and experimenting to get a proper "mouth feel" while using only healthy ingredients. So stop by for a scoop of what we feel is a pretty unique and delicious product. And we hope to have pints available before the end of the summer. Of course we'll have cheeses, as well. If the weather doesn't cool down soon, we're going to have to feed the goats sorbet to cool them off! Cheers, Susan and Elaine
BOONE CREEK CREAMERY
HANDMADE ARTISAN CHEESE
Fayette County
Tomato season is in full swing so we will have our fresh handmade Mozzarella at the Markets from now until mid-September. It always sells out, so stop by early. If you're making Caprice Salads add a little of our Tuscan Sun, with organic sun dried tomatoes and basil, for a nice Italian flavor. We will also have a limited supply of one-year-old Parmesan available.
Our Scandinavian Bread Cheese is also wonderful on tomatoes and salads. There's no bread in it. This is a toasted cheese with a grilled flavor. When served warm, this Scandinavian delicacy is absolutely amazing.
Our Blackberry Serenade is an alpine Gruyere infused with blackberry wine. A little sweet with a nice Summer flavor. Try it with a little Blackberry Jam. Mmm... So good you might want it for dessert.
We'll be downtown on Saturdays, Southland Drive on Sundays, and Alumni Drive on Wednesday afternoons.
We also offer cheese making classes, supplies, and equipment. For details, call or visit our website. See you at the Market.

Lambing season is over here on the farm at Good Shepherd Cheese. Our final total of lambs is 69. 35 ewe lambs and 34 ram lambs. Our 51 momma ewes are back in the pasture now, spending their days munching on Orchard grass & Clover from our rich Kentucky soil here in the rolling hills in Bath County. The orchard grass, clover & native flora all combine to give our sheep milk it's own distinctive flavor. This flavor contributes a wonderful earthy, nutty and buttery taste to our Good Shepherd Cheese.
News Flash - Check out the June issue of Kentucky Monthly Magazine for a great article about Good Shepherd Cheese by Megan Smith. Megan has done a wonderful job of capturing what life is like here on the farm. She also lets her readers know just how we got into this crazy life of milking sheep and making cheese.

LA PETITE CREPERIE
Fayette County
La Petite Crêperie brings a little taste of France to the Bluegrass.
The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France. After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget. The best part was that they were never far away. Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.
My husband Mark and I took many more trips to France and ate countless more crêpes. We decided that the good people of Lexington should be able enjoy them here. After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination.
La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter. Half of the fun is watching, smelling, and anticipating how delicious it's going to be. Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market. We also make a hearty breakfast crêpe with market eggs, cheese and vegetables. Our menu will vary as other fruits, berries and vegetables come into season.
La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00. You can visit our website, www.petitecreperie.com to find out exactly where we will be and when. Bon appétit!

WUKY
WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so please pledge now and thank you so much for supporting WUKY.
