The other day I saw a commercial on television that stressed that you can feed a family of four for $15 at KFC.  While I do not want to discredit a business based out of Kentucky, I was determined to show consumers that this is also possible with fresh, local and even organic food from traceable sources rather than fried chicken from who-knows-where and packaged mashed potatoes infused with high-fructose corn syrup.  With this in mind, I strolled around yesterday's market looking for fresh, local meal ideas that could easily feed a family of four.  I wasn't surprised to find that eating local, and even organic, on a budget is quite possible at the Lexington Farmers' Market!  Additionally, there are many more possibilities to be creative with what you eat, plan nutritious meals for your family and still save money. 

Purchase a large eggplant, a couple of vine-ripened heirloom tomatoes, a handful of fresh basil and some farm fresh cheese and you've got a healthy, homemade version of Eggplant Parmesan for under $15.  Or pick up a couple of large red bell peppers that were picked that morning, a few heirloom tomatoes, some organic black beans and some feta cheese to make Stuffed Bell Peppers for your family for under $15.  Even more, the Lexington Farmers' Market has fresh pasta that goes great with all of the different vegetables our farmers have to offer that can certainly feed your family for under $15.  Additionally, you can purchase an antibiotic-free, hormone-free, free-range organic hen and stretch a 2-4 lb bird into three separate meals. 

As you can see, fresh local food is not only for the elite.  It's quite possible to shop local without breaking the bank.  While we can't promise Wal-Mart's corporate prices, we can promise you quality products from sources you know at reasonable and affordable prices.  We can also promise that you can see where you money goes and what it benefits: your local farmers and continued food security for the great state of Kentucky.

Aside from a couple of ingredients that you'll need to pick up at the store, you can find almost all of the ingredients for this simple side or main dish at the LFM for under $15! 

 

Charred Corn Tacos with Zucchini-Radish Slaw

  • 1/2 pound red radishes, trimmed
  • 1 small zucchini, long and narrow if you can find it
  • 2 limes
  • Salt
  • 4 ears corn, husks removed
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil, plus additional if blistering tacos in skillet
  • 1 medium white onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons chopped cilantro or pasley
  • 1/2 cup crumbled cotija cheese (or another salty, crumbly cheese such as ricotta salata or feta)
  • 1/4 teaspoon chili powder
  • 10 to 12 small (6-inch) soft corn tortillas

  • Cut radishes and zucchini into tiny matchsticks with a mandoline. If you don't have a mandoline, you can use a peeler to peel thick ribbons down the long side of the zucchini. Stack the ribbons and cut them crosswise into thin matchsticks. Cut the radishes into a similar shape by hand. Toss radishes and zucchini together. Squeeze the juice of half a lime over the radish and season with salt to taste. Add more lime juice if desired. Set aside.
  • Over a hot grill or an open gas-stove flame char two of the ears of corn until well-blackened but not completely burnt. If you're using the burner method, you'll probably, quickly, notice that corn likes to pop and snap.
  • Remove cobs from heat, and when cool enough to handle, shave off kernels using a large knife and reserve. Remove kernels from remaining two ears of corn.
  • Heat a large sauté pan over medium heat. Melt the butter and oil together and once hot, add the onion. Cook the onion for about 5 minutes, until softened. Add the garlic and cook another minute. Add the raw corn kernels and sauté until corn is just cooked through, about three to five minutes. Turn heat to high, add the charred kernels of corn to the mixture, and toss to combine until heated through. Squeeze the juice of one lime over the corn mixture, and use the juice to scrape up any stuck bits. Season the corn mixture with salt and chili powder. Stir in chopped herbs.  
  • Heat your tortillas. Wrap the whole stack in foil and place it in a warm (250 degrees) oven for 15 minutes while you prepare the other ingredients.
  • Fill each taco with a few small spoonfuls of the corn mixture. Top with a spoonful of crumbled cheese and a bit of the radish-zucchini slaw. Serve with an extra lime wedge on the side, and whatever fixings you like (sour cream, avocado wedges, etc).

GLEANING with Faith Feeds...

 

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  So far this summer Faith Feeds has collected and delivered 16,250 pounds of food!

 

Over forty volunteers give of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.  Look for Faith Feeds at any of our given markets as they are hard at work harvesting for the hungry this summer!

PARKING is always FREE at all of our markets if you know where to look!  

 

On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

LA PETITE CREPERIE

La Petite Crêperie brings a little taste of France to the Bluegrass.

 

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

 

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination. 

 

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

 

La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon appétit!

ABIGAIL'S HONEY  

Fayette County    

 

HONEY - The darker honey is here. Rich and robust tasting. Great for allergies or on your oatmeal. You will just love it. General rule - the darker the honey, the more anti-oxidants it contains.

