The holiday season is here and it's easy to get swept in to traditional ways to celebrate.  This year, instead of doing your shopping at the mall, keep your money in Kentucky by buying local.  Lexington's locally-owned, independent business association, Local First Lexington is a great resource for finding local businesses, though there are MANY MORE local businesses that are not a part of their directory.    

You can do some of your holiday shopping at the Lexington Farmers' Market!  Through the month of December we'll be featuring SPECIAL DEALS on LFM merchandise.  Our NEW sweatshirts, long sleeve tees, coffee mugs, aprons, tote bags, Cricket Press art prints and market gift certificates make fantastic gifts.  Many of our members have also prepared an extra something special for the holiday season, so be on the lookout.

We've moved indoors to Victorian Square until early April 2012! We're located directly across from the newly renovated Triangle Park, where you can celebrate winter by zipping around the new ice rink and then come inside to warm up with the Lexington Farmers' Market.  This weekend you can find delicious homemade breads and artisan cheeses, local meats and eggs, raw local honey, truffles and desserts, dog treats, hot sauces, scones, coffee and tea, decorative greens and a wide variety of winter crops, such as winter greens, squash and other root vegetables.

Remember that I'm a recovering vegetarian, so I've been especially impressed with how far you can stretch one delicious, locally raised, ASH free chicken.  Not only does this chicken that you can buy at the Lexington Farmers' Market taste better, it's better for you and the environment, it lasts for AT LEAST 3 meals and it supports the livelihood of Kentucky farmers.  Here's a recipe for Chicken Noodle Soup that uses the whole chicken to achieve a superior, rich flavor!


Homemade Chicken Noodle Soup 

 

  • 1  (3 1/2-pound) whole chicken
  • 3 quart(s) low-sodium chicken broth
  • 6  carrots, peeled
  • 4 stalk(s) celery, ends trimmed
  • 3 medium onions, peeled
  • 5  black peppercorns
  • 1 clove(s) garlic, crushed
  • 10 sprig(s) parsley
  • 2 sprig(s) thyme
  • 1  bay leaf
  • 2 tablespoon(s) unsalted butter
  • 4  leeks, tops and root ends removed
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) fresh-ground pepper
  • 3 cup(s) (5 ounces) medium egg noodles

  1. Make the stock: Place the chicken and chicken broth in a large stockpot and set it over medium heat. Roughly chop 2 carrots, 2 celery ribs, and 1 onion and add to the broth. Add the peppercorns, garlic, 2 sprigs of parsley, thyme, bay leaf, and enough water to just cover the chicken. Bring the broth to a boil, reduce heat to a simmer, and cook until the chicken is very tender -- about 1 1/4 hours -- skimming the surface periodically. Remove the chicken and place in a large bowl. Strain the broth through a very fine sieve into a large, clean bowl or stockpot. Discard the vegetables.
  2. Make the soup: Skim any fat off the top of the strained broth and discard. Slice the remaining carrots, celery, onions, and leeks into 1/4-inch-thick pieces and set aside. Remove and discard the skin and bones from the chicken, cut meat into 1/2-inch pieces, and set aside. Chop the remaining parsley leaves and set aside. Melt the butter in a large Dutch oven over medium heat. Add the vegetables and cook until the onions are translucent -- about 7 minutes. Add the chicken, the reserved broth, salt, and pepper. Simmer the soup until the vegetables are tender -- about 1 hour. Stir in the egg noodles and parsley and cook until the noodles are tender -- about 10 more minutes. Serve hot.

Three more Saturday's to shop before Christmas.  Having problems figuring out what to give folks?  What about a nice homemade gift with lots of local flavor and no preservatives?  We've staked out our spot in Victorian Square and we'll be there this week with lots of goodies.

 

 

We'll have all of our baked goods as well as our salsas, relishes, jams and pickles.  All of these things make great gifts as well as hostess gifts for all the parties you'll be attending this season.  The breads make fine breakfast and brunch additions and the iced cakes can top off any meal in style.  The relishes and salsas can help round out a buffet line and our beef can make any party better with great burgers, meatballs, dips and casseroles.  We'll also have plenty of steaks, roasts and other cuts for lots of flavorful holiday meals.

In the produce area we have plenty of potatoes, winter squashes, kale and mustard greens.  We'll also have a few apples left.  They'll soon be gone so enjoy while you can. 

Here's a recipe using butternut squash.  It makes a nice addition to any meal and is easy to make.

