This morning Jeff Dabbelt, our market's Executive Director, and I had the pleasure of visiting one of our farmers out in Madison County.  As about 200 head of cattle and 300 broad breasted bronze turkeys happily greeted us we were given the grand tour of the family farm and told about this season's successes and struggles.  Though many of us have been back in our t-shirts and shorts for these past few warm days, these farmers have not forgotten last weekend's freezing temperatures that triggered many of their crops to bolt.  Those two cold days meant "bundle up" to many of us but to the farmers who grow our food--it may have seriously affected their livelihood. This is certainly not to say that the Lexington Farmers' Market will be short of wonderful produce, as our farmers always seem to pull through and bring truckloads of delicious food to market no matter how the weather has been behaving. Visiting this farm today left me with a renewed sense of inspiration and admiration for the people who are growing my food.  It takes talent, persistence, A LOT of hard work and a lot of knowledge to prevent against pests and early frost and let alone do that in a sustainable way.  Looking around and seeing how large of an operation this family manages gives so much more meaning to the term "full time job".  Farming truly doesn't stop for anything.

 

We have lots of exciting plans for October.  For one, October is National Apple Month! Whether bobbing for apples, biting into a juicy caramel apple or baking a comforting apple pie, celebrate all things apple this month by supporting of Kentucky's many apple orchards.  To find an orchard near you, visit Kentucky Proud and experience the unbridled spirit of Kentucky's farms.

On Sunday you can find us on Southland Drive for our market and downtown from 2-6 pm as a part of 2nd Sunday, Kentucky's state-wide campaign aimed towards improving our state's health status.  Lexington residents can walk, bike, run, play and participate in fun and healthy activities while we team together with our community to fight sedentary habits.

This mouth-watering recipe comes to us by way of Sarah Buzogany, Lexington Farmers' Markets' previous Assistant Market Manager and my predecessor, who is now off at graduate school in Boston.  Some of you may remember it from last year when she posted it in our newsletter but I found it too good not to post again! Enjoy!
 

Pumpkin Stuffed with Everything Good

Ingredients:
  • 1 pumpkin, about 3 pounds
  • Salt and freshly ground pepper
  • 1/4 pound stale bread, thinly sliced and cut into 1/2-inch chunks
  • 1/4 pound cheese, such as Gruy�re, Emmenthal, cheddar, or a combination, cut into 1/2-inch chunks
  • 2-4 garlic cloves, split, germ removed, and coarsely chopped
  • 4 slices bacon, cooked until crisp, drained, and chopped
  • About 1/4 cup sliced scallions  
  • 1 tablespoon minced fresh thyme  
  • About 1/3 cup heavy cream
  • Pinch of freshly grated nutmeg
 Directions:
  • Center a rack in the oven and preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment, or find a Dutch oven with a diameter that's just a tiny bit larger than your pumpkin. If you bake the pumpkin in a casserole, it will keep its shape, but it might stick to the casserole, so you'll have to serve it from the pot-which is an appealingly homey way to serve it. If you bake it on a baking sheet, you can present it freestanding, but maneuvering a heavy stuffed pumpkin with a softened shell isn't so easy. However, since I love the way the unencumbered pumpkin looks in the center of the table, I've always taken my chances with the baked-on-a-sheet method, and so far, I've been lucky.
  • Using a very sturdy knife-and caution-cut a cap out of the top of the pumpkin (think Halloween Jack-o-Lantern). It's easiest to work your knife around the top of the pumpkin at a 45-degree angle. You want to cut off enough of the top to make it easy for you to work inside the pumpkin. Clear away the seeds and strings from the cap and from inside the pumpkin. Season the inside of the pumpkin generously with salt and pepper, and put it on the baking sheet or in the pot.
  • Toss the bread, cheese, garlic, bacon, and herbs together in a bowl. Season with pepper-you probably have enough salt from the bacon and cheese, but taste to be sure-and pack the mix into the pumpkin. The pumpkin should be well filled-you might have a little too much filling, or you might need to add to it. Stir the cream with the nutmeg and some salt and pepper and pour it into the pumpkin. Again, you might have too much or too little-you don't want the ingredients to swim in cream, but you do want them nicely moistened.  
  • Put the cap in place and bake the pumpkin for about 2 hours-check after 90 minutes-or until everything inside the pumpkin is bubbling and the flesh of the pumpkin is tender enough to be pierced easily with the tip of a knife. Because the pumpkin will have exuded liquid, I like to remove the cap during the last 20 minutes or so, so that the liquid can bake away and the top of the stuffing can brown a little.
  • When the pumpkin is ready, carefully, very carefully-it's heavy, hot, and wobbly-bring it to the table or transfer it to a platter that you'll bring to the table.

