 Thanksgiving is officially two weeks away so if you haven't been by the market to reserve your turkey you should do so this week.  Elmwood Stock Farm, Baumann Forever Farm and Garey Farm have healthy heritage breeds as well as broad-breasted breed turkeys for you to reserve and pick up the week of Thanksgiving.  As always, by talking with your farmers you can find out much more information about expected size, which breed suits your needs best and taste.

Here are some helpful tips, courtesy of Slow Food USA, to help you plan the best All-Local Thanksgiving ever: 
  • Make your pies in advance. Pumpkin and apple pies can even be put in the freezer until you're ready.
  • Prep your veggies a day ahead of time to make assembling salads and building casseroles a breeze.   
  • Maximize oven space. Fill the oven with different dishes that cook at the same temperature. You'll save energy and time.
  • Waste not, want not. Save your excess grease and fat from cooked meats and add them to veggie dishes or stocks. This reduces waste and kicks up the flavor of other dishes.
  • Start with a whole food. Seeing canned pumpkin on a store shelf can be tempting. But why spend money on a puree that was processed a year ago when you can make your own for the same cost? Roasting your own pumpkin to create a puree for pies is quick, simple and adds nutrients that the processed counter part is missing.
  • Add a taste of place. Visit your farmers market to find an heirloom squash or pumpkin grown locally. Most squash varieties are interchangeable in recipes, so try swapping out the standby that your recipe calls for with something more unique to your area.
  • Take the time. Freshly-dried heirloom beans are flavorful, cook up much plumper, and give you access to a much wider array of tastes and colors. Although slightly more labor-intensive, they're also far cheaper than buying canned beans or imported fresh beans.
  • Fresh, local, seasonal. Cooking with as many fresh, local ingredients as you can is healthier for your body and the environment. But what to do in winter when fields are frozen over? Look for recipes that call for long-storing ingredients like root vegetables and squash to carry you through lean months.
This Saturday as you stroll through the market, make a mental note of what kind of vegetables are available now and ask your farmers if they expect them to stick around for the next 2 weeks.  This will give you a rough estimate of the ingredients you'll be able to find at market the following Saturday when you're shopping for the big day.

This month you'll find seasonal recipes that are perfect for any dinner but would go especially well with your Thanksgiving spread.

Herbed Mashed Potatoes: Serves about 8

Prepare mashed potatoes, omitting herbs, up to 1 day ahead; refrigerate. Reheat in a bowl set over a pot of simmering water; stir in herbs.

  • 4 pounds Yukon gold potatoes, peeled and cut into 1-inch pieces
  • Coarse salt
  • 1 3/4 cups half-and-half
  • 4 tablespoons (1/2 stick) butter
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • 2 tablespoons chopped fresh chives, plus more for garnish  
  • Place potatoes in a large pot; cover with cold water by 1 inch, and add 1 teaspoon salt. Bring to a boil; reduce heat to medium-low, and simmer until potatoes are tender, 15 to 18 minutes. Drain; return potatoes to pot.
  • Stir potatoes over medium heat until dry (a film of starch will form on bottom of pot), about 1 minute. Remove from heat.
  • In a small saucepan, combine half-and-half and butter; bring to a simmer over medium heat. Pour half of hot liquid over potatoes. Mash just until smooth, adding more liquid to reach desired consistency. Stir in parsley and chives; season with salt. Garnish with more herbs.

Bread Stuffing with Sage

Serves 8

  • 2 loaves sliced white sandwich bread (1 pound each), torn into bite-size pieces
  • 1/4 cup (1/2 stick) butter, plus more for baking dish and foil
  • 4 celery stalks, diced medium
  • 1 large onion, diced medium
  • Coarse salt and ground pepper
  • 2 teaspoons dried rubbed sage
  • 1 teaspoon celery seed
  • 3 eggs
  • 3 1/2 cups (29 ounces) low-sodium chicken broth 

  • Preheat oven to 350 degrees. On two rimmed baking sheets, arrange bread in a single layer. Bake until dry but not browned, about 14 minutes, tossing bread and rotating sheets halfway through. Transfer to a large bowl. (To store, let cool completely and keep in a resealable plastic bag at room temperature, up to 1 week.)
  • In a large skillet, melt butter over medium. Add celery and onion; season with salt and pepper. Cook, stirring occasionally, until vegetables soften, about 8 minutes. Add sage and celery seed and cook 3 minutes more. Transfer to bowl with bread. In a separate bowl, whisk together eggs and broth. Add to bread mixture and toss to combine.
  • Reserve 4 cups stuffing for turkey. Spoon remaining stuffing into a buttered 9-by-13-inch baking dish. Cover with buttered foil; refrigerate until ready to bake. Bake at 350 degrees until warmed through, about 25 minutes.

