October in Kentucky is one of my favorite times of year.  Summer's heat and humidity has come and gone and left us with gorgeous, sunny days that are perfect for riding a bicycle down to the market.  The fall crops are now really starting to come in and I can already smell nutmeg, cinnamon and pumpkin through my neighbors' kitchen windows.  There is no better place to purchase all of your fall ingredients than the Lexington Farmers' Market--whether you're baking pumpkin pie or preparing the butternut squash dish listed below! 

If you're already beginning to plan your Thanksgiving meals why not challenge yourself to prepare an all local dinner?  After all, Kentucky's wonderful growing conditions are something we should all be thankful for!  You can even go ahead and reserve your turkey at the market!!

Butternut Squash Ravioli with Sage Brown Butter Sauce


Butternut Squash Filling

  • 2 butternut squashes, cut in half lengthwise
  • 1/4 tsp. nutmeg
  • 6 dashes cinnamon
  • pinch of brown sugar
  • salt
  • olive oil

Pasta Dough

  • 4 eggs
  • 3½ cups flour
  • 1 tsp salt
  • 1 tablespoon olive oil
  • 2 tablespoons water

Butter Sage Sauce  

  • 3 tablespoons butter
  • 8 sage leaves, thinly sliced    


Preheat the oven to 375 degrees.  Sprinkle the cut butter squashes with olive oil.  Set in a roasting pan and place in the oven.  Cook for 45 minutes or so, flipping halfway through.  If they are still hard after 45 minutes give them some more time.  You want them to be very tender.   

  

Scoop out the flesh of the butternut squashes.  Put the flesh in a bowl and then add the nutmeg, cinnamon, brown sugar, and salt.  Mix well and add more brown sugar if necessary.  Let it cool down before using.   

  

While the squashes are roasting make the pasta dough.  Let the ball rest for 30 minutes.    

  

Cut the ball into fourths and remove one of the pieces.  Rewrap the other pieces so they don't dry out. 

  

Roll the ball out using a pasta maker until it has gone through the thinnest setting.  The sheet of pasta should be about 5 inches wide and a little over two feet.  Measure out and cut one 12 inch by 5 inch sheet.  Keep the other half for the top layer.   

  

On the 12 inch by 5 inch sheet, place a teaspoon of the filling at least 1/2 inch from the edge and 1 inch from each other. 

Cover with the other sheet.  It should be slightly longer, so there should be overlap.  Carefully form the filling, removing any big air pockets.    

Using a wine glass, or any other glass with a dimension of 2 1/2 inches, cut out the raviolis.

 

Use your fingers to delicately seal the edges.  You don't want too much of an edge, so be careful.    

  

Repeat this process with the other 3 portions of pasta dough.   

Melt the butter in a large skillet over medium heat.  When melted, add the sage.  Cook for a few minutes until sage is slightly crispy.  Be sure not to burn the sage.  If it is done cooking, then turn the heat to low.

 

Cook the ravioli for 3 to 4 minutes.  Check one at 3 minutes to see if you like the texture.  If it's ready take them all out.  If it's not quite done give them an extra minute.
 
 
Move them directly to the skillet with the butter sage sauce.  Turn the heat to medium-high, and toss the ravioli with the sauce until coated. Add some pasta water if the skillet looks too dry.
 
 
Remove, season with salt and pepper and a little Parmesan.  Serve.

The Carnegie Center for Literacy and Learning and the Morris Bookshop are cosponsoring the Homegrown Authors Series this summer at the Lexington Farmers' Market. On select Saturdays you can meet a local author and buy a signed copy of his or her book at market. The series will return next summer with a vibrant new crop of Kentucky authors!

GLEANING with Faith Feeds...

 

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  So far this summer Faith Feeds has collected and delivered more than 16,250 pounds of food!

 

Over forty volunteers give of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.  Look for Faith Feeds at any of our given markets as they are hard at work harvesting for the hungry this summer!

PARKING is always FREE at all of our markets if you know where to look!  

 

On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

A friendly reminder: When shopping at our Tuesday and Thursday markets on South Broadway and Maxwell, please remember to park first and then come check out what our wonderful vendors have brought with them. The market is not a drive-thru and in order to ensure every ones safety we need to keep the aisles free of cars!

CHEAPSIDE FITNESS SERIES

 

Throughout the month of September you can shape up while enjoying the outdoors at Cheapside Park!  Three classes dealing with fitness will be offered on Tuesdays, Wednesdays, and Thursdays in September at the Fifth-Third Pavilion at Cheapside Park.

