I don't know about you, but fall is my favorite time to cook. Don't get me wrong, I go crazy for summer things like tomatoes, basil, beans and corn, but you can eat all those things with very minor alteration in the kitchen. During fall I get to practice and show off what culinary skills I possess. Winter squashes are not only beautiful as decorations but they make outstanding soups, casseroles and pies. Sweet potatoes are one of my favorite foods and oven baked sweet potato "fries" are so easy and delicious I make them at least once a week. Plus greens and lettuces have made their reappearances and I won't even go into how much I like those. So be adventurous this fall and make the best of all those rich flavors that are in season!

 

We had our last Sunday market of the year on the 31st and are now down to three markets a week- Saturdays, Tuesdays and Thursdays. These markets run through the end of November, so you still have 4 more weeks to bundle up and come see us! The first weekend in December we will move indoors to Victorian Square Plaza every Saturday from 8am-1pm. Don't forget the LFM is a year-round market!

WEEKLY RECIPE

This recipe looks slightly daunting (there are lots of tips included along the way) but it's really a breeze and definitely worth it! I made this the other night with some friends and we couldn't get over how absolutely delicious it is. The prep is quite easy, it just takes a while to bake. Enjoy!


Pumpkin Stuffed with Everything Good

Ingredients

  • 1 pumpkin, about 3 pounds
  • Salt and freshly ground pepper
  • 1/4 pound stale bread, thinly sliced and cut into 1/2-inch chunks
  • 1/4 pound cheese, such as Gruyère, Emmenthal, cheddar, or a combination, cut into 1/2-inch chunks
  • 2-4 garlic cloves (to taste), split, germ removed, and coarsely chopped
  • 4 slices bacon, cooked until crisp, drained, and chopped (my addition)
  • About 1/4 cup snipped fresh chives or sliced scallions (my addition)
  • 1 tablespoon minced fresh thyme (my addition)
  • About 1/3 cup heavy cream
  • Pinch of freshly grated nutmeg

Preparation

Center a rack in the oven and preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment, or find a Dutch oven with a diameter that's just a tiny bit larger than your pumpkin. If you bake the pumpkin in a casserole, it will keep its shape, but it might stick to the casserole, so you'll have to serve it from the pot-which is an appealingly homey way to serve it. If you bake it on a baking sheet, you can present it freestanding, but maneuvering a heavy stuffed pumpkin with a softened shell isn't so easy. However, since I love the way the unencumbered pumpkin looks in the center of the table, I've always taken my chances with the baked-on-a-sheet method, and so far, I've been lucky.

Using a very sturdy knife-and caution-cut a cap out of the top of the pumpkin (think Halloween Jack-o-Lantern). It's easiest to work your knife around the top of the pumpkin at a 45-degree angle. You want to cut off enough of the top to make it easy for you to work inside the pumpkin. Clear away the seeds and strings from the cap and from inside the pumpkin. Season the inside of the pumpkin generously with salt and pepper, and put it on the baking sheet or in the pot.

Toss the bread, cheese, garlic, bacon, and herbs together in a bowl. Season with pepper-you probably have enough salt from the bacon and cheese, but taste to be sure-and pack the mix into the pumpkin. The pumpkin should be well filled-you might have a little too much filling, or you might need to add to it. Stir the cream with the nutmeg and some salt and pepper and pour it into the pumpkin. Again, you might have too much or too little-you don't want the ingredients to swim in cream, but you do want them nicely moistened. (It's hard to go wrong here.)

Put the cap in place and bake the pumpkin for about 2 hours-check after 90 minutes-or until everything inside the pumpkin is bubbling and the flesh of the pumpkin is tender enough to be pierced easily with the tip of a knife. Because the pumpkin will have exuded liquid, I like to remove the cap during the last 20 minutes or so, so that the liquid can bake away and the top of the stuffing can brown a little.

When the pumpkin is ready, carefully, very carefully-it's heavy, hot, and wobbly-bring it to the table or transfer it to a platter that you'll bring to the table.

Serving
You have a choice-you can either spoon out portions of the filling, making sure to get a generous amount of pumpkin into the spoonful, or you can dig into the pumpkin with a big spoon, pull the pumpkin meat into the filling, and then mix everything up. I'm a fan of the pull-and-mix option. Served in hearty portions followed by a salad, the pumpkin is a perfect cold-weather main course; served in generous spoonfuls, it's just right alongside the Thanksgiving turkey.

Storing
It's really best to eat this as soon as it's ready. However, if you've got leftovers, you can scoop them out of the pumpkin, mix them up, cover, and chill them; reheat them the next day.

Bonne Idée
There are many ways to vary this arts-and-crafts project. Instead of bread, I've filled the pumpkin with cooked rice-when it's baked, it's almost risotto-like. And, with either bread or rice, on different occasions I've added cooked spinach, kale, chard, or peas (the peas came straight from the freezer). I've made it without bacon (a wonderful vegetarian dish), and I've also made it and loved, loved, loved it with cooked sausage meat; cubes of ham are also a good idea. Nuts are a great addition, as are chunks of apple or pear or pieces of chestnut.

November is Good Nutrition Month

SPECIAL EVENTS...

On Saturday the Friends of the Lexington Farmers' Market will be in attendance to sell market merchandise and answer questions. Central Baptist Hospital's cookbook Beyond The Fence will also be available for purchase at these tables.


