Summer has announced its arrival in one big wave of 90-degree weather.  This heat is summers way of telling us "out with the old and in with the new", though I can hardly say that eating fresh strawberries, asparagus and spring greens was getting old. Summer squash, zucchini, broccoli and even local tomatoes are popping up around the market, like clockwork it is now their time to shine.  These summer crops will stay a while until the seasons change and they're replaced by other delicacies to be cherished until their time is up as well.

 

Be sure to hurry down to the market this weekend, as this will probably be the last week for strawberries and asparagus and it always goes fast!

Cornbread Salad with Black Beans, Red Bell Peppers and Cherry Tomatoes

Adapted from Jamie and Bobby Deen's "The Deen Bros. Get Fired Up".

Serves 6 to 8

 

Ingredients:

 

1/2 to 1 pan cornbread (any recipe, preferably 1 to 2 days old), crumbled or cut into 1-inch cubes

 

Dressing:

  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Salad:

  • 2 cans black beans, rinsed and drained
  • 1 or 2 red bell peppers, diced
  • 2 cups cherry tomatoes, quartered (or 2 large tomatoes, chopped)
  • 1/2 cup thinly sliced scallions (white and green parts)
  • 1/4 cup chopped fresh basil

 

Directions

 

  • Place an oven rack 6 inches from the heat source, and preheat the broiler.
  • Place the cornbread on a baking sheet, and toast under the broiler until golden and crisp, about 3 minutes (check often to see that the crumbs do not burn). Transfer to a large salad bowl.
  • In a small bowl, whisk together the olive oil, vinegar, salt and pepper.
  • Add the black beans, bell peppers, tomatoes, scallions and basil to the salad bowl. Toss gently.
  • Pour the vinaigrette over the salad, and toss to combine well. Serve immediately.

Kentucky Proud surpasses 2,500 members

FRANKFORT, Ky. - Kentucky Proud welcomed its 2,500th member on May 2, Agriculture Commissioner Richie Farmer announced.

"I'm thrilled that Kentucky Proud has reached this milestone," Commissioner Farmer said. "We've come a long way from the days when we had just a few dozen members. The success of this program has exceeded my wildest expectations."

"We're so proud to be a Kentucky Proud food supplier," said Larry Kezele of Ruth Hunt Candy in Mount Sterling. "Kentuckians have come to appreciate the small businesses that have survived the bad economy and try so hard to provide quality products for Kentucky consumers. People also are beginning to understand all the secondary benefits of buying local - jobs, energy savings, and higher quality. The Kentucky Proud program has been right out front promoting our Kentucky Proud products, and the success is evident! Thank you!"

"People are amazed at the variety of Kentucky Proud products that are available in our store," said Beth Drennan, co-owner of Broadbent Gourmet Market and Broadbent B&B Foods in Kuttawa. "We allow customers to sample products, and our customers are sold on them instantly. Kentucky Proud is the state's official farm marketing program. Members include farmers, processors, retailers, restaurants, school systems, farmers' markets, Kentucky state parks, and Kentucky Farm Bureau roadside markets that grow, make, or sell Kentucky farm products.

Kentucky Proud generated more than $200 million in retail sales of Kentucky farm products just through member retailers in 2010. A 2008 University of Kentucky study found that every dollar invested in Kentucky Proud generated up to $4.70 in new farm income.

"I want to thank our marketing staff, the Kentucky Agricultural Development Board, and all the members for everything they have done to make it possible for Kentucky Proud to reach 2,500 members," Commissioner Farmer said. OF NOTE...

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  Forty volunteers gave of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.

SOAP - Anytime it is around 80 degrees is soap making time.  I will be making many different soaps this summer for your enjoyment and use.  They will be a one-time only soaps and not available all year round.  I like making different things.  One I have made is CITRUS SORBET, a beautiful orange soap with golden swirls.  It looks like a sunset with the scents of orange blossom and other citrus fruit.  A very refreshing shower soap. 

 

Next is OAKMOSS, a beautiful brown and green soap with scents of the deep forest while raining.  It reminds me of the Pacific Northwest. 

 

 

I also had time to make a standard - LEMONGRASS - made with real lemongrass essential oil. 

All soaps are handmade from scratch with palm, coconut and olive oils.  No kits are ever used.  My soap is the real thing. 

 

NUT BUTTERS - The nut butters are becoming a delicious habit with many of my customers.  I can see why.  Fresh ground nuts with real honey.  A great treat with bananas  or on toast.  For children, this is a great snack - whole and nutritious.  YUMMY!  HONEY ROASTED PEANUT BUTTER AND ALMOND NUT BUTTER THIS WEEK!

The 2011 season for the outdoor Lexington Farmer's Market is in full operation. On Saturday June 4th we will be downtown at Cheapside Park and on Sunday June 5th we will be on Southland Drive.  We will be at both markets unless it rains, so come on out and replenish your local honey and pollen supplies.