  

The 2011 Cheapside Fitness Series will be held September 6-29 and is free to the public.  It is sponsored by bodyFITworldwide.com and the Lexington-Fayette Urban County Government's Division of Parks and Recreation.

  

The regimen will follow this schedule beginning September 6:

  • On Tuesdays, there will be a core class at 6:30 a.m. taught by Jonathan Messick of bodyFITworldwide.com.  The class includes a pre-work workout to invigorate the body by getting the blood flowing and working your midsections.  Bring your own exercise mat/towel and water.
  • On Wednesdays, there will be fitness-related lectures at noon on nutrition and wellness of the mind and body.  You can bring your own lawn chairs.   .  
  • On Thursdays, yoga in the park will be held from noon to 1:30 p.m.  Participants can come and go as needed.  Bring your own mat and water.

THIRD ANNUAL INCREDIBLE FOOD SHOW

  

The third annual Kentucky Proud Incredible Food Show will return to Rupp Arena and Lexington Center on Saturday, October 8, 2011. The Incredible Food Show is the event of the year for Kentuckians who love food, cooking and entertaining.

  

This food lover's dream event is packed with more than 100 exhibitors sampling and selling products including Kentucky Proud producers and growers, specialty food companies, local restaurants and wineries.

  

The 2011 event will feature the dynamic brother chefs Michael and Bryan Voltaggio, the acclaimed Season 6 Champion and Runner Up, respectively, of Bravo TVs Emmy Award-wining show TOP CHEF (Season 6 - Las Vegas). The brothers will take the stage in Rupp Arena for two presentations at 11:00 a.m. and 3:00 p.m.  Tickets are on sale now at the Lexington Center Ticket Office and all Ticketmaster outlets. Lots of folks are starting to squirrel away garlic for the winter.  We'll have lots of bulbs, bags and braids this weekend.  Remember this great way to have good garlic all winter......peel and chop the cloves into a freezer container, cover with olive oil and store in the freezer.  When you get ready to cook just put a spoonful or two of the garlic oil mix into your pan and you're ready to go!

 Mother Nature threw us a curve ball and most of our does have dried off early - with just enough milk  left to make lots of silky goat milk and olive oil soaps for the winter.  However, Ms. Mother Nature must have had a guilty conscience  because she gave us a bonus of a few does who obviously got bred out of season, and are due to kid any day now.  So we hope to be up and running with cheese (and lots and lots of soap!) sometime in October and right on through the winter.  This unplanned break has given us time to get our cheese plant painted and a new coat of polyurethane on the floors, plus getting all these goat feet trimmed and our "baby room" ready.  It will soon be time to start all over again.

Henkle's Herbs and Heirlooms

If knowing the origin of what you consume is important to you, as it should be, then we are the folks to shop with.  EVERYTHING we offer is started from seed and grown by us just  15 miles away at our farm in Nicholasville.  We opt to use biological controls and to release beneficial insects like lacewings and lady beetles (We recently released 70,000 of them) instead of spraying with pesticides that kill honey bees and other beneficial predators to create a pest management system that is friendly to the food we bring to market as well as the environment.  

Look for us and our big box truck at the corner of Short and Upper on Saturday and at Southland Drive on Sunday.   All of our offerings are sustainably grown, Kentucky Proud, 100% homegrown, and pesticide free.  We are delighted to inform you that we do not sell anything that we do not grow.  We will have the following:

The Lexington Farmer's Market is in full operation. On Saturday October 1st we will be downtown at Cheapside Park and on Sunday October 2nd we will be on Southland Drive.  We will be at both markets unless it rains, so come on out and replenish your local honey and pollen supplies.

You may also purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 8592670258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

Out home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

Quarles Farm will have freezers stocked with grilling favorites.  Ribeyes, t-bones,  New York strips, brats.  I can almost smell them sizzling on the grill as I write this!  We're also running the oven at full strength making breads and cakes for your get togethers so you don't have to worry about something quick for breakfast or something to finish off that great picnic supper.  We'll have plenty of salsa and other value added products as well as a good selection of produce for your perusal.

La Petite Crêperie brings a little taste of France to the Bluegrass.

 

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

 

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination. 

 

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

 

La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon appétit!

This week we will have a limited supply of fresh Mozzarella. It sold out by 9:30 last week, so stop by early. On Labor Day weekend, you can hand stretch your own Mozzarella at the Market, so come join in the fun.

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Rhapsody En Bleu, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Rhapsody, Tuscan Sun, Abbey Road, Wildcat Blue, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.
