The Lexington Farmers' Market September 29, 2010

The beauty of a farmers' market it the direct personal interaction between the people who produce food and their customers. It's hard to beat purchasing food straight from the person who planted, tended, harvested, baked, or processed it, and those food producers also value having the opportunity to meet the people who will consume the products they spent so much time creating. That's why this Saturday we're hosting our first ever Customer Appreciation Day! Come see us at Cheapside Park Saturday, October 2nd from 9am-1pm for cooking demonstrations (with lots of samples!) prepared by Sullivan University. Plus, our members are so appreciative they've all donated fabulous prizes that will be raffled off every 10 minutes. Stop by and drop your name in for a chance at LFM products and gift certificates. You'll get to choose your prize when your name is called so come early! At 1pm we'll draw for the Grand Prize of LOTS of LFM merchandise and gift certificates (you need not be present to qualify for the grand prize).

Market hours for Saturday will remain 7am-3pm, with our special event taking place between 9am-1pm. Main Street will be closed from Upper to Mill beginning at 11am on Saturday. To the best of our knowledge, the Financial Center Garage will still be accessible from the Vine Street entrance. Otherwise look for parking on the street or in the lots off Short and Mill Streets. We thank you for your patience and cooperation while we work with Spotlight Lexington and the World Equestrian Games to show Lexington and the world all the extraordinary resources our city has to offer.

WEEKLY RECIPE

While the apples that are around right now are perfectly delicious on their own, caramel apples are a treat too tasty and fun to pass up. Try making your own with this recipe that doesn't use white sugar, corn syrup, or those little squares you melt.

Caramel Apple Recipe

Makes 6 - 8 caramel apples.

Please be careful when making caramel apples, you will be working with dangerously hot, sticky, ingredients - put on an apron and make sure you have a closed-toed pair of shoes on when making candy. Be extra, extra careful if you have kids around.

6 - 8 small apples, unwaxed, cold
1 cup heavy cream
1/2 teaspoon sea salt
1 cup honey

Special equipment: candy thermometer, and lollipop sticks

Line a baking sheet with parchment paper.
Push a lollipop or popsicle stick deep into each apple - in through the stem.
Fill a large bowl 1/2 full with ice water and set aside.

In a medium, thick-bottomed saucepan heat the cream and salt until tiny bubbles start forming where the milk touches the pan - just before a simmer. Stir in the honey. Bring the mixture to a boil. Now reduce the heat to an active simmer and cook, stirring constantly with a wooden spoon, for about 15-20 minutes minutes or until the mixture reaches about 255-260F degrees. To stop the caramel from cooking, very, very carefully set the bottom of the saucepan in the bowl of cold water you prepared earlier - taking special care not to get any of the water in the caramel mixture. Stir until caramel begins to thicken up - you want the caramel to be thin enough that it will easily coat your apples, but not so thin that it will run right off. If the caramel thickens too much simply put the pot back over the burner for 10 seconds or so to heat it up a bit.

I tilt my sauce pan so all the caramel forms a pool on one side, and use my other hand to dunk and twirl each apple until it is thoroughly coated with caramel. Place each apple on the parchment lined baking sheets and allow the caramel to cool and set.

THE FAYETTE ALLIANCE

The Fayette Alliance is Lexington's ONLY land-use advocacy organization that regularly educates and lobbies local government for a sustainable growth model that benefits all of us.

We believe that preserving our signature Bluegrass landscape, creating a dynamic and equitable cityscape through infill redevelopment, and improving our natural waterways by fixing our sanitary sewer and stormwater systems are key components to achieving our economic and environmental promise here in Lexington-Fayette County.

We are an alliance of citizens from the entire community, including stakeholders from the agricultural, neighborhood, and infill sectors. We are a united voice for responsible growth, and only weigh-in on those land-use issues that have countywide implications. INFORMATION FROM OUR SPONSOR WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so please pledge now and thank you so much for supporting WUKY.

HILLSIDE HERITAGE FARM

Garrard County

I've been remiss in updating this - please excuse me.  My knee surgery recovery was going great until I did too much last week.  I am slowing down a little this week and it is starting to feel much better.  Last week I made almost as many trips into the truck as Clay made - it won't be long and he'll start expecting me to do my part!

Unless we have trouble getting to Boone's, we will have pork chops (bone in and boneless) this week.  We should have everything except maybe bacon.  It will be close as to whether he has it finished by the time we go to pick up our pork on Friday.  We are still selling lots of Brats and Italian Sausage for cooking on the grill, as well as a whole lot of pork chops.  Get something that you can cook in the crock pot so that you don't have to cook all day.  A Fresh Ham roast or Boston Butt roast cooked all day in the slow cooker makes great pulled Pork or the world's Best barbeque when you add your own special sauce!