 

You may still purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington until we return to the Lexington Farmer's Market in April of 2011.  Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

 

Out home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

BLUE MOON FARM***Sustainably Grown***

Are we sure we didn't just celebrate Independence Day???  Wow!  HOT!!  The spring greens will not be happy!  We hope to have some of everything though, SPRING MIX, LETTUCES, KALE, SPINACH, but supplies will be limited.  Shop early!   On the other hand, this weather is perfect for the GARLIC!  We will start hand selecting bulbs to harvest for market this week, before we get into our main harvest.   I think they will be SIBERIAN and CALIFORNIA EARLY.  There again, limited quantities.   We'll have some GARLIC SCAPES too, but their time is running short, so get them while you can!
The BASIL has been waiting for hot weather too.  It won't be ready for cutting this week, but soon!  We will have FRESH CUT CILANTRO and PARSLEY.
The farm is starting to look jungle-like!  Everything is growing so fast after all that rain and then tropical heat and humidity!  We're starting to get closed in here on our outlook over the river.  The wild life think they are in the wilderness!  Today while driving slowly out our lane we scared up a TINY fawn with it's mama.  They ran before the truck until the doe put the fawn in the deep weeds to hide, and she ran on to lure us away.  We got a peek at the fawn all huddled and motionless as we went by.  It was adorable! 
Last evening we sat in the living room and watched a wild turkey mosey across our front yard, not 10 feet from the door.  Rabbits are everywhere, and making life grand for our little dog "Mouse", who loves to chase them! 
We're looking for ASPARAGUS from Colcord Farm again this week, unless the heat gets it....likely the last of it for this year.  Email  us to reserve some if you'd like....

Oyster Mushrooms from Bracken County were beautiful last week, and promise to be again this week.  They are just delicious sauteed in a little olive oil with some garlic (they'll be GREAT with the FRESH GARLIC!)  Serve in pasta, or over rice, on pizza or steak, pork chop or a burger!
Come try a sample of Kenny's SWISS this week or the old standby TOMATO BASIL CHEDDAR.  We'll have about 15 other choices for you too.  Speaking of CHOICE.... do you know that CHOICE it is the only word which reads the same right-side up and upside down in a mirror?  Try it!  Write it in all capital letters, turn the page over and hold it so you can see it in the mirror.  We thank author Tom Robbins for that!
Don't add heat to your house with your stove while it's so hot out!  We have so many different  choices (there's that word again!) of BEEF from Colcord Farm or PORK from Stone Cross Farm to throw on your grill.  STEAKS and BURGER, CHOPS, and SAUSAGES.  Also GROUND KY LAMB for a different kind of burger!
Our friends at Sunrise Bakery will be making us all kinds of ARTISAN BREADS for the weekend....great sandwich breads, breads for dipping in olive oil and balsamic, FOCACCIA to eat alone or use as a base for pizza (it's topped with our sliced garlic!), fantastic GARLIC BAGELS.....and then there are the sweets!  CINNAMON ROLLS, BLACKBERRY MUFFINS, LEMON LAVENDER MUFFINS, CROISSANTS, and PAIN AU CHOCOLAT (croissant pastry with dark French chocolate!).

Triple J Farm will be selling our pasture raised, grain finished beef this Saturday at the market, with a large selection of cuts available, feel free to pre order!!! Also, we will be selling our farm fresh, free range eggs. In addition, we will have a wide variety of culinary potted herb plants available to start those herb gardens.

We will also be selling our farms compost to help get those gardens and flowers looking fabulous!

Our garden is looking good and we're hoping to get the rest of our tomatoes planted this week.  We need to start cutting hay and breeding back cows for next years  crop of babies.  The pace is picking up and we truly must "make hay while the sun shines!"

We finally have a good batch of feta this week, and didn't have to change its name to "mozzaretta" after all.  The high humidity in the cheese plant from continuous rain has been causing the texture to be creamy, rather than crumbly, more like mozzarella with the flavor of feta. 

With strawberries in season and a holiday weekend, it's definitely time to make chocolate chevre, so we'll have a few of those, along with our other flavors.
We still plan to kick off our sorbetto this weekend, at least for tasting, so stop by for a sample of fresh strawberry made with organic berries from Elmwood, and we may even add a little goat cheese to it.  We also plan to have apple-cinnamon with Lucy's sorghum and a caramel-sea salt drizzle, so stop by for a preview and help us get this new venture started.

Boy are we glad that Spring is finally here, and we're excited to introduce our handmade cheeses to the Lexington Farmer's Market. This week we will have several cheeses available but be sure you check out our traditional Amish Cup Cheeses and our bourbon infused Kentucky Derby.

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Stilton, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Stilton, Tuscan Sun, Abbey Road, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

Hi folks,

Thanks everyone for a great weekend; it certainly was nice to have the sun come out . I anticipate another sunny Saturday market. We are happy with the success of the sliced strawberries as a side item and feel it will be repeated along with our sour cream baked potato salad. This week we're happy to bring back our famous fried green tomato and aged cheddar grilled local beef burger. As always, we will be offering our sausage breakfast burrito and friend green tomato and bacon sandwich. And of course, Cookin' Up Kentucky will offer a new twist on the omelette depending on harvest this week, so be sure to check it out!
