The Lexington Farmers' Market  March 23, 2011
March 20th-26th is National Agriculture Week, and what better way to celebrate than shopping at the Lexington Farmers' Market?  There are only two more Saturdays that we'll be located in Victorian Square, so come on down and show your support for all of the hard work our local farmers have put in this winter.  We'll have fresh local eggs, winter produce, frozen meats, fresh spring flowers, and homemade bread!  Don't forget that parking is free or can be validated for the garage for the Victorian Square Garage.

Our weekly newsletter seems like the perfect place to take the time to introduce myself.  I'm Alexa Arnold, the new assistant manager for the LFM.  I'm 6 weeks away from graduation at UK (but who's counting?) with degrees in Geography and Political Science and am a firm believer in Wendell Berry's famous words: "eating is an agricultural act".  I'm just finishing up my 1st month at the market and am loving the opportunity to be surrounded by such wonderful farmers and customers, and of course such delicious and lovingly grown food!  You can find me at all of the upcoming markets, so please stop by and introduce yourself if we have yet to meet.  I couldn't be more excited about the arrival of warm weather and all of the wonderful products our farmers will be bringing to market!

Potato Soup 

 

Ingredients

        One large onion

        1 stick of butter

        Salt and pepper to taste

        4 - 6 large potatoes (leave skin on - cubed)

        6 - 8 cups of water

        Flour - � cup to � cup (depending on thickness of roux)

        1 pint of low fat sour cream

        1 small bag of frozen peas  

 


Melt � stick of butter in a large soup pot full of sliced onions. Sautee onion until soft. Add 3 (plus) cups of water to onions and butter along with all the cubed potatoes. Salt and pepper to taste. Allow potatoes to cook in the water, butter, onion until soft. Keep on low heat waiting for next step.

 

In a smaller pot, melt the other � stick of butter and a handful of flour until pasty thick. Add the other 3 (plus) cups of water and briskly wisk until butter, flour and water become a thick and smooth consistency, on a medium to low heat. You may need to add additional flour to thicken. You may see clumps of flour in this mixture but continue to wisk and the clumps will eventually smooth out. At that point add 1 pint of low fat sour cream. Cream by wisk into water, butter, flour mixture.

Add smaller pot mixture to the potato mixture. Continue to wisk. Add � of small bag of frozen peas to this mixture. Allow this final product to heat until peas are warmed through. Heat should be on low at this point.

Commissioner Farmer wants to increase local foods in schools for more farm income, healthier Kentucky kids

 

FRANKFORT, Ky. - The state agriculture department will work to get more nutritious Kentucky Proud foods onto the plates of school children throughout Kentucky in 2011, Agriculture Commissioner Richie Farmer said today.

 

"The Kentucky Department of Agriculture's Farm to School Program connects schools with local farmers so students can enjoy delicious, nutritious foods from just down the road, not across the country," Commissioner Farmer said. "That gives our kids a better chance to grow up healthy, strong and successful.

"When schools buy from local farmers, they also help those farmers make a better living," Commissioner Farmer continued. "As producers plan for the upcoming growing season, I encourage them to consider working with their local schools."

 

In a survey of 109 Kentucky school food service directors completed earlier this month, 80 percent or more said they would be interested in buying lettuce, tomatoes, cucumbers, watermelon, cantaloupe, strawberries and apples from local farmers, and a majority indicated they would like to buy other local products. More than half said their districts are providing nutritional education in elementary schools.

Commissioner Farmer has declared Oct. 9-15, 2011 as Farm to School Week in Kentucky in order to bring attention to the benefits of serving local foods to Kentucky school children.

Kentucky school districts reported about $50,000 in purchases of local food products between May and October 2010. Sixty-seven school districts are members of Kentucky Proud, including the Jefferson County Public Schools system, which serves more than 100,000 students.

The Farm to School Program is part of Commissioner Farmer's initiative to develop strong local food systems in Kentucky to enhance food security and improve the health of Kentucky's children. Statistics from the Centers for Disease Control and Prevention show that, in 2009:

  • Only 14.2 percent of Kentucky high school students ate fruits and vegetables five or more times a day, compared with the national average of 22.3 percent;
  • 35.7 percent of Kentucky high school students drank one or more soft drinks per day, compared with the national average of 29.2 percent; and
  • 33.2 percent of Kentucky high school students were either obese or overweight, compared with the national average of 27.8 percent.

"Farm to School is good for the farmer's bottom line, good for Kentucky kids and good for Kentucky's future," Commissioner Farmer said.

OF NOTE...

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  Forty (40) volunteers gave of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.

 

 

PARKING is always FREE at all of our markets if you know where to look! 

On Saturday it's as easy as parking in the Victorian Square Garage across Broadway from Victorian Square Plaza and asking one of the vendors to validate your ticket. Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

It is really amazing to us how fast everything is blooming here!  We usually have some daffodils to cut for the first farmers' market of the year, but the way things are going, they'll be long gone by then!  I checked out the lilacs today, and the buds are already getting big!  I guess the cooler weather at the end of the week will slow things down a little!  It's hard this week to imagine freezing April market days!!

We're off to Georgia at the end of the week to have a visit with Jean's family before the craziness of market time is upon us.  Things are at a point here on the farm where they can take care of themselves for a few days, and we won't get another chance to travel until November! 

This time of year is always beautiful on the farm, with all the little crops coming up and not too many weeds yet!  That being said, we've already started cultivating the garlic patches so that the weeds don't get ahead of us!  We're looking forward to the days when the redbuds are in bloom down on the bottom.  It's always so nice to look up from a chore and see the hillsides bursting with color!

Last week we started delivering Bracken County Oyster Mushrooms to restaurants around Lexington, and the hydroponic tomatoes from Lee County will be ready to go soon!  The excitement builds as we get closer to market!  We hope you're looking forward to it too.