QUARLES DAYLILLIES AND FARM

Winter is approaching and though the summer has passed there's still plenty to keep us busy.  We've weaned the spring calves and we're busy trying to get the daylily field ready for the winter.  We still need to trim the blackberries and get a few potted plants in the ground that have been sitting patiently since the middle of the summer.  We're canning green tomato relish and processing pumpkins for all our breads.  We still have lots of beef and breads at the Saturday market as well as winter squashes, kale, mustard greens, collards, turnips and turnip greens.  We've got some nice potatoes to go with a chuck roast for some real comfort food.  We'll have hot coffee and hot chocolate for sale if you need a little "warming up" while shopping!

At the Saturday morning downtown market (year-round), we will have a
selection of Certified Organic produce, organic chicken, organic beef,
organic farm eggs, jarred products, dried pantry staples, and much more!

TALKIN' TURKEY?  At the farm, our Heritage breed and broad-breasted breed
Certified Organic turkeys are sizing up nicely.  Elmwood is one of just a
few farms in the US that grow heritage breed turkeys that are also
Certified Organic, making these holiday turkeys a very special item.

We keep the breeding stock hens and toms here year-round.  The American
Livestock Breeds Conservancy recognizes some of our breeds as in danger of
extinction.  In order for farms to afford the costs and upkeep of keeping
heritage breed animals without a supporting source of income to offset the
expenses, Slow Food USA is helping to spread the word and promote heritage
breed products as a food source.  By creating demand for heritage foods,
then farms can work to produce and maintain heritage breeds such as
Bourbon Red and Narragansett turkeys.

We take pre-orders for Elmwood turkeys either in person at the market or
though email.  They are processed at a USDA inspected facility and will be
ready for pickup the weekend prior to Thanksgiving or for December
holidays.  Just contact the farm and we'll share more details with you on
expected available sizes, the differences in taste and appearance
dependent on heritage or broad-breasted breeds, and pricing.

Certified Organic PRODUCE we are harvesting includes seasonal fall items
such as Potatoes, Onions, Garlic, Beets, Savoy Cabbage, Swiss Chard,
Celery, Leeks, Daikon and other Radishes, Kale, Collard and Mustard
Greens, and Fall Squashes of Acorn, Sweet Dumpling, Butternut, Stripetti,
Buttercup, and Spaghetti.

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus
organic beef, along with a full selection of certified organic hens and

Though we haven't made it to the Lexington Farmers' Market as much as we would have liked this season, you can still celebrate Thanksgiving and Christmas with one of our turkeys!  The turkey price is $3.90 / lb. for turkeys under 18 pounds and $3.75 /

lb. for turkeys over 18 pounds.  Most of the birds will be around 20

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Rhapsody En Bleu, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Rhapsody, Tuscan Sun, Abbey Road, Wildcat Blue, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

LA PETITE CREPERIE

La Petite Cr�perie brings a little taste of France to the Bluegrass.

 

The idea for opening a walk-up cr�perie was hatched many years ago when I was a student in France.   After discovering cr�pes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up cr�pe windows are like hot dog stands in New York; they are everywhere.

 

My husband Mark and I took many more trips to France and ate countless more cr�pes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of cr�pes to our friends, family and my French students, we think we've hit on a good combination. 

 

La Petite Cr�perie hopes to recreate the experience of ordering a French cr�pe � emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet cr�pe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar cr�pes are made with homemade butter from the market.   We also make a hearty breakfast cr�pe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

KID'S ACTIVITIES AT THE LFM...

 

LFM kids' activities will return next year!  Thank you to all of the local organizations who helped get kids excited about local, healthy food. 

 

 

GLEANING with Faith Feeds...

 

So far this year, Faith Feeds collected approximately 10,800 pounds of fresh food from our LFM members.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  So far this year Faith Feeds has collected and delivered more than 49,800 pounds of food!

 

Over forty volunteers give of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.  Look for Faith Feeds at any of our given markets as they are hard at work harvesting for the hungry this summer!

Rona Roberts of Savoring Kentucky, a long-time LFM shopper, frequently features many of our vendors on her blog.  She's recently written about Reed Valley Orchard, many of our vendors who were featured at this year's Incredible Food Show, and many other local food happenings. 

 

Ed Puterbaugh of Boone Creek Creamery was recently featured in the Lexington Herald Leader.  To learn more about his artisan cheeses you can read the article here or visit him at our Saturday and Sunday markets. 

 

Cleary Hill Farm was featured in an article in The Anderson Times for their talents in growing assorted hot peppers, in particular Ghost and Trinidad Scorpians, some of the hottest peppers in the world.  Another of our loyal members, Rikki Jamalia of Sadistic Mistress Sauces is mentioned in the article, as she makes her own tasty, hot sauces using Cleary Hill Farm's peppers.  For more information on Cleary Hill Farm's hot peppers, you can read the article here

PARKING is always FREE at all of our markets if you know where to look!  

 

On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

A friendly reminder: When shopping at our Tuesday and Thursday markets on South Broadway and Maxwell, please remember to park first and then come check out what our wonderful vendors have brought with them. The market is not a drive-thru and in order to ensure every ones safety we need to keep the aisles free of cars!
