Spinach and Strawberry Salad

Ingredients

2 bunches spinach, rinsed and torn into bite-size pieces   

4 cups sliced strawberries   

1/2 cup vegetable oil   

1/4 cup white wine vinegar   

1/2 cup white sugar   

1/4 teaspoon paprika   

1 tablespoon poppy seeds 

2 tablespoons sesame seeds   


Directions

In a large bowl, toss together the spinach and strawberries.  In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds.  Pour over the spinach and strawberries, and toss to coat.

Community Supported Agriculture offers farm-fresh food for Kentucky consumers

FRANKFORT, Ky. - Even as spring is struggling to take hold in Kentucky, time is running out for Kentuckians to sign up for a steady supply of local food in the 2011 growing season through Community Supported Agriculture (CSA).

"A CSA gives consumers a chance to participate directly in the food production process," Agriculture Commissioner Richie Farmer said. "Consumers get fresh fruits, vegetables and other products right off the farm. They also get to get to know the people who produce the food they serve to their families."

In a typical CSA, members pay the farmer in advance for a weekly share of the farm's harvest. Members get farm-fresh foods directly from the producer but also share the risk that the crop could suffer because of weather or other unforeseen circumstances. Along with spreading some of the risk of farming, the producer is relieved of much of the burden of marketing and gets a better price for his or her products.

Most CSAs offer a variety of fruits, vegetables and herbs in season. Some provide shares in eggs, meat, milk, baked goods, and even firewood. CSAs vary according to the level of financial commitment, active participation by the shareholders, and details of payment plans and distribution systems.

The number of CSAs in Kentucky and in the United States has grown dramatically in recent years. The U.S. Department of Agriculture found in 2007 that 12,549 farms throughout the country reported marketing products through a CSA arrangement. Fifty-two Kentucky CSAs are registered with the Kentucky Department of Agriculture, up from 10 in 2009.

OF NOTE...

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  Forty (40) volunteers gave of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.

We haven't had the "perfect" market day yet this year, but we know it's coming!  Mother Nature sure seems to have a bee in her bonnet at the moment! 

There are so many great products at the market to enhance your holiday meals!  It's worth a trip down for a few minutes even in the rain!  There will be a lot of family gatherings going on this weekend, and many of you will be entertaining out-of-town guests.  We hope you'll "show us off" to them-  we are one of the best markets in the country!

BABY GREEN GARLIC is going strong, and can be used in so many ways!  From chopping it raw into salads of all kinds, topping a pizza, making a Green Garlic Soup, add to whatever vegetable you're cooking, or put some in an omelet- it so easy!  No peeling of cloves, and you can use the whole plant!  We have a recipe sheet for you with some great ideas!

There were a few PEA SHOOTS last week, and we're hoping for a few more this weekend, although they may get mixed in the salad!  The lettuces, spinach and kale are taking their sweet time getting big enough to start cutting.   We hope to have a bit of our SPRING MIX this weekend....it 's a market favorite! 

We'll have the LEMON-LAVENDER MUFFINS in addition to BLACKBERRY this week, as so many have asked for them.  CROISSANTS and CINNAMON ROLLS or GARLIC BAGELS to serve at your holiday breakfast or brunch, and many different kinds of ARTISAN BREADS (including GARLIC-TOPPED FOCACCIA) to accompany your dinner.  All from Sunrise Bakery.

How about a BEEF or PORK ROAST for dinner?  or some beautiful PORK CHOPS or STEAK?  Stone Cross Farm (Spencer Co) provides us with pastured PORK which is only fed locally grown corn to finish, no soybeans, and Colcord Farm (Bourbon Co) provides the totally grass finished BEEF which has never eaten anything but grass....as nature intended.  We will also have some KY SPRING LAMB SHOULDER ROASTS and a RACK of LAMB.

We're also sampling a new KENNY'S CHEESE this week......Tomme de Nena.  Here's what Kenny says about it...."A richer, creamier Tomme.  Normally produced from skim milk, ours is made from our double cream Awe-Brie curds to give it a burst of flavor and a firmer texture."  Come try a bite! 

We'll have samples of our GARLIC SCAPE PESTO too.  It's SO GOOD!!  It makes me hungry every time I smell it!

Our creek hollow and edges of the hills around the river bottom are covered in beautiful deep purple Dwarf Larkspurs!  It's so beautiful looking up into the woods.  In many places they're mixed in with Blue Phlox, and that combination is really gorgeous!  I guess the wonderful flowers this spring are the benefit of all the rain we've endured!

What a great week I have had.  First I attended the Southern Kentucky Book Festival where I met so many interesting writers and fans.  Then on the next day was my official book signing at Morris Book Shop where many of my customers came to help celebrate my second book.  I am looking forward to this weekend when I can talk to you and serve you some of my fine products like Clover and Wildflower Honey plus handcrafted soaps and balms.

The 2011 season for the outdoor Lexington Farmer's Market is in full operation. On Saturday April 23rd we will be downtown at Cheapside Park and on Sunday April 24th we will be on Southland Drive.  We will be at both markets unless it rains, so come on out and replenish your local honey and pollen supplies.

You may still purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington until we return to the Lexington Farmer's Market in April of 2011.  Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

Out home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

Cookin' Up Kentucky

 

Apologies to our foodie patrons who missed Cookin' Up Kentucky the past two Saturdays.  The Cookin' Up Kentucky crew WILL be at the market this Saturday and we look forward to seeing you.  We will of course be offering our ever-so-popular fried green tomato and bacon sandwhich with garlic pesto aoili on local sourdough. For those of you with a big appetite be sure to check out the farmer's market omelette, jam-packed with baby green garlic, oyster mushrooms, asparagus, hydroponic tomoatoes, and aged chedder cheese. Cookin' Up Kentucky will also be serving a small cheese omelette. We will also be offering our breakfast burrito with local sausage and eggs, homemade salsa, aged chedder cheese, and a cilantro creme fraiche. This Saturday Chef Jacob will be featuring Cookin' Up Kentucky BBQ with local pork and beef brisket sandwhiches, and local baby back ribs. Our sides items will be our bluegrass burgoo, homemade potato salad, and smoked baked beans. As always we will have our signature refreshments -- southern style sweet tea, lavander lemonade, Marco's coffee, and bottled water. Chef Jacob and crew anticipate another successful market season and look forward to serving you this Saturday!

EGGS we offer our certified organic eggs from free-ranging hens on grass pasture each market.  Both whole dozen and half-dozens available.  Our hens are always outdoors, enjoying the green growing spring season and rewarding us with beautiful big brown eggs packed full of flavor, orangy color, and healthful omega-3-fatty acids.

Boy are we glad that Spring is finally here, and we're excited to introduce our handmade cheeses to the Lexington Farmer's Market. This week we will have several cheeses available but be sure you check out our traditional Amish Cup Cheeses and our bourbon infused Kentucky Derby.

Boone Creek Creamery specializes in Old World cheeses that are often difficult to find - wonderful cheeses like Lancashire, Stilton, Cheshire, Wensleydale, Pyrenees, Cantal, or Beaufort. Of course we've added our own touch to create some new classics like our Ginger Stilton, Tuscan Sun, Abbey Road, and our exclusive Coffee Gouda.

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.
