The Lexington Farmers' MarketOctober  20, 2010

The weather has been gorgeous and the leaves on my street have turned a brilliant shade of orange so even though the equinox was almost a month ago, it's finally starting to feel like fall. We have beautiful items to decorate your home indoors and out: corn shocks, mums, pumpkins, lots of kinds of squash, Indian corn and more! Most of these items will even hold up all the way through Thanksgiving. And there are obviously lots of delicious things to eat as well!

Now that we are past World Equestrian Games and Race for the Cure things should finally be "back to normal" downtown on Saturdays. Don't forget that parking is always free in the Fifth Third Garage across the street and metered street spots are free on the weekends. We only have two weekends left at Southland Dr. so make sure to visit us the next two Sundays!

As always we appreciate your support all season long!

WEEKLY RECIPE

I've made this recipe multiple times since putting it in the newsletter last year, including for Thanksgiving, and it has always received rave reviews!

Butternut Squash and Cheddar Bread Pudding

Ingredients

  • 2 pounds peeled seeded butternut squash, cut into 1-inch cubes (about 6 cups)
  • 3 tablespoons olive oil, divided
  • 1 1/2 teaspoons coarse kosher salt plus additional for sprinkling
  • 7 large eggs
  • 2 1/4 cups half and half
  • 6 tablespoons dry white wine
  • 1 1/2 teaspoons Dijon mustard
  • 1 day-old baguette (do not remove crust), torn into 1-inch pieces (about 10 cups)
  • 1 cup chopped shallots (about 4 large)
  • 2 bunches Tuscan kale (about 1 pound), ribs removed, kale coarsely chopped
  • 8 ounces extra-sharp cheddar cheese, coarsely grated

Preparation

Preheat oven to 400F. Toss squash with 1 tablespoon oil on rimmed baking sheet. Sprinkle with coarse salt; bake until squash is tender, turning with spatula occasionally, 20 to 25 minutes.

Whisk eggs in large bowl. Add half and half, wine, mustard, and 1 1/2 teaspoons coarse salt; whisk to blend. Add baguette pieces; fold gently into egg mixture. Let soak 30 minutes, stirring occasionally.

Meanwhile, heat 2 tablespoons oil in large pot over medium-high heat. Add shallots and saut until soft, stirring frequently, about 5 minutes. Add kale; cover and cook 2 minutes. Uncover and stir until kale is wilted but still bright green, about 5 minutes (kale will be a bit crunchy).

Reduce oven temperature to 350F.

Generously butter 13x9x2-inch baking dish. Using slotted spoon, transfer half of bread from egg mixture to prepared baking dish, arranging to cover most of dish. Spoon half of kale over bread. Spoon half of squash over bread and kale; sprinkle with half of cheese. Repeat with remaining bread, kale, squash, and cheese. Pour remaining egg mixture over bread pudding.

Cover bread pudding with foil. Bake 20 minutes. Remove foil; bake uncovered until custard is set and bread feels springy to touch, about 20 minutes longer.

Preheat broiler; broil pudding until cheese browns slightly, about 2 minutes. Cool 5 minutes and serve.

INFORMATION FROM OUR SPONSOR WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so please pledge now and thank you so much for supporting WUKY.

Sorry that I was not at Southland last Sunday but sold plum out of honey.  Will have plenty this coming week.

FALL SOAP

It's time to stock up wood and do those last minute tasks before cold weather shows up.  The trees are showing color and fall is in full bloom.  Time for my Chocolate Amber Soap and Pumpkin Spice Soap which are great fall soaps. Just made a new batch of Mint Julep and Forest Green.  Also will have Sandalwood, Hyacinth, Supermoist, Oatmeal Body Scrub, the last of Spring Rain and Flowing River.

HONEY

People are starting to stock up honey for winter.  I will have plenty of honey this week.  It will be an amber clover with some ironweed, sunflower and goldenrod nectar as well as all the summer flower nectar in it.  Great honey for allergy sufferers to take.  This will be the last type of honey for the year.

We have some 12 lb honeys jugs for those who store over winter.

What to do when honey crystallizes - put jar on dashboard of car on sunny day and let the sun re-liquefy it.

The WEG people are gone now, so you can come back to the Market at your regular hours.  I met some interesting people of the past three weeks and thought Lexington looked great.  I am very proud of our city and its people did a wonderful job hosting.

I went to Nashville last week to speak about fiction writing at the Southern Humanities Book Festival.  I met other writers and courtly southern gentlemen whose manners were impeccable.  Click on my blog to see pictures.

See you at the Market this weekend.

Caffemarco

Bourbon County

The King, the Queen, and the Princess were all seated in the back of the house under a splendid old oak and finishing a quiet breakfast.

Jack approached in haste and greedily served himself some of the scrambled eggs and slices of Sunrise Bakery bread. "Hold on there, Master Jack, we've plenty of food - slow down and enjoy it " admonished the King.

"Have you ever seen such a Farmers Market as the one Saturday in Cheapside Park? ", asked the Princess. "We got cheddar crackers, sausages, chevre, egg noodles, cakes and apples and garlic and mushrooms. Lilies, too. Someone said you can get coffee from Paris, as well. "

"Yes, you can. And crepes. You have to stand in line. "

CaffeMarco is roasted in Paris, Kentucky on Thursday for Saturday's market. "Fair Trade, organic, hand-crafted and utterly delicious"

"FRESH LOCAL HONEY" by NICK and BEV NICKELS

Fayette County

We WILL NOT BE at the Lexington Farmer's Market downtown on Saturday, October23rd but we WILL BE at Southland Dr. on Sunday, October 17th if it doesn't rain.

