Every Wednesday when I sit down and reflect upon the past week at the LFM, I find myself thinking about the weather. Maybe, since being surrounded by people who depend on Kentucky's unpredictable weather patterns, I've developed more of an instinctual awareness of how long it's been since it rained. It never ceases to amaze me when our farmers show up with truck loads of vegetables, despite it being a week in which Kentucky reached record lows and record highs. Kentucky farmers put up with a lot of things that they can't predict in order to get their food to market and inevitably to our tables.  For me, this is one gigantic reason to support our local farmers, to shop at the LFM and to encourage them to keep coming back to feed us.

This weekend in our Homegrown Authors series, our featured guests are Neil Chethik, author of "Fatherloss" and "VoiceMale," and Ricardo Nazario y Colon, author of "Of Jibaros and Hillbillies," a wonderful collection of poems.  Thanks to the Morris Book Shop for setting us up with such wonderful authors all summer long!

Cheesy Zucchini Pizza

 

Ingredients:

  • 2 large zucchinis
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • sea salt
  • pepper
  • red pepper flakes
  • pizza dough: either regular or whole wheat.

Directions:
  • Preheat the oven to 500 degrees. Either dust cornmeal on a baking sheet (or pizza stone-even better!) or spray with nonstick spray. Set aside.
  • Grate the zucchinis and press with paper towels to soak up the liquid. Mix the zucchini with the mozzarella cheese and a dash of salt and pepper. Stir well to combine.
  • In a small bowl, combine the ricotta cheese and garlic. Season with sea salt and pepper to taste.
  • Work the pizza dough into whatever shape your heart desires. Spread the ricotta cheese on top and then top with the zucchini mixture. Add some pepper flakes if you like spice in your life. Reduce oven temperature to 450 and bake pizza for about 12 minutes, or until the crust begins to turn golden and the cheese has started to bubble.

Kentucky Proud surpasses 2,500 members

FRANKFORT, Ky. - Kentucky Proud welcomed its 2,500th member on May 2, Agriculture Commissioner Richie Farmer announced.

"I'm thrilled that Kentucky Proud has reached this milestone," Commissioner Farmer said. "We've come a long way from the days when we had just a few dozen members. The success of this program has exceeded my wildest expectations."

"We're so proud to be a Kentucky Proud food supplier," said Larry Kezele of Ruth Hunt Candy in Mount Sterling. "Kentuckians have come to appreciate the small businesses that have survived the bad economy and try so hard to provide quality products for Kentucky consumers. People also are beginning to understand all the secondary benefits of buying local - jobs, energy savings, and higher quality. The Kentucky Proud program has been right out front promoting our Kentucky Proud products, and the success is evident! Thank you!"

"People are amazed at the variety of Kentucky Proud products that are available in our store," said Beth Drennan, co-owner of Broadbent Gourmet Market and Broadbent B&B Foods in Kuttawa. "We allow customers to sample products, and our customers are sold on them instantly. Kentucky Proud is the state's official farm marketing program. Members include farmers, processors, retailers, restaurants, school systems, farmers' markets, Kentucky state parks, and Kentucky Farm Bureau roadside markets that grow, make, or sell Kentucky farm products.

Kentucky Proud generated more than $200 million in retail sales of Kentucky farm products just through member retailers in 2010. A 2008 University of Kentucky study found that every dollar invested in Kentucky Proud generated up to $4.70 in new farm income.

"I want to thank our marketing staff, the Kentucky Agricultural Development Board, and all the members for everything they have done to make it possible for Kentucky Proud to reach 2,500 members," Commissioner Farmer said. OF NOTE...

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  Forty volunteers gave of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.  Look for Faith Feeds at any of our given markets as they are hard at work harvesting for the hungry this summer! 

 

 

PARKING is always FREE at all of our markets if you know where to look! All street parking is free on Saturdays as well as the parking garage on Main Street and there are also several pay lots in the area.

 

A friendly reminder: When shopping at our Tuesday and Thursday markets on South Broadway and Maxwell, please remember to park and then come check out what our wonderful vendors have brought with them. The market is not a drive-thru and in order to ensure every ones safety we need to keep the aisles free of cars!