Don't forget to look through our recipe collection and find just what you need for a meal in the coming weeks.  Of course our recipe collection is all about PORK!  If you find a recipe you like, we have copies we can give you.

We invite you to visit our website (which still needs updating) www.hillsideheritagefarm.com and also ask you to join us on Facebook.

Our entire family looks forward to getting to know each of you.

"FRESH LOCAL HONEY" by NICK and BEV NICKELS

Fayette County

We WILL BE at the Lexington Farmer's Market downtown on Saturday, October2nd and at Southland Drive on Sunday, October 3rd if it doesn't rain.

We offer the highest quality raw clover honey, pure beeswax candles and pollen.

Our delicious raw honey comes only from the fields and orchards surrounding Lexington, Kentucky. Our raw honey is unheated, and unprocessed so that all its attributes are fully preserved. Honeycomb in a jar with strained honey is also available.

Our candles are 100% unbleached, all natural beeswax. Beeswax candles are long lasting and clean burning. They contain no toxins or soot common to commercially produced paraffin candles. They are the candles of choice for those who have asthma, allergies, or headaches due to paraffin or scented candles. They are naturally fragrant with a subtle honey scent. They are made with filtered beeswax; so they produce a bright, clear, steady flame and beautiful illumination.

Bee pollen is nature's most complete food, rich in vitamins, minerals, amino acids and a complete source of protein. It can give us that extra edge to stay healthy. An all-around nutritional supplement, bee pollen is ideal for daily use. The bee pollen granules can be sprinkled over salad or cereal, added to liquids or eaten as is.

BlueMoon Farm ***Sustainably Grown***

Madison County

The WEG has surely brought big excitement to Lexington!  I've never seen so many people just wandering around downtown enjoying themselves day after day!  It's great to see.  We hope to see a bunch of out-of-towners this weekend at our markets, so we can show them what a great market it is!  The weather is PERFECT for comfortable shopping and browsing, so bring a friend and come on down!  This Saturday is our Customer Appreciation Day, with several drawings each hour for wonderful products from our vendors and a Grand Prize drawing at 1PM for a Lexington Farmers' Market merchandise bundle....aprons, shirts, etc!!  Don't forget- you must be present to win the hourly prizes!

We are still waiting for some rain on the farm.  Things are terribly dry, and that in conjunction with the very cool temperatures has severely affected our BABY SQUASH MEDLEY production!  If they're your favorite, be sure to shop early Saturday!  The miniature squash in many varieties are beautiful and SO delicious!  They're easy to prepare....sauté, roast, or grill!  Our BELL PEPPERS are booming right now- time to put some in the freezer for winter meals!  Did you know that peppers are one of the few vegetables you can freeze without blanching?  You can wash and slice or dice them, or even leave them whole, and pop them in a freezer bag.  That's it!

Our GARLIC supply is holding up well, and we've noticed folks starting to stock up for winter.  Our GARLIC BRAIDS are the very best way to store garlic for the long term.  The entire plant is left intact, which slows the evaporation process, and keeps the cloves succulent much longer.  We'll have a great selection of GARLIC BRAIDS this weekend.

For those of you who don't want to chop garlic, we have our own "knock-your-socks-off" GARLIC POWDER.  It's 100% GARLIC- with no fillers.  Use it carefully until you get used to how strong it is!  We have it HICKORY SMOKED as well.   I finally got a good supply of our SPICY PAPRIKA POWDER ground.  The difference between it and store bought is amazing....it smells like peppers!  Also this week for the first time this year....GROUND CHIPOTLE PEPPERS!

Check out the Stone Cross Farm A.S.H.-free , pasture-raised PORK products we have every week!  Delicious BACON, CHOPS, ROASTS, and lots of kinds of SAUSAGE, from BREAKFAST SAUSAGE to CHORIZO!  Something for every palate.

Kenny's KY Made CHEESES are vegetarian-friendly.....made with vegetable rennet!  We carry over 15 varieties, from COLBY to BLEU!

Colcord Farm supplies the GRASS FINISHED BEEF.  Their Angus steers are never, EVER fed any grain.  "Beef the way nature intended".  They are also pasture raised, and Antibiotic, Steroid and Hormone-free.

BASIL, BASIL, BASIL!!!!  The plants are loving the cooler mornings and evenings (me too!!) and it is really beautiful right now.  Want to preserve some for winter use?  Here's a link to a good article with 5 different ways to preserve.... http://www.herbcompanion.com/herbs-in-the-kitchen/how-to-preserve-basil-5-ways.aspx

If you want an easy way to make pesto, just use our GARLIC SCAPE PESTO as a base!  Add basil pureed in olive oil, and it's done!  Our CHAMPAGNE DRESSING is from the Coach House Restaurant recipe, and makes not only a terrific topping for your salad, but a great sandwich spread, or coleslaw dressing!  We just had a customer from out of state order 24 containers for her entire family!

