I had to verify my figures, but as of this posting it is twice as warm as freezing here in Lexington, but it feels even warmer than that.  Spring fever is certainly putting it mildly, and I am glad to see everyone so anxious to open their windows, sit outside and catch some rays, and even picnicking at lunch.  This all bodes well for the real return of spring in just over a month and for the return of even fresher fruits and vegetables at our markets.    

 

As I mentioned last week, our farmers are busy working ground (now that it is dry enough to do so) and chomping at the bit to get the outdoor market season underway.  While we are not looking to rush Mother Nature, and we know it will all arrive in good time, it is hard not to be eager to return to the seasonal bounty we so enjoy, and that our farmers make possible.  

 

Please continue to enjoy the weather, enjoy our Saturday market in Victorian Square, and enjoy knowing that spring is almost sprung.

Onion Potato Gratin Recipe

 

INGREDIENTS

1 1/2 pounds Yukon Gold potatoes, peeled, cut into 1/4 inch thick slices
3/4 pound onions, thinly sliced
1 cup (packed) grated Gruyere cheese (about 4 oz)
8 Tbsp (packed) freshly grated Parmesan cheese (about 2 oz)
2/3 cup whipping cream

METHOD

Preheat oven to 400°F (unless preparing in advance).

1 Combine Yukon Gold potatoes and sliced onions in heavy large saucepan. Add enough water to cover. Bring water to boil. Reduce heat and simmer until potatoes are almost tender, about 3 minutes. Drain potato onion mixture well.

2 Arrange half of potato-onion mixture in 11x7 inch glass baking dish. Sprinkle with salt and pepper. Sprinkle mixture with 1/3 cup Gruyere cheese and then 2 Tbsp of Parmesan cheese.

3 Arrange remaining potato-onion mixture atop cheeses. Pour cream over. Sprinkle with salt and pepper. Sprinkle the remaining 2/3 cup of Gruyere and 6 Tbsp of Parmesan cheese. (Can be prepared 8 hours in advance. Cover and refrigerate.)

4 Bake gratin uncovered in 400°F oven until cream thickens, about 25 minutes. Remove from oven. Preheat broiler. Broil gratin until top is golden, about 2 minutes.

Serves 4.

USDA Highlights Nearly 900 Operating Winter Farmers Markets; Many Markets Located in Cold-Weather States    

WASHINGTON, Dec. 8, 2010 - With winter on its way, the U.S. Department of Agriculture announced today that its National Farmers Market Directory lists 898 winter farmers markets across the country, accounting for more than 14 percent of the nation's 6,132 operating farmers markets and extending opportunities for consumers to access locally grown food.   

"Fresh, local, and healthful food isn't just a good weather offering," said David Shipman, Acting Administrator of USDA's Agricultural Marketing Service. "Clearly in many places, winter markets are hot despite the cold weather. Even in states where the traditional growing season is short, the market season is long. This allows more small and local farmers to continue bringing in income for their families and their businesses, while also providing great, nutritious food to communities year round."

 

Farmers markets are considered winter farmers markets if they operate between November and March. The top 11 states for these markets are: New York (153), California (140), North Carolina (53), Florida (45), Pennsylvania (42), Ohio (34), Massachusetts (32), Kentucky (30), New Jersey (24), Connecticut (20), and Michigan (20).

 

The last time USDA released a count of winter farmers markets was in 2009 as part of the agency's National Farmers Market Manager Survey. Since then, winter markets have grown 17 percent. Results from that same survey indicate that farmers markets operating more than seven months per year have higher monthly sales than their strictly seasonal counterparts.

 

In August 2010 USDA's National Farmers Market Directory listed 6,132 operating farmers markets overall, a 16 percent rise from 2009. The National Farmers Market Directory has been collecting self-reported information about farmers markets since 1994.

OF NOTE...

Between June 17 and November 20, 2010, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  Forty (40) volunteers gave of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.

On Saturday it's as easy as parking in the Victorian Square Garage across Broadway from Victorian Square Plaza and asking one of the vendors to validate your ticket. Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

We have concluded our participation in the Lexington Farmer's Market for 2010.  We would like to thank you for your patronage throughout 2010 at the Lexington Farmer's Market.

You may still purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington until we return to the Lexington Farmer's Market in April of 2011.  Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up.