We offer the highest quality raw clover honey, pure beeswax candles and pollen.

Our delicious raw honey comes only from the fields and orchards surrounding Lexington, Kentucky. Our raw honey is unheated, and unprocessed so that all its attributes are fully preserved. Honeycomb in a jar with strained honey is also available.

Our candles are 100% unbleached, all natural beeswax. Beeswax candles are long lasting and clean burning. They contain no toxins or soot common to commercially produced paraffin candles. They are the candles of choice for those who have asthma, allergies, or headaches due to paraffin or scented candles. They are naturally fragrant with a subtle honey scent. They are made with filtered beeswax; so they produce a bright, clear, steady flame and beautiful illumination.

Bee pollen is nature's most complete food, rich in vitamins, minerals, amino acids and a complete source of protein. It can give us that extra edge to stay healthy. An all-around nutritional supplement, bee pollen is ideal for daily use. The bee pollen granules can be sprinkled over salad or cereal, added to liquids or eaten as is.

HILLSIDE HERITAGE FARM

Garrard County

Unless there is a change in what Boone's told me, we will have bacon, and pork chops (bone in and boneless) this week.  We should have most everything else as well.  We are still selling lots of Brats and Italian Sausage for cooking on the grill, as well as a whole lot of pork chops.  As the weather cools, it seems that more of you are interested in Breakfast sausage - we have plenty.  Get something that you can cook in the crock pot so that you don't have to cook all day.  A Fresh Ham roast or Boston Butt roast cooked all day in the slow cooker makes great pulled Pork or the world's Best barbeque when you add your own special sauce!

Don't forget to look through our recipe collection and find just what you need for a meal in the coming weeks.  Of course our recipe collection is all about PORK!  If you find a recipe you like, we have copies we can give you.

We invite you to visit our website (which still needs updating) www.hillsideheritagefarm.com and also ask you to join us on Facebook.

Our entire family looks forward to getting to know each of you.

ELMWOOD STOCK FARM

Scott County

Look for Elmwood moving "under cover" in the Pavilion near Short Street as spaces open up - hopefully we can provide you a more sheltered shopping experience as we move into the season for cooler weather.

We will continue attending each of the 4 farmers market (Tues, Thurs, Sat,

Sun) so please stop in to see the new fall crops that are coming ready for harvest each week.  We continue to offer a full selection of our organic meats and eggs along with our produce at each of the 4 markets also.

Elmwood and your other farms will continue to be set up on Saturdays downtown at Cheapside Park just like normal during the WEG games (and after - remember our outdoor location goes through Thanksgiving!)

This week we are featuring a new bounty of hard shelled Fall Squashes - Green Acorn, Butternut, Spaghetti, Delicata, Sweet Dumpling, and a small, but nice, selection of Pumpkins.  Decorative pumpkins and specialty gourds are also ready and with dry weather this year, they should last through the holiday season.

Other crops we are harvesting including Stringless Green Beans, Yellow Squash, Zucchini, Patty Pan Squashes, Okra, Eggplant, Bell Peppers, Hot Peppers, Cucumbers (new patch), Raspberries, and fresh cut Herbs.  We'll have some Kale and Swiss Chard, possibly some Radishes, and who knows now what other items will be ready the end of the week?

Update on Organic Meats:

We'll have certified organic frozen hens at every market.

We have a small selection of Lamb that has been picked up at the butcher and now ready as well.  Email if you have a specific cut in mind.

Our 100% grass fed, organic beef is fully stocked so now is the time to begin to think of stocking your own freezer!

Special News:

We do take pre-orders for Elmwood certified organic heritage and traditional broad-breasted turkeys either in person or through email.  They are processed at KY's small USDA  inspected facility outside Bowling Green and will be ready for pickup the weekend prior to Thanksgiving.

Just contact the farm (best by email) and we'll share more details with you on expected available sizes, the differences in taste and appearance dependent on heritage or broad-breasted breeds, and pricing.

Elmwood Stock Farm will be set up on Saturday mornings at the market through Thanksgiving.  Look for us to secure your own share of locally grown, organic, wholesome, healthy farm food each week of the growing season. These days, more than ever, it's important to know the source of your family's food and you can look to a local organic farm to meet your body's nutritional needs resulting in good health.

We offer our certified organic eggs from free-ranging hens on grass pasture, organic poultry, and grass-fed beef from our organic Angus cattle. Elmwood's meats, eggs, and vegetables are produced by us on our organic family farm in Scott County.

LA PETITE CREPERIE

Fayette County

La Petite Crperie brings a little taste of France to the Bluegrass

The idea for opening a walk-up crperie was hatched many years ago when I was a student in France.   After discovering crpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crpe windows are like hot dog stands in New York; they are everywhere.

My husband Mark and I took many more trips to France and ate countless more crpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crpes to our friends, family and my French students, we think we've hit on a good combination.

La Petite Crperie hopes to recreate the experience of ordering a French crpe emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crpes are made with homemade butter from the market.   We also make a hearty breakfast crpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

La Petite Crperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon apptit!

Remember to visit our website at http://www.lexingtonfarmersmarket.com for more information about the market.