Bourbon Barrel Foods in Louisville is the producer of the ONLY small batch SOY SAUCE in the U.S.!  Matt Jamie, the owner, ages the soy in bourbon barrels, which gives it a unique flavor.  The WORCESTERSHIRE SAUCE has a bit of bourbon in it, as does the teriyaki, which he named Kentuckyaki!  The flavors are delicious!  He also produces Bourbon Smoked SALT, PEPPER and PAPRIKA!  They make great KY gifts!

Sunrise Bakery provides the crusty ARTISAN BREADS, the scrumptious PASTRIES and MUFFINS, the best around GARLIC BAGELS, GARLIC TOPPED FOCCACIA, SOURDOUGH, and the truly unique GARLIC CHOCOLATE CHIP COOKIES!!

If you like great things to eat, you really should check us out!  Saturdays on Short Street behind the museum, from 7:30-2PM, and Sundays on Southland Dr. in front of Goodyear from 10 AM til 2 PM.  Time is short!!  Blue Moon Farm only has 5 weekends of market left for the year!!

Special requests, garlic@bluemoongarlic.com   Join us on Facebook www.facebook.com/bluemoongarlic

ABIGAIL'S

Fayette County

Miss Abigail has won 16 KY State Fair ribbons for honey.

I will be at Southland if I don't sell out on Saturday.

Why is it recommended that you purchase honey from local beekeepers?

Here is one reason - honey laundering from China.

Click on -  http://eatocracy.cnn.com/2010/09/01/the-buzz-on-honey-laundering/?hpt=Sbin

Buy honey from beekeepers you trust!

MEAD MAKERS

We have some 12 lb honeys jugs for those who make mead.

We did our last honey harvest last Wednesday.

While it is the best honey harvest we have ever had due to the profusion of clover this summer, it is still limited.   So it may be time to look at your needs for the winter and decided how much honey you will need.  We will stay at the Market this fall into November unless it gets cold.  After that we shut down until April of 2011.

What to do when honey crystallizes - put jar on dashboard of car on sunny day and let the sun reliquify it.

ELMWOOD STOCK FARM

Scott County

Look for Elmwood moving "under cover" in the Pavillion near Short Street as spaces open up - hopefully we can provide you a more sheltered shopping experience as we move into the season for cooler weather.

We will continue attending each of the 4 farmers market (Tues, Thurs, Sat,

Sun) so please stop in to see the new fall crops that are coming ready for harvest each week.  We continue to offer a full selection of our organic meats and eggs along with our produce at each of the 4 markets also.

Elmwood and your other farms will continue to be set up on Saturdays downtown at Cheapside Park just like normal during the WEG games (and after - remember our outdoor location goes through Thanksgiving!)

This week we are featuring a new bounty of hard shelled Fall Squashes - Green Acorn, Butternut, Spaghetti, Delicata, Sweet Dumpling, and a small, but nice, selection of Pumpkins.  Decorative pumpkins and specialty gourds are also ready and with dry weather this year, they should last through the holiday season.

Other crops we are harvesting including Stringless Green Beans, Yellow Squash, Zucchini, Patty Pan Squashes, Okra, Eggplant, Bell Peppers, Hot Peppers, Cucumbers (new patch), Raspberries, and fresh cut Herbs.  We'll have some Kale and Swiss Chard, possibly some Radishes, and who knows now what other items will be ready the end of the week?

Update on Organic Meats:

We'll have certified organic frozen hens at every market.

We have a small selection of Lamb that has been picked up at the butcher and now ready as well.  Email if you have a specific cut in mind.

Our 100% grass fed, organic beef is fully stocked so now is the time to begin to think of stocking your own freezer!

Special News:

We do take pre-orders for Elmwood certified organic heritage and traditional broad-breasted turkeys either in person or through email.  They are processed at KY's small USDA  inspected facility outside Bowling Green and will be ready for pickup the weekend prior to Thanksgiving.

Just contact the farm (best by email) and we'll share more details with you on expected available sizes, the differences in taste and appearance dependent on heritage or broad-breasted breeds, and pricing.

Elmwood Stock Farm will be set up on Saturday mornings at the market through Thanksgiving.  Look for us to secure your own share of locally grown, organic, wholesome, healthy farm food each week of the growing season. These days, more than ever, it's important to know the source of your family's food and you can look to a local organic farm to meet your body's nutritional needs resulting in good health.

We offer our certified organic eggs from free-ranging hens on grass pasture, organic poultry, and grass-fed beef from our organic Angus cattle. Elmwood's meats, eggs, and vegetables are produced by us on our organic family farm in Scott County.

Visit our website to learn more, review our price lists, and pre-order your special items.

LA PETITE CREPERIE

Fayette County

La Petite Crêperie brings a little taste of France to the Bluegrass

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination.

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon appétit!
