As our 2011 outdoor season draws to a close we'd like to take some time to express our thankfulness and gratitude to all of those who have stood by us throughout this fantastic season.  Without the support of our loyal customers we could not have had such a successful outdoor season and we look forward to continuing to provide healthy, local foods to the Lexington community as we move indoors for the winter season.
 
You can find us outdoors this Saturday at Cheapside Park.  Though we will be down to about 5 or 6 vendors there will be a wonderful arrangement of greens, root vegetables, farm fresh beef, delicately baked breads, raw local honey and other seasonal items for you to choose from.

Sweet Potato (and Marshmallow) Biscuits

Makes 12 to 14 2-inch biscuits

 

 

  • 1 pound sweet potatoes (red skinned are my favorite)
  • 1/3 cup (79 ml) buttermilk
  • 2 cups (250 grams) all-purpose flour
  • 1 tablespoon (15 grams) baking powder
  • 3 tablespoons (38 grams) granulated sugar
  • 1 teaspoon ground (2 grams) cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon (2 grams) table salt
  • 5 tablespoons (71 grams) unsalted butter, cold
  • 1 cup miniature marshmallows (optional)

 

 

  • The day before or a couple hours in advance: Preheat oven to 400°F. Place sweet potato on a tray and roast until soft, about 40 to 45 minutes. Let cool completely in skin (the fridge can speed this up) then peel. Either run potato flesh through a potato ricer or mash it until very smooth. You're looking for 3/4 cup (191 grams) sweet potato puree
  • You'll probably have turned your oven off by now, so preheat it again to 400°F. Line a baking sheet with parchment paper and set aside. Whisk 3/4 cup reserved sweet potato puree with buttermilk until smoothly combined. Keep nearby.
  • In the bottom of a large, wide-ish bowl, whisk flours, baking powder, sugar, spices and salt together. If you have a pastry blender, add the butter and use the blender to cut the butter into the flour mixture until the biggest pieces are the size of small peas. If you don't have a pastry blender, cut the butter into small pieces with a knife and work the butter into the flour mixture with your fingertips until the mixture resembles a coarse meal.
  • For both methods, continue by adding the sweet potato mixture and stir and break it up until the mixture is in big, soft chunks. Get your hands in the bowl and gently knead the dough into an even mass, using as few motions as possible (and thus, warming the dough as little as possible.).
  • With marshmallows: Roll or pat dough out on a floured counter to a 1/2-inch thickness and divide evenly in half. Sprinkle marshmallows loosely over half of dough. Place the second half on top of marshmallow and use rolling pin to gently press the sides together, keeping the final dough thickness at a full inch.
  • Without marshmallows: Roll or pat dough out on a floured counter to a 1-inch thickness.
  • Both methods: Dip a 2-inch biscuit cutter in flour then form biscuits by cutting straight down and not twisting - this will help give your biscuits the maximum rise. Bake biscuits on prepared sheet for 13 to 15 minutes, until puffed and slightly golden on top. Cool on rack and enjoy as soon as possible.
  • Do ahead: Biscuits are best on the first day that they're baked. To make them ahead of time, arrange cut biscuits on a tray to freeze them. Once frozen, transfer them to a freezer bag until needed. Bake at same temperature straight from freezer; biscuits will take about 2 minutes longer to bake.

Winter is approaching and though the summer has passed there's still plenty to keep us busy.  We've weaned the spring calves and we're busy trying to get the daylily field ready for the winter.  We still need to trim the blackberries and get a few potted plants in the ground that have been sitting patiently since the middle of the summer.  We're canning green tomato relish and processing pumpkins for all our breads.  We still have lots of beef and breads at the Saturday market as well as winter squashes, kale, mustard greens, collards, turnips and turnip greens.  We've got some nice potatoes to go with a chuck roast for some real comfort food.  We'll have hot coffee and hot chocolate for sale if you need a little "warming up" while shopping!

This will be the last day for the outdoors Lexington Farmer's Market, so come out and stock up for the winter. On Saturday November 26th wewill be downtown at Cheapside Park. We will be at the Saturday market unless it rains. Come on out and replenish your local honey, pollen supplies, and beeswax candles.

You may also purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

Out home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

On the cheese front, we are still waiting for enough milk to make cheese.  We need at least 10 gallons every three days to make a batch that will meet regulations, and we just don't have that much yet.  The does are waddling around making "Om" sounds which means babies are close.  They have had ultrasounds just to make sure those round bellies weren't from too much alfalfa, and sure enough, plenty of kids are on the way. We are guessing they will all arrive at once, and it will be crazy fun, plenty of milk and cheese for the winter, and very little sleep for me!  Fortunately, the whole process is very energizing.

At the Saturday morning downtown market (year-round), we will have a
selection of Certified Organic produce, organic chicken, organic beef,
organic farm eggs, jarred products, dried pantry staples, and much more!