 

How I use honey - put a couple of chicken breasts in aluminum foil.  Pour about 4 table spoons of honey on the chicken along with a table spoon of water.  Now dab with a little bit of cinnamon and pour some chopped pecans on top of the chicken.  Place on grill but away from fire and on low heat.  You must watch it closely or the honey might burn.  What you want is a juice created by the chicken's moisture, the honey and the water.  After the chicken is cooked, use the juice as a sauce.  Serve with rice or mashed "taters" with a medley of cooked summer tomatoes, squash and zucchini.

SOAP - This is great soap making weather. Even though it is summer, it is time to make the holiday soaps like PUMPKIN SPICE AND CHOCOLATE AMBER.  For those who love the smell of patchouli, I have NOIRE, my sexy black soap.  Still have wonderful shower soaps like AQUA, plus plenty of HYACINTH, APPLE CINNAMON, SUPERMOIST and MINT JULEP and much more this coming weekend.  My soaps are made from scratch the old fashioned way with moisturizing oils.  Great for your skin.  I do not use animal by-products in these soaps except for honey.  The bees don't mind. 

 

Why are handmade soaps better for you than soaps in the store?  I use rich ingredients such as real olive oil and Vitamin E.  All the glycerin made during the soap process is still in the soap - not like in commercial soaps where salt is put in to extract the glycerin.  I make real soap from scratch - not from a kit. 

 

And yes - my soaps are expensive but will save you money in the long run as they last a very long time plus your skin won't be as dry.  As my mama used to say - "you get what you pay for."

The 2011 season for the outdoor Lexington Farmer's Market is in full operation. On Saturday August 20th we will be downtown at Cheapside Park and on Sunday August 21st we will be on Southland Drive.  We will be at both markets unless it rains, so come on out and replenish your local honey and pollen supplies.

 

You may still purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

 

Out home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

Our hearts go out to the farmers north of Lexington who lost crops and suffered damage to their farms last Saturday night.  We lucked out this time, but know how it feels to have all the hard work wiped out in a few minutes!
We thought we'd run a basic pesto recipe this week, to encourage you to try making it to freeze for winter meals.  It's easy to do, and tastes so good on a blustery night in January!  We'll have LOTS of beautiful basil  this week, and GARLIC, of course!
Basil Pesto
2 large cloves Blue Moon Farm garlic
3 cups packed basil leaves  (about 5 oz)
1/2 cup pine nuts (try walnuts or almonds for a less expensive alternative! )
2 Tbs gently packed Parmesan or Asiago Cheese
1 cup olive oil (more or less, depending on the texture you want)

 

Place garlic in the bottom of a food processor.  Add the basil, cheese and olive oil.  Grind for 10 seconds.  Add the nuts, grind for 8-10 seconds longer.  You want it to retain small pieces of leaves, and the nuts should be just broken up, not pulverized.  Pesto was traditionally made by hand with a mortar and pestle, so you don't want it to be the consistency of baby food!
Can be stored in the fridge for 4 weeks, but it freezes GREAT and can be kept frozen for up to a year!

If knowing the origin of what you consume is important to you, as it should be, then we are the folks to shop with.  EVERYTHING we offer is started from seed and grown by us just 15 miles away at our farm in Nicholasville.  We opt to use biological controls and to release beneficial insects like lacewings and lady beetles (We recently released 70,000 of them) instead of spraying with pesticides that kill honey bees and other beneficial predators to create a pest management system that is friendly to the food we bring to market as well as the environment.

Triple J Farm will be selling our pasture raised, grain finished beef this Saturday at the market, with a large selection of cuts available, feel free to pre order!!! Also, we will be selling our farm fresh, free range eggs. In addition, we will have a wide variety of culinary potted herb plants available to start those herb gardens.

 

We will also be selling our farms compost to help get those gardens and flowers looking fabulous!

Here at Quarles Farm we've weaned the fall born calves and a new crop will start hitting the ground in about a month.  We've finally finished the first cutting of hay and are repairing equipment getting ready for a second cutting.  The last planting of summer vegetables are in the ground and we could stand some moisture to get things sprouting. 

In spite of the season moving towards fall, market is still in full swing.  We have a nice selection of tomatoes and potatoes that we'll have with us on Saturday and Sunday.  These are tomatoes that aren't hard as a rock and tasteless and potatoes that mash up like "real" potatoes should.  We'll also have our selections of beef, breads, and canned items.  If there's a cut of beef that you really want, e-mail us quarlesfarm@live.com so we can be sure to have your item in good supply.

We'll be at Saturday and Sunday markets with full freezers of beef , baked goods, canned goods and some vegetables.  Stop by to see us, visit for a while and pick out a fine steak for a special occasion or a fine chuck or rump roast.  Our ground chuck or ground round is also great in any recipe that calls for hamburger.  We also have beef sausage in links or in bulk that makes a different alternative to pork sausage.  Give it a try and see what you think.

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Rhapsody En Bleu, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Rhapsody, Tuscan Sun, Abbey Road, Wildcat Blue, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.
