The Lexington Farmers' Market October 6, 2010

Customer Appreciation Day last Saturday was great! We got to give out close to 100 prizes and even if you didn't get one we hope you know how much we value your support each and every day.

If you haven't been to the market recently, you won't believe how much great produce is still around and coming into season. We have tomatoes, summer squash and peppers next to apples, butternut squash and pumpkins. Not to mention breads, meats, eggs, cheeses, coffee, desserts, honey, body care products, and more. The variety is truly amazing!

Just a reminder: Our Sunday market on Southland Dr. ends for the season Sunday, Oct 31st.  The Tuesday, Thursday and Saturday markets continue outdoors until the end of November. We will head indoors on Saturdays every week from December 4th until our outdoor opening day in April.

WEEKLY RECIPE

Whether for Keeneland or UK Football, tailgating season is back! There are still plenty of jalapenos on the market so grab a bunch and make your own version of a jalapeno popper on the grill.

Smoked Stuffed Chile Poppers

Ingredients

  • 8 ounces cream cheese or Neufchâtel cheese, at room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 12 large jalapeño chilies (green, red, or both), cored and seeded
  • 1 empty cardboard egg carton, lid removed, or a metal jalapeño popper rack
  • 12 pecan halves, toasted (see Note)
  • 8 ounces thin-sliced smoked bacon
  • 1/2 cup wood chips, soaked in water and drained, or 1 cup dry wood chips for a gas grill

Preparation

1. To make the popper filling, combine the cheeses in a medium-size bowl and stir them together with a fork. Put the cheese mixture in a gallon-size zipper-top plastic bag and cut a small hole in one corner of the bag. Squeeze each jalapeño full of the cheese mixture. Place the cheese-filled jalapeños in the egg carton. Push a pecan half into each pepper. Wrap a half strip of bacon around each jalapeño and secure with a toothpick.

2. Fill your charcoal chimney with briquettes, set the chimney on the bottom grill grate, and light or prepare a fire in your smoker. For a gas grill, turn half the burners to high.

3. When the coals are ready, dump them into the bottom of your grill, and spread them evenly across half. Scatter the drained wood chips on the hot coals, or put the dry wood chips in a metal container and place closest to a burner on a gas grill. Place the jalapeños on the indirect side of the grill. When the smoke starts to rise, close the lid.

4. Smoke the peppers at 350°F for 1 hour and 15 minutes until the bacon is cooked and the jalapeño have a smoky aroma.

Note: I toast my pecans for more flavor before using inserting them into the jalapeño. To toast, melt 1 teaspoon unsalted butter in a small cast iron skillet over medium heat. Add the pecans and cook, stirring, until slightly browned.

INFORMATION FROM OUR SPONSOR WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. What a summer for breakdowns.  All three of our cars are in need of both repairs and cosmetic upgrading.  They were so undependable, we bought another car.

Then our spring water system broke down completely.  We are having to pay to have city water installed.  Oh my, is that expensive.

Still, it has been a great summer with sales for DEATH OF A HONEYBEE going gangbusters like bees to flowers.  And who could have predicted that my debut mystery book would win the Readers' Favorite Gold Medal award.   Thanks to everyone for their support.

"FRESH LOCAL HONEY" by NICK and BEV NICKELS

Fayette County

We WILL BE at the Lexington Farmer's Market downtown on Saturday, October9th if it doesn't rain.

We offer the highest quality raw clover honey, pure beeswax candles and pollen.

Our delicious raw honey comes only from the fields and orchards surrounding Lexington, Kentucky. Our raw honey is unheated, and unprocessed so that all its attributes are fully preserved. Honeycomb in a jar with strained honey is also available.

Our candles are 100% unbleached, all natural beeswax. Beeswax candles are long lasting and clean burning. They contain no toxins or soot common to commercially produced paraffin candles. They are the candles of choice for those who have asthma, allergies, or headaches due to paraffin or scented candles. They are naturally fragrant with a subtle honey scent. They are made with filtered beeswax; so they produce a bright, clear, steady flame and beautiful illumination.

Bee pollen is nature's most complete food, rich in vitamins, minerals, amino acids and a complete source of protein. It can give us that extra edge to stay healthy. An all-around nutritional supplement, bee pollen is ideal for daily use. The bee pollen granules can be sprinkled over salad or cereal, added to liquids or eaten as is.

BlueMoon Farm ***Sustainably Grown***

Madison County

Please note:  After this weekend, Blue Moon will have only 3 more weekends of market for the year!