 

Tips from the Chef: 

  • Serving: You have a choice-you can either spoon out portions of the filling, making sure to get a generous amount of pumpkin into the spoonful, or you can dig into the pumpkin with a big spoon, pull the pumpkin meat into the filling, and then mix everything up. I'm a fan of the pull-and-mix option. Served in hearty portions followed by a salad, the pumpkin is a perfect cold-weather main course; served in generous spoonfuls, it's just right alongside the Thanksgiving turkey.
  • Storing: It's really best to eat this as soon as it's ready. However, if you've got leftovers, you can scoop them out of the pumpkin, mix them up, cover, and chill them; reheat them the next day.
  • Bonne Id�e: There are many ways to vary this arts-and-crafts project. Instead of bread, I've filled the pumpkin with cooked rice-when it's baked, it's almost risotto-like. And, with either bread or rice, on different occasions I've added cooked spinach, kale, chard, or peas. Nuts are a great addition, as are chunks of apple or pear or pieces of chestnut.

GLEANING with Faith Feeds...

 

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  So far this summer Faith Feeds has collected and delivered more than 16,250 pounds of food!

 

Over forty volunteers give of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.  Look for Faith Feeds at any of our given markets as they are hard at work harvesting for the hungry this summer!

PARKING is always FREE at all of our markets if you know where to look!  

 

On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

THIRD ANNUAL INCREDIBLE FOOD SHOW

  

The third annual Kentucky Proud Incredible Food Show will return to Rupp Arena and Lexington Center on Saturday, October 8, 2011. The Incredible Food Show is the event of the year for Kentuckians who love food, cooking and entertaining.

  

This food lover's dream event is packed with more than 100 exhibitors sampling and selling products including Kentucky Proud producers and growers, specialty food companies, local restaurants and wineries.

  

The 2011 event will feature the dynamic brother chefs Michael and Bryan Voltaggio, the acclaimed Season 6 Champion and Runner Up, respectively, of Bravo TVs Emmy Award-wining show TOP CHEF (Season 6 - Las Vegas). The brothers will take the stage in Rupp Arena for two presentations at 11:00 a.m. and 3:00 p.m.  Tickets are on sale now at the Lexington Center Ticket Office and all Ticketmaster outlets. SECOND SUNDAY 


2nd Sunday is a statewide event that encourages all forms of physical activity in the comforts of local community, and is designed to get Kentuckians on their feet and moving.

Communities across Kentucky are planning to simultaneously close a roadway or plan an event from 2-6 p.m. on the second Sunday of October (October 9, 2011) so that residents can bike, walk, run, play and participate in fun and healthy activities. 2nd Sunday is a statewide campaign that will serve as a catalyst for improving Kentucky's health status and can become a template for nationwide awareness. The idea originated in Bogota, Columbia where officials close more than 70 miles of roads to vehicles, opening them to local residents for exercise every Sunday. Several communities have presented similar events, but Kentucky is the first state. 


Experiencing a fun-filled day of activities in existing roadways can be the catalyst for local communities to actively pursue convenient and safe places for physical activity the other 364 days of the year. 2nd Sunday can serve as the first step in improving the physical, environmental and economic health of all Kentuckians.

SINCE THIS WEEKEND IS GOING TO BE BEAUTIFUL . . .

 

SOAP SALE - If you purchase 5 bars or more of soap this weekend only at the Lexington Farmers' Market at both Downtown and Southland locations, the cost will be only four dollars per bar.  That is a great deal if you need soap for holiday gifts, stocking stuffers or store up for winter.  This weekend only!!!!   Put bars in dry, dark locations and they will store just fine.  This will be the only sale this year on soaps.

 

ATTENDANCE - I plan to be at the LFM as long as the weather holds out.  I can't tell you definitely my last day.  It depends on the weather but I will try to tough it out until Thanksgiving weekend.  After that or if the weather gets cold early, orders will have to be placed on line at www.abigailkeam.com.