 

PARKING is always FREE at all of our markets if you know where to look!  On Saturday it's as easy as parking in the Financial Center Garage (#8 on the map) across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

It's time to stock up wood and do those last minute tasks before cold weather shows up.  The trees are showing color and fall is in full bloom.  Time for my Chocolate Amber Soap and Pumpkin Spice Soap which are great fall soaps. Just made a new batch of Mint Julep and Forest Green.  Also will have Sandalwood, Hyacinth, Supermoist, Oatmeal Body Scrub, the last of Spring Rain and Flowing River. 

 

HONEY 

I will have the last of the Comb Honey for this year at the Market.  It makes a great Thanksgiving Day treat or house gift. 

 

When does honey go bad? I used to tell people - never, but have since learned that if a yeast spore gets into the honey - that will cause the honey to ferment.  Otherwise honey stays fresh for centuries - theoretically.

 

What to do when honey crystallizes - put jar on dashboard of car on sunny day and let the sun reliquidify it.

Just to let everyone know - Rosie, the yellow lab, got a good home.  Quite a few people responded to my notice and she is now with a caring family.  Thank you kind people.

 

Many people suggested Lab Rescue or Haven for Dogs in Lexington - both listed on Petfinder.  Keep those places in mind for your holiday donations.  I give to several animal charities a year.  They need our help just like people do. 

 

I currently have three animals - two of which I am allergic to and swore I would never have in my house again, but then two kittens showed up hungry at my door and I didn't have the heart or good sense to turn away.  The dog was dumped on the road and my daughter picked him up and brought home.  Fortunately he has poodle fur and doesn't make me sneeze.  Oh, where are the sneeze-making cats now?  Asleep on my bed.  Click on my blog and see their pictures.

Thanks to a warmer than usual fall, we have a bumper crop of beautiful tomatoes! We are busy covering them nightly with canvas to protect them from frost, so stop by our booth for that last taste of summer! We would like to thank our friends and acquaintances at the Lexington Farmers' Market for a great year.  You will not find our booths at the market anymore in 2010, and we will miss seeing you all!  This Saturday we will venture over to Louisville to set up one time only at the Bardstown Road Farmers' Market, to be sure our old friends there get the garlic they need to survive the winter!  Then comes garlic planting time, which, depending on weather, could go on into December or longer.

 

We can still arrange delivery of bulk orders of Stone Cross Farm Pork, Garlic Scape Pesto and more, as we will be travelling to Lexington once a week all winter to deliver to restaurants.  Please don't hesitate to drop us an email anytime and we'll be happy to put something together for you to stock your freezer, or for your family holiday celebrations!

 

We will be posting our "Not Your Average" Cranberry Sauce recipe again in a couple of weeks.  It's a fantastic complement to a turkey (or pork!) dinner.  Stay tuned!

Hello everyone, we are still at the market - but we have moved up in the world.  We are now on Short St - not far from the Pavilion.   Just look for the pictures of the pigs and our Orange aprons.

We should have most everything this week, but we are low on bacon - so come early.   We are still selling lots of Brats and Italian Sausage for cooking on the grill, as well as a whole lot of pork chops.  As the weather cools, it seems that more of you are interested in Breakfast sausage - we have plenty.  Get something that you can cook in the crock pot so that you don't have to cook all day.  A Fresh Ham roast or Boston Butt roast cooked all day in the slow cooker makes great pulled Pork or the world's Best barbeque when you add your own special sauce!  

Don't forget to look through our recipe collection and find just what you need for a meal in the coming weeks.  Of course our recipe collection is all about PORK!  If you find a recipe you like, we have copies we can give you.

Look for Elmwood moving "under cover" in the Pavilion near Short Street as spaces open up - hopefully we can provide you a more sheltered shopping experience as we move into the season for cooler weather.

 

We will continue attending each of the 4 farmers market (Tues, Thurs, Sat,

Sun) so please stop in to see the new fall crops that are coming ready for harvest each week.  We continue to offer a full selection of our organic meats and eggs along with our produce at each of the 4 markets also.

 

Remember our outdoor location goes through Thanksgiving!

 

This week we are featuring a new bounty of hard shelled Fall Squashes - Green Acorn, Butternut, Spaghetti, Delicata, Sweet Dumpling, and a small, but nice, selection of Pumpkins.  Decorative pumpkins and specialty gourds are also ready and with dry weather this year, they should last through the holiday season.

 

Other crops we are harvesting including Bell Peppers, Hot Peppers, Cucumbers (new patch), Raspberries, and fresh cut Herbs.  We'll have some Kale and Swiss Chard, watermelon radishes, Daikon radishes and other great fall items!

 

Update on Organic Meats:

We'll have certified organic frozen hens at every market.

 

We have a small selection of Lamb that has been picked up at the butcher and now ready as well.  Email if you have a specific cut in mind.

 

Our 100% grass fed, organic beef is fully stocked so now is the time to begin to think of stocking your own freezer!

 

Special News:

We do take pre-orders for Elmwood certified organic heritage and traditional broad-breasted turkeys either in person or through email.  They are processed at KY's small USDA  inspected facility outside Bowling Green and will be ready for pickup the weekend prior to Thanksgiving.

 

Just contact the farm (best by email) and we'll share more details with you on expected available sizes, the differences in taste and appearance dependent on heritage or broad-breasted breeds, and pricing.

 

Elmwood Stock Farm will be set up on Saturday mornings at the market through Thanksgiving.  Look for us to secure your own share of locally grown, organic, wholesome, healthy farm food each week of the growing season. La Petite Crêperie brings a little taste of France to the Bluegrass

 

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere. 

 

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination.  

 

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season. 

 

La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon appétit!