We are still harvesting LOCUST HONEY and now some LIGHT CLOVER HONEY.  The bees are bringing in clover nectar now as the Locust trees have finished blooming.  So if you like the light honey, it is time to fill up your pantry as the Locust harvest is ending.  Kentucky produces over 30 different honeys and the US- 300 different honeys.  Abigail's honey is a varietal honey that is raw which means it has been strained but not filtered - so it will have lots of good stuff in it.  We do not heat our honey.  There are no pesticides used on plants that the bees harvest nectar so you are getting a wonderful pure product.

The 2011 season for the outdoor Lexington Farmer's Market is in full operation. On Saturday June 11th we will be downtown at Cheapside Park and on Sunday June 12th we will be on Southland Drive.  We will be at both markets unless it rains, so come on out and replenish your local honey and pollen supplies.

 

You may still purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington until we return to the Lexington Farmer's Market in April of 2011.  Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

 

Out home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

BLUE MOON FARM***Sustainably Grown***

I just heard on the news that our temps today (Tues) were higher than Miami,  and that the mountains of Hawaii had measurable snowfall!  Crazy weather!  It's hard to imagine after the spring we've had, but we REALLY need rain!  Maybe we'll get an afternoon thunderstorm one of these days.
We will have the LAST ASPARAGUS of the year this Saturday, from Colcord Farm in Paris, so if you haven't gotten your fill yet, this is your chance!  It has been so delicious!  You can keep your fancy sauces, I love it steamed with just a squeeze of lemon over it!
We hope to have a limited amount of our MIXED LETTUCES, and SPRING MIX this week, but the heat has taken the spinach.  There will be BABY KALE, CANDY ONIONS and BABY LEEKS again this week.  We'll have more PEA SHOOTS too!
The garlic just isn't sizing up as fast as we'd like, so our major harvest has been postponed a bit, but we'll hand select some bigger bulbs for market this weekend.  The fresh garlic is so easy to use!  The wrappers on the cloves are still wet, so they're easy to get off, or you can just eat them!   We'll have GARLIC SCAPES again this week, but they won't be around much longer!
Our new crop of CILANTRO will be ready to start cutting this week.....nice baby leaves and stems that are edible.  Great for CILANTRO PESTO, salsas , or just chopped into your salad to add a kick!
There will be lots of PORK and BEEF and KY LAMB to cook on your grill, to help keep your kitchen cooler on these too hot evenings....LAMB BURGER and STEW MEAT to make into shish kabob, STEAKS and BURGER from Colcord Farm, PORK CHOPS, and ALL KINDS of SAUSAGES from Stone Cross Farm, who are also providing us with their new CHEESES!  Stop by and try a sample!  Of course there'll be lots of varieties of KENNY's CHEESES too!  OYSTER MUSHROOMS from Bracken County!
GARLIC SCAPE PESTO was hard to keep on display last weekend....it was bought up as fast as we could put it out!  And CHAMPAGNE DRESSING too!  I think folks are discovering quick and easy dishes to make with these.  Every minute not spent in the kitchen around dinner time can be spent sitting on the patio enjoying the evening- watching birds preparing to settle down for the night, fireflies flickering and listening to the tree frogs "talking".

Our garden is looking good and we're hoping to get the rest of our tomatoes planted this week.  We need to start cutting hay and breeding back cows for next years  crop of babies.  The pace is picking up and we truly must "make hay while the sun shines!"

Boy are we glad that Spring is finally here, and we're excited to introduce our handmade cheeses to the Lexington Farmer's Market. This week we will have several cheeses available but be sure you check out our traditional Amish Cup Cheeses and our bourbon infused Kentucky Derby.

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Stilton, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Stilton, Tuscan Sun, Abbey Road, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

Hi folks,     Due to a limited crew, Cookin' Up Kentucky will only be offering omelettes and the fried green tomato sandwich this Saturday. We will also have our refreshing drinks--lavender lemonade and sweet tea.