 

HONEY - This week I am going to make one last sweep of the hives as I get them ready for winter.  Hopefully I will find some Aster Honey as the asters in the pastures are in full bloom.  Keep your fingers crossed.  I do have some WILDFLOWER HONEY left.

 

HAND BALMS - If you are storing up on soaps, you probably should go ahead and get your hand balms for the winter too.  LAVENDER, HONEYSUCKLE AND HONEY NATURE (FRAGRANCE FREE) made with all natural ingredients - olive, coconut, canola, and tea tree oils, honey, beeswax and Vitamin E plus essential oils or fragrance.  Nothing you can't pronounce or don't know what it is.  Put just a little on, spread (goes on a little oily) and let soak in.  Will keep your hands wonderfully soft in this bad winter that I think is going to come.

We've gotten our first taste of fall weather with the little dusting of frost that most of us in outlaying areas saw on Sunday morning so we've decided that fall is here.   In order to help our customers stay warm and fortified, we're offering hot chocolate and bowls of steaming chili for sale made with Quarles beef as a way to keep warm while doing your weekly shopping at the market.  If you have your own favorite chili recipe, we have a good supply of ground beef, ground round and ground chuck to help you turn out your creation to rave reviews.  Some of our round steak as well as our kabob and fajita meat make excellent stews and vegetable soups.  Give it a try and you'll see!

Four more weeks for Blue Moon at the market!!

GREAT NEWS!!!  The frost did not get us last weekend!  Hurray for the heat sink of the river, and the fog's insulation!  We were most worried about our BASILs, as they are very cold sensitive, but they came through just fine, so we'll have bunches and pounds of that delicious smelling herb wafting from our booth again this week!  (Genovese, Lime, red Ararat and Thai)  We'll have the beautiful FLAT LEAF ITALIAN PARSLEY too.

Here's some more good news....Colcord Farm, who produces the wonderful GRASS FINISHED BEEF we sell, has offered us the opportunity to give you 30% off on any STEAKS!!  We've never been able to do this before!  So any A.S.H-free SIRLOIN, NY STRIP, RIBEYE or FILET is 30% off!!  If you want to be sure to get what you want, please drop us an email [email protected] before Friday, and we'll be happy to hold it for you.

We've been busy this week making GARLIC BRAIDS, as our stock was pretty much wiped out last weekend!  The celosia flowers we use on them also made it through the frost, and are booming right now.  They really make the braids look beautiful......and hold their color for a long time after they dry.

We'll be bringing in a new supply of GROUND KY LAMB, and LAMB STEW MEAT this week.  Lamb burgers are a nice change from beef, and the stew meat can also be used for shish kabob!

We'll be sampling KENNY's ASIAGO CHEESE this week, and will have all your other favorites too.  Of course we'll be sampling our own GARLIC SCAPE PESTO......it's easy to keep in your freezer to use all winter!  There's only one CHAMPAGNE DRESSING left for the year....first come-first served!

We'll have our EGGPLANTS (Japanese and Italian), BELL PEPPERS, SWEET BANANA PEPPERS, and just a few bags of our BABY SQUASH MEDLEY this week too.  LOTS of GARLIC, of course!!  BULBS, BAGS, BRAIDS....time to stock up for winter!  Sullivan University has bought 10 LBs of our MUSIC GARLIC, so look for it all over the Incredible Food Show this weekend!!

Last weekend the GREENS, NAPA CABBAGE and FRENCH BREAKFAST RADISHES from Nicholas County went over so well that we're going to do it again!  There will be an assortment of BABY FALL GREENS, including LETTUCE MIX, ARUGULA, MIZUNA, RADISHES and possibly some more NAPA CABBAGE.  It's so nice to have greens again!!

We dodged the frost last weekend and are happy to say that our late crop of HOMEGROWN TOMATOES are loving this week of Indian Summer.   Come down and see us this weekend, it looks like it will be the best weather we have had for quite some time.  We will have our usual offerings plus lots of homemade salsa as well as Velvet's yummy chicken salad for sale. 

