As we enter the shortest month of the year, and all reports from Punxsutawney Phil indicate an early return of spring, winter's grip is far from relinquished.  We obviously missed a serious storm and I am very thankful to not be dealing with ice and power outages.  Such outages, even if brief, tend to ruin any philosophical dialogue about the ebb and flow of the seasons and any remaining positive feelings about the cold weather are lost in a fit of survival.  Then, once the coast is clear, thoughts return to counting the blessings of a warm home and the prospects of a blazing summer sun that will make the cold days of winter seem a distant memory.

Chicken Shepherd's Pie

Serves:  6

 

Ingredients

 

ˇ         8 potatoes

ˇ         1/4 cup butter

ˇ         2/3 cup milk

ˇ         1 medium head roasted garlic

ˇ         1 pound cooked, shredded chicken breast meat

ˇ         1/2 teaspoon salt

ˇ         1/2 teaspoon freshly ground black pepper

ˇ         1 tablespoon chopped fresh thyme

ˇ         1 tablespoon chopped fresh rosemary

ˇ         1/2 cup red bell pepper, diced

ˇ         1 cup fresh corn kernels

ˇ         1 cup shredded Cheddar cheese

 

Directions

1.    To prepare roasted garlic: Cut head of garlic in half and drizzle with olive oil. Wrap in foil and bake at 400 degrees F (200 degrees C) for 45 minutes.

2.    Reduce oven temperature to 350 degrees F (175 degrees C).

3.    Peel, chop and boil potatoes until tender. Drain, then mash potatoes. Add butter, milk and roasted garlic and mix in. Set aside.

4.    Arrange chicken evenly in the bottom of a casserole dish, then sprinkle with spices, then layer peppers, corn and all but 1/4 cup cheese. Spread mashed potatoes on top, sealing everything in. Sprinkle with remaining cheese.

5.    Bake at 350 degrees F (175 degrees C) for 25 minutes or until brown around edges.

USDA Highlights Nearly 900 Operating Winter Farmers Markets; Many Markets Located in Cold-Weather States
 

WASHINGTON, Dec. 8, 2010 - With winter on its way, the U.S. Department of Agriculture announced today that its National Farmers Market Directory lists 898 winter farmers markets across the country, accounting for more than 14 percent of the nation's 6,132 operating farmers markets and extending opportunities for consumers to access locally grown food.
 

"Fresh, local, and healthful food isn't just a good weather offering," said David Shipman, Acting Administrator of USDA's Agricultural Marketing Service. "Clearly in many places, winter markets are hot despite the cold weather. Even in states where the traditional growing season is short, the market season is long. This allows more small and local farmers to continue bringing in income for their families and their businesses, while also providing great, nutritious food to communities year round."

 

Farmers markets are considered winter farmers markets if they operate between November and March. The top 11 states for these markets are: New York (153), California (140), North Carolina (53), Florida (45), Pennsylvania (42), Ohio (34), Massachusetts (32), Kentucky (30), New Jersey (24), Connecticut (20), and Michigan (20).

 

The last time USDA released a count of winter farmers markets was in 2009 as part of the agency's National Farmers Market Manager Survey. Since then, winter markets have grown 17 percent. Results from that same survey indicate that farmers markets operating more than seven months per year have higher monthly sales than their strictly seasonal counterparts.

 

In August 2010 USDA's National Farmers Market Directory listed 6,132 operating farmers markets overall, a 16 percent rise from 2009. The National Farmers Market Directory has been collecting self-reported information about farmers markets since 1994.

OF NOTE...

Between June 17 and November 20, Faith Feeds collected approximately 37,500 pounds of fresh food.  The food was donated to 14 emergency food agencies, faith ministries and others that feed the poor and hungry.  Forty (40) volunteers gave of their time and energy to make all this possible. Words cannot express the gratitude of the Faith Feed organizers.

 

 

PARKING is always FREE at all of our markets if you know where to look! 

On Saturday it's as easy as parking in the Victorian Square Garage across Broadway from Victorian Square Plaza and asking one of the vendors to validate your ticket. Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

We enjoyed balmy temperatures this Tuesday, and were able to get into the garlic patch and re-cover some cloves which had heaved out of the ground in all the freezing/thawing we've had recently.  Tonight we feel like we did about 1000 deep knee bends!!  Will we be able to get out of bed in the morning??  Remains to be seen!

The warmer temps have also encouraged hibernating animals to venture out.  We have been smelling a skunky odor down near the fields for a couple of days now.  We haven't seen him yet, and luckily the dogs haven't either!!  It can't last!!

We've been in touch with friends in New England who are bracing for this week's big storms.  We feel lucky to have this one miss us!  The winter seems endless.

Last Friday's WUKY "Heard It Through The Grapevine" party resulted in Good Foods Cafe's chef Alex Jenkins winning the award for Best use of Kentucky Proud products for her dish of local lamb with Bourbon Barrel Foods sorghum, both of which were supplied by Blue Moon Farm!  If you've never eaten in the Cafe, you owe it to yourself to give them a try.  They are one of the best local establishments for using Kentucky Proud products, and they do it right!!

We have concluded our participation in the Lexington Farmer's Market for 2010.  We would like to thank you for your patronage throughout 2010 at the Lexington Farmer's Market.

You may still purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington until we return to the Lexington Farmer's Market in April of 2011.  Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. Out home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.