The garlic planting season is coming fast!  Leo is preparing ground, "seed" garlic bulbs are being broken and sorted, and we're looking forward to the last big push of the year.....to get planting done before Christmas!  We start the job after our farmers' market season is done (October 31st this year), and, depending on the weather, we'll either make it by Christmas or we won't!

Many of you are stockpiling garlic to cook with, and hoping it will keep all winter.  As we have said many times, the very best way to keep garlic for the winter is BRAIDED.  Our beautiful HANDCRAFTED GARLIC BRAIDS keep the entire garlic plant intact, which helps a lot to keep the moisture in.  They should be hung in a dark, cool, dry environment (away from windows or stove).  We don't guarantee that every clove in every bulb will stay good all winter, but you should have some useable garlic until early spring when we return to the market with BABY GREEN GARLIC!

An alternative to a braid is to buy loose bulbs, store in a similar fashion, and when you start to feel them getting soft, peel and chop the cloves into a freezer container, cover with olive oil and store in your freezer.  The oil doesn't get so hard that you can't go in with a spoon and dip out a spoonful when you're ready to cook a dish.  You've got your garlic and olive oil already together!

It's definitely time to start thinking about winter meals, and to stock your freezer accordingly.  We will be happy to special order larger amounts of the PORK and BEEF products we carry, to ensure you have your favorites on those cold winter nights.  PORK CHOPS and ROASTS, and all those yummy SAUSAGES from Stone Cross Farm!   Mmmmm...I'm picturing the wind howling outside and a steaming hot plate of spaghetti with homemade sauce of this summers' tomatoes and HOT ITALIAN SAUSAGE, or maybe even CHORIZO, a crunchy green salad (we use kiwis as our winter "tomatoes") and some gently warmed Sunrise Bakery ARTISAN BREAD from our freezer.  Do I sound like I'm looking forward to winter??  It's been a L-O-N-G summer.

Our BABY SQUASH MEDLEY is done due to the dryness and very cool nights.  We'll have GREEN BELL PEPPERS and HOT PEPPERS, and our dried, ground PAPRIKA and CHIPOTLE PEPPERS, GARLIC POWDERS, GARLIC SCAPE PESTO (speaking of things which keep extremely well, frozen!) and CHAMPAGNE DRESSING.

We're seeing customers buying the Bracken County SHIITAKE MUSHROOMS in bulk to dry for winter use.  They have been beautiful, and are so easy to dry.  All you have to do to use dried shiitakes is soak them in a bowl of any liquid.....vegetable or chicken stock, wine, or even water!  Then use like fresh.

We'll be sampling a NEW KENNY'S CHEESE this weekend.  It's a seasonal cheese.......CHEDDAR / APPLE.  I can't wait to try it!  Of course we'll have all your other favorites too!  We are happy to take your special order for holiday cheeses!  Kenny makes some awesome wheels for buffets or large family gatherings.

Our freezer will be stocked full with Colcord Farm's terrific GRASS FINISHED BEEF, STEAKS, BURGER, ROASTS, and Stone Cross Farm's BACON, BREAKFAST SAUSAGE, ROASTS and more.

Love our GARLIC BAGELS?  They freeze beautifully for winter breakfasts and brunches!  Put a frozen one under a bowl in your microwave for one minute on high.  It will come out "sliceable" and can then go in your toaster to finish thawing and get nice and warm for your lox and soft goat cream cheese?  The GARLIC FOCCACIAs also do great with freezing.  You can use them for "homemade" pizza all winter!  Sunrise Bakery has done a fine job this year, providing us with all the ARTISAN BREADS and PASTRIES you love.  And speaking of pastries.....the CINNAMON ROLLS and MUFFINS also are (almost) as good as fresh when you warm them from the freezer!

We have had some spectacular market days this fall, and this weekend looks perfect again!  Last year it seemed like we couldn't get a break from rainy weekends at the end of the season, so we intend to enjoy the great ones we have left this year!  Come on down and share it with us!

Special orders garlic@bluemoongarlic.com  Find us on Facebook www.facebook.com/bluemoongarlic

Don't forget.....October 31st is our last market day for this year!!

Superlative coffee roasters

Fayette County

New from Superlative Coffee Roasters. . . Barrel Aged Bourbon Infused Coffee!

Its subtle bourbon flavor makes for a wonderful complement to a chocolate, caramel, or a fruit dessert. . . not to mention Derby Pie! It will be available for tasting Saturday at the market.

BlEUGRASS CHEVRE

Fayette/Clark County

The weather is going to be great this weekend, and the market is beautiful with plenty of colorful vegetables left, plus pumpkins and gourds in every size and shape.

We tried to retire chocolate chevre until next year when all the fresh fruits come in season, but it's back by popular demand.  The Feta will be ready, and so will our tortas with sundried tomatoes and herbs.