TALKIN' TURKEY?  At the farm, our Heritage breed and broad-breasted breed
Certified Organic turkeys are sizing up nicely.  Elmwood is one of just a
few farms in the US that grow heritage breed turkeys that are also
Certified Organic, making these holiday turkeys a very special item.

We keep the breeding stock hens and toms here year-round.  The American
Livestock Breeds Conservancy recognizes some of our breeds as in danger of
extinction.  In order for farms to afford the costs and upkeep of keeping
heritage breed animals without a supporting source of income to offset the
expenses, Slow Food USA is helping to spread the word and promote heritage
breed products as a food source.  By creating demand for heritage foods,
then farms can work to produce and maintain heritage breeds such as
Bourbon Red and Narragansett turkeys.

We take pre-orders for Elmwood turkeys either in person at the market or
though email.  They are processed at a USDA inspected facility and will be
ready for pickup the weekend prior to Thanksgiving or for December
holidays.  Just contact the farm and we'll share more details with you on
expected available sizes, the differences in taste and appearance
dependent on heritage or broad-breasted breeds, and pricing.

Certified Organic PRODUCE we are harvesting includes seasonal fall items
such as Potatoes, Onions, Garlic, Beets, Savoy Cabbage, Swiss Chard,
Celery, Leeks, Daikon and other Radishes, Kale, Collard and Mustard
Greens, and Fall Squashes of Acorn, Sweet Dumpling, Butternut, Stripetti,
Buttercup, and Spaghetti.

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus
organic beef, along with a full selection of certified organic hens and
cut-up chicken pieces.  In addition, we have chicken liver and ground
chicken.  Feel free to order ahead for quantity amounts or a particular
cut for that special meal, and we'll have it ready for pickup at any of

I needed most urgently to consult one of the keener minds around town when it concerned anything murky or criminal, but, oh, here she is, awakening somewhat from her honey-induced stupor. Garlic planting season is here, so you will no longer find us at the market on Saturdays.  The first of the 2012 crop is in the ground!  Our BABY GREEN GARLIC has been planted for the first markets of the year, and a few of the early softneck varieties are in the ground too.  Now it looks like a couple of days of rain are setting in....just in time, in my opinion!  This Tuesday is my (Jean's) birthday, and we are planning a day off!  Hard to imagine!  Almost like normal folks! 
We're hoping for a reasonable amount of rain, but not too much, as it takes forever to dry out in the cooler temperatures, and we'll need to get back to the garlic fields soon.
With Thanksgiving coming up next week, we thought we should run our  "Not Your Average Cranberry Sauce" recipe again.  It is SO good!  We encourage you to try it this year....your family and friends will love you for it!

  

"Not Your Average" Cranberry Sauce

Into a medium saucepan put: 
 1 Bag Fresh Cranberries, washed and drained 
 1 Cup Water 
 1/2 Cup Honey 
 1 Large Apple or Pear, peeled, cored and cut into cubes 
 1 Medium Jalapeno Pepper (Optional) finely minced 
           (remove seeds first for a little less heat!!) 
 1-2 Cloves Blue Moon Farm Garlic, minced 
 1/2 to 3/4 inch Freshly Grated Ginger Root

Bring to a boil, then simmer until cranberries pop. 
 Serve warm or cold.

Enjoy!

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Rhapsody En Bleu, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Rhapsody, Tuscan Sun, Abbey Road, Wildcat Blue, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

LA PETITE CREPERIE

La Petite Crêperie brings a little taste of France to the Bluegrass.

 

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

 

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination. 

 

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

 

La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon appétit!

The Carnegie Center for Literacy and Learning and the Morris Bookshop are cosponsoring the Homegrown Authors Series this summer at the Lexington Farmers' Market. On select Saturdays you can meet a local author and buy a signed copy of his or her book at market. The series will return next summer with a vibrant new crop of Kentucky authors!    

 

 

SPECIAL GUESTS AT THE LFM...     

 

Central Baptist Hospital will continue selling their cookbook, Beyond the Fence, at the Friends of the Farmers' Market table. Recipes from their cookbook were featured at our farm dinner, A Taste of the Farm in the City!

KID'S ACTIVITIES AT THE LFM...

 

LFM kids' activities will return next year!  Thank you to all of the local organizations who helped get kids excited about local, healthy food. 

 

 

GLEANING with Faith Feeds...

 

So far this year, Faith Feeds collected approximately 10,800 pounds of fresh food from our LFM members.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  So far this year Faith Feeds has collected and delivered more than 49,800 pounds of food!

 

Over forty volunteers give of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.  Look for Faith Feeds at any of our given markets as they are hard at work harvesting for the hungry this summer!

PARKING is always FREE at all of our markets if you know where to look!  

 

On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

A friendly reminder: When shopping at our Tuesday and Thursday markets on South Broadway and Maxwell, please remember to park first and then come check out what our wonderful vendors have brought with them. The market is not a drive-thru and in order to ensure every ones safety we need to keep the aisles free of cars!