Look for us and our big box truck at the corner of Short and Upper on Saturday and at Southland Drive on Sunday.   All of our offerings are sustainably grown, Kentucky Proud, 100% homegrown, and pesticide free.  We are delighted to inform you that we do not sell anything that we do not grow.  We will have the following:

Though we haven't made it to the Lexington Farmers' Market as much as we would have liked this season, you can still celebrate Thanksgiving and Christmas with one of our turkeys!  The turkey price is $3.90 / lb. for turkeys under 18 pounds and $3.75 /

lb. for turkeys over 18 pounds.  Most of the birds will be around 20

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Rhapsody En Bleu, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Rhapsody, Tuscan Sun, Abbey Road, Wildcat Blue, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

We will be attending each weekend farmers market this fall and hope to see

At both the Saturday morning downtown market (through November) and the

Sunday markets on Southland Drive, we will have a selection of Certified

Organic produce, organic chicken, organic beef, organic farm eggs, jarred

products, dried pantry staples, and much more!

 

TALKIN' TURKEY?  At the farm, our Heritage breed and broad-breasted breed

Certified Organic turkeys are sizing up nicely.  Elmwood is one of just a

few farms in the US that grow heritage breed turkeys that are also

Certified Organic, making these holiday turkeys a very special item.

 

We keep the breeding stock hens and toms here year-round.  The American

Livestock Breeds Conservancy recognizes some of our breeds as in danger of

extinction.  In order for farms to afford the costs and upkeep of keeping

heritage breed animals without a supporting source of income to offset the

expenses, Slow Food USA is helping to spread the word and promote heritage

breed products as a food source.  By creating demand for heritage foods,

then farms can work to produce and maintain heritage breeds such as

Bourbon Red and Narragansett turkeys.

 

We take pre-orders for Elmwood turkeys either in person at the market or

though email.  They are processed at a USDA inspected facility and will be

ready for pickup the weekend prior to Thanksgiving or for December

holidays.  Just contact the farm and we'll share more details with you on

expected available sizes, the differences in taste and appearance

dependent on heritage or broad-breasted breeds, and pricing.

 

Certified Organic PRODUCE we are harvesting this month includes the last

of summer Tomatoes, Peppers, Eggplant, Raspberries, and Okra.  Seasonal

fall items include Potatoes, Onions, Garlic, Beets, Savoy Cabbage, Swiss

Chard, Celery, Leeks, Daikon and other Radishes, Kale, Collard and Mustard

Greens, and Fall Squashes of Acorn, Carnival, Butternut, Stripetti,

Buttercup, and Spaghetti.

 

MEATS and POULTRY  We have restocked our inventory of grass-fed Angus

organic beef, along with a full selection of certified organic hens and

cut-up chicken pieces.  In addition, we have chicken liver and ground

chicken.  Feel free to order ahead for quantity amounts or a particular

cut for that special meal, and we'll have it ready for pickup at any of

EGGS We offer each market our certified organic eggs from free-ranging

hens who live outdoors on grass pasture.  Both whole dozen and half-dozens

available. Our hens are always outside, enjoying the green growing grass &

flavor, orangey color, and healthful omega-3-fatty acids.

 Mother Nature threw us a curve ball and most of our does have dried off early - with just enough milk  left to make lots of silky goat milk and olive oil soaps for the winter.  However, Ms. Mother Nature must have had a guilty conscience  because she gave us a bonus of a few does who obviously got bred out of season, and are due to kid any day now.  So we hope to be up and running with cheese (and lots and lots of soap!) sometime in October and right on through the winter.  This unplanned break has given us time to get our cheese plant painted and a new coat of polyurethane on the floors, plus getting all these goat feet trimmed and our "baby room" ready.  It will soon be time to start all over again.

The Lexington Farmer's Market is in full operation. On Saturday October 8th we will be downtown at Cheapside Park and on Sunday October 9th we will be on Southland Drive.  We will be at both markets unless it rains, so come on out and replenish your local honey and pollen supplies.

La Petite Cr�perie brings a little taste of France to the Bluegrass.

 

The idea for opening a walk-up cr�perie was hatched many years ago when I was a student in France.   After discovering cr�pes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up cr�pe windows are like hot dog stands in New York; they are everywhere.

 

My husband Mark and I took many more trips to France and ate countless more cr�pes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of cr�pes to our friends, family and my French students, we think we've hit on a good combination. 

 

La Petite Cr�perie hopes to recreate the experience of ordering a French cr�pe � emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet cr�pe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar cr�pes are made with homemade butter from the market.   We also make a hearty breakfast cr�pe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.