You may have already discovered the stuffer tomatoes from Henkle's Herbs and Heirlooms which are filled with fresh chevre and grilled until they sizzle.  We have the chevre and Henkle's will have plenty of little late-season "stuffers" at the corner of Short and Upper.

It has taken all summer to get set up, but we're still trying to launch our sorbetto before the end of the season.  We had to modify a separate room in our cheese plant as a commercial kitchen, learn how to use this awesome Italian machine, then get all of our permits. Now we are working on the logistics of getting a frozen product to the market with a minimum of equipment.  We'll be using seasonal fruits, herbs and produce from the market, so our first venture will be dairy-free pumpkin spice and apple cinnamon sorbettos.  Stay tuned!

Cheers!

HILLSIDE HERITAGE FARM

Garrard County

I've been remiss in updating this - please excuse me.  My knee surgery recovery was going great until I did too much last week.  I am slowing down a little this week and it is starting to feel much better.  Last week I made almost as many trips into the truck as Clay made - it won't be long and he'll start expecting me to do my part!

Unless we have trouble getting to Boone's, we will have pork chops (bone in and boneless) this week.  We should have everything except maybe bacon.  It will be close as to whether he has it finished by the time we go to pick up our pork on Friday.  We are still selling lots of Brats and Italian Sausage for cooking on the grill, as well as a whole lot of pork chops.  Get something that you can cook in the crock pot so that you don't have to cook all day.  A Fresh Ham roast or Boston Butt roast cooked all day in the slow cooker makes great pulled Pork or the world's Best barbeque when you add your own special sauce!

Don't forget to look through our recipe collection and find just what you need for a meal in the coming weeks.  Of course our recipe collection is all about PORK!  If you find a recipe you like, we have copies we can give you.

We invite you to visit our website (which still needs updating) www.hillsideheritagefarm.com and also ask you to join us on Facebook.

Our entire family looks forward to getting to know each of you.

John Contini

ELMWOOD STOCK FARM

Scott County

Look for Elmwood moving "under cover" in the Pavillion near Short Street as spaces open up - hopefully we can provide you a more sheltered shopping experience as we move into the season for cooler weather.

We will continue attending each of the 4 farmers market (Tues, Thurs, Sat,

Sun) so please stop in to see the new fall crops that are coming ready for harvest each week.  We continue to offer a full selection of our organic meats and eggs along with our produce at each of the 4 markets also.

Elmwood and your other farms will continue to be set up on Saturdays downtown at Cheapside Park just like normal during the WEG games (and after - remember our outdoor location goes through Thanksgiving!)

This week we are featuring a new bounty of hard shelled Fall Squashes - Green Acorn, Butternut, Spaghetti, Delicata, Sweet Dumpling, and a small, but nice, selection of Pumpkins.  Decorative pumpkins and specialty gourds are also ready and with dry weather this year, they should last through the holiday season.

Other crops we are harvesting including Stringless Green Beans, Yellow Squash, Zucchini, Patty Pan Squashes, Okra, Eggplant, Bell Peppers, Hot Peppers, Cucumbers (new patch), Raspberries, and fresh cut Herbs.  We'll have some Kale and Swiss Chard, possibly some Radishes, and who knows now what other items will be ready the end of the week?

Update on Organic Meats:

We'll have certified organic frozen hens at every market.

We have a small selection of Lamb that has been picked up at the butcher and now ready as well.  Email if you have a specific cut in mind.

Our 100% grass fed, organic beef is fully stocked so now is the time to begin to think of stocking your own freezer!

Special News:

We do take pre-orders for Elmwood certified organic heritage and traditional broad-breasted turkeys either in person or through email.  They are processed at KY's small USDA  inspected facility outside Bowling Green and will be ready for pickup the weekend prior to Thanksgiving.

Just contact the farm (best by email) and we'll share more details with you on expected available sizes, the differences in taste and appearance dependent on heritage or broad-breasted breeds, and pricing.

Elmwood Stock Farm will be set up on Saturday mornings at the market through Thanksgiving.  Look for us to secure your own share of locally grown, organic, wholesome, healthy farm food each week of the growing season. These days, more than ever, it's important to know the source of your family's food and you can look to a local organic farm to meet your body's nutritional needs resulting in good health.

We offer our certified organic eggs from free-ranging hens on grass pasture, organic poultry, and grass-fed beef from our organic Angus cattle. Elmwood's meats, eggs, and vegetables are produced by us on our organic family farm in Scott County.

LA PETITE CREPERIE

Fayette County

La Petite Crêperie brings a little taste of France to the Bluegrass

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination.

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon appétit!