Butternut Squash Bake

6 Servings Prep: 35 min. Bake: 30 min.
Ingredients
1 small butternut squash, peeled, seeded and cubed (about 2 cups)
1/2 cup mayonnaise
1/2 cup finely chopped onion
1 egg, lightly beaten
1 teaspoon sugar
Salt and pepper to taste
1/4 cup crushed saltines (about 8 crackers)
2 tablespoons grated Parmesan cheese
1 tablespoon butter, melted

Directions
Place squash in a saucepan and cover with water; bring to a boil.
Reduce heat; cover and simmer for 20-25 minutes or until very
tender. Drain well and place in a large bowl; mash squash.
In another bowl, combine the mayonnaise, onion, egg, sugar, salt and
pepper; add to the squash and mix well.
Transfer to a greased 1-qt. baking dish. Combine the cracker crumbs,
cheese and butter; sprinkle over top. Bake, uncovered, at 350°
for 30-40 minutes or until heated through and top is golden brown.
Yield: 6 servings.
Nutrition Facts: 1 serving (1 each) equals 245 calories, 18 g fat (4 g saturated fat), 49 mg cholesterol, 199 mg sodium, 19 g carbohydrate, 5 g fiber, 3 g protein.

On the cheese front, we are still waiting for enough milk to make cheese.  We need at least 10 gallons every three days to make a batch that will meet regulations, and we just don't have that much yet.  The does are waddling around making "Om" sounds which means babies are close.  They have had ultrasounds just to make sure those round bellies weren't from too much alfalfa, and sure enough, plenty of kids are on the way. We are guessing they will all arrive at once, and it will be crazy fun, plenty of milk and cheese for the winter, and very little sleep for me!  Fortunately, the whole process is very energizing.

I pulled over and cut the engine. Slumped beside me in the passenger seat, the famous mystery writer, lecturer and bee expert. I needed to gather my wits. Some evil was afoot and the Lexington Farmers Market will never be the same if we can't solve this one. Something had happened to the famous LFM street musicians. Those artists and free spirits who make our commercial arena such a joyful, musical place. Something, perhaps sinister,  was 
plucking them from amongst us making the marketplace less gay. I needed most urgently to consult one of the keener minds around town when it concerned anything murky or criminal, but, oh, here she is, awakening somewhat from her honey-induced stupor. " it's the cold weather " she said and fell back asleep.

Rain , rain, go away!!!  Come again next August when we really need you on our crops!!  We are working as many days a week as we can, trying to get next year's garlic crop in the ground.  Some weeks that means only a day or two, but we're getting there!  The rains of early Thanksgiving week gave us the opportunity for a few days off, and we travelled to Atlanta to spend the holiday (and a couple more days!) with Jean's family, which was fun.  Lots of good food, drink, music and conversation.
2012 seed catalogs are starting to roll in, which is always fun.  The best gardens are "planted" in the winter!  :-)  We're enjoying looking for new varieties to grow for you next year.  This is a good time to tell us if there's something special you'd like to have us grow!
We saw the largest flock of wild turkeys yet while walking to the mailbox a few days ago.  They were in the pasture just below a rise, but got spooked by us and took to the air.  The sound was amazing, and the sky filled up with their outstretched wings.  We figure there must have been at least 30 of them.
Our Music garlic is still available at Good Foods Market on Southland Drive........Garlic Scape Pesto too!  Great for easy hors d'oeuvres for your holiday gatherings.  Mix with some plain yogurt or sour cream for a delicious dip, spread on slices of a baguette and top with a slice of cheese or meat.  For a quick meal after a day of Christmas shopping, how about pasta with shrimp and garlic scape pesto?  YUM!!

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Rhapsody En Bleu, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Rhapsody, Tuscan Sun, Abbey Road, Wildcat Blue, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

LA PETITE CREPERIE

La Petite Crêperie brings a little taste of France to the Bluegrass.  You can find us through the winter at Triangle Park where you can warm up with a crepe while you stroll through the Lexington Farmers' Market inside Victorian Square.  

 

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

 

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination. 

 

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

The Carnegie Center for Literacy and Learning and the Morris Bookshop are cosponsoring the Homegrown Authors Series this summer at the Lexington Farmers' Market. On select Saturdays you can meet a local author and buy a signed copy of his or her book at market. The series will return next summer with a vibrant new crop of Kentucky authors!    

 

 

SPECIAL GUESTS AT THE LFM...     

 

Central Baptist Hospital will continue selling their cookbook, Beyond the Fence, at the Friends of the Farmers' Market table. Recipes from their cookbook were featured at our farm dinner, A Taste of the Farm in the City!

 

Check in with Lexington's Master Gardeners for tips or advice on your garden. They are finished with market for the season and will return next summer with lots of great tips! 

 

KID'S ACTIVITIES AT THE LFM...

 

LFM kids' activities will return next year!  Thank you to all of the local organizations who helped get kids excited about local, healthy food. 

 

 

GLEANING with Faith Feeds...

 

So far this year, Faith Feeds collected approximately 10,800 pounds of fresh food from our LFM members.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  So far this year Faith Feeds has collected and delivered more than 49,800 pounds of food!

Rona Roberts of Savoring Kentucky, a long-time LFM shopper, frequently features many of our vendors on her blog.  She's recently written about Reed Valley Orchard, many of our vendors who were featured at this year's Incredible Food Show, and many other local food happenings.
