"FRESH LOCAL HONEY" by NICK and BEV
NICKELS
Fayette County
We WILL BE at the Lexington Farmer's Market downtown on
Saturday, September 4th and at Southland Drive on Sunday, September 5th
if it doesn't rain.
We
offer the highest quality raw clover honey, pure beeswax candles and
pollen. Our delicious raw honey comes only from the fields and orchards
surrounding Lexington, Kentucky. Our raw honey is unheated, and
unprocessed so that all its attributes are fully preserved. Honeycomb in a jar
with strained honey is also available. Our candles are 100% unbleached, all natural beeswax. Beeswax candles
are long lasting and clean burning. They contain no toxins or soot common to
commercially produced paraffin candles. They are the candles of choice for
those who have asthma, allergies, or headaches due to paraffin or scented
candles. They are naturally fragrant with a subtle honey scent. They are made
with filtered beeswax; so they produce a bright, clear, steady flame and
beautiful illumination. Bee pollen is nature's most complete food, rich in vitamins, minerals,
amino acids and a complete source of protein. It can give us that extra edge to
stay healthy. An all-around nutritional supplement, bee pollen is ideal for
daily use. The bee pollen granules can be sprinkled over salad or cereal, added
to liquids or eaten as is.

NEWS FROM
THE RIVER:
Wednesday, September 1st 2010
Can you believe that September is already
here! Where did the time go? It's been so great a year, I
would like to savor it some more.
I received more honey ribbons at the State Fair.
What an honor to be praised by my fellow beekeepers.
And to have the Lexington Farmers Market in its new Saturday
home. I love the pavilion! It has helped keep the elements away
from me like the heat and the rain, so I can serve my customers.
Also wonderful things happening
at home, but I want you to go to my blog to find out what they are. Just
hit on the below address. It will take you right there. Plus
there are more pictures than I can put on my customer email - so hit on it now!

Thanks
to all of you who asked about me this past weekend. I am writing today, exactly one week after my
surgery, from the Danville Campus of BCTC, getting ready to teach my algebra
classes. So at least to this point it
seems as if everything went well. The
surgery took 3 hours due to old plates and screws being in the way. I was on crutches Wednesday and ready to go
home but my blood pressure dropped so they kept me another day. If I could get the swelling under control, I
would be doing great. I hope to be at
the market on Saturday - but somebody will be if I'm not.
Come
see us for your grilling needs. We have
been selling lots of Brats and Italian Sausage for cooking on the grill. Of course you all know that grilled pork
chops have got to be one of the foods of the gods. Also, consider buying something that you can
cook in the crock pot so that it doesn't heat up your kitchen too much. A Fresh Ham roast or Boston Butt roast cooked
all day in the slow cooker makes great pulled Pork or the world's Best barbeque
when you add your own special sauce!
Don't
forget to look through our recipe collection and find just what you need for a
meal in the coming weeks. Of course our
recipe collection is all about PORK! If
you find a recipe you like, we have copies we can give you.
We invite you to visit our
website (which still needs updating) www.hillsideheritagefarm.com
and also ask you to join us on Facebook.
Our entire family looks
forward to getting to know each of you.

The
animal encounters have been slow so far this year, but that doesn't mean
everything has been short of excitement. Ed barely chugged the red and white
truck home Saturday night after some technical problems.... It wasn't too much
of a hassle, depending on how you look at it. We only had to take everything
off the truck and put it in a trailer attached to our other vehicle, a Pathfinder,
after emptying the trailer of items we had stored in it. The Season begins!!!
We
have some of our own tomatoes starting to turn so we should have some before
long!!! We'll have big red tomatoes along with our juicy smaller
varieties, and heirlooms again this year (German Pinks, Black
Russians, etc.) We now have zucchini, squash, cucumbers, green onions,
beets, cabbage, kale, collar greens, and some banana peppers! Other great
veggie's coming along!! We have Bray Orchard Kentucky Peaches!! They were great

LA PETITE
CREPERIE
Fayette County
La
Petite Crperie brings a little taste of France
to the Bluegrass
The
idea for opening a walk-up crperie was hatched many years ago when I was a
student in France. After discovering crpes they became a staple of my diet because as a hot, quick meal
they fit right in with the poor student budget. The best part was that they were never far
away. Walk-up crpe windows are like
hot dog stands in New York;
they are everywhere.
My
husband Mark and I took many more trips to France and ate countless more
crpes. We decided that the good people
of Lexington
should be able enjoy them here. After
years of tweaking batters and looking for just the right griddle, and after
serving hundreds of crpes to our friends, family and my French students, we
think we've hit on a good combination.
La
Petite Crperie hopes to recreate the experience of ordering a French crpe emporter. Half of the fun is watching, smelling, and
anticipating how delicious it's going to be.
Our batter contains only eggs from the market, Weisenberger white and
wheat flours, Kentucky
produced whole milk, water, canola oil, sugar and salt. Our sweet crpe
fillings include honey and jam from Farmers' Market vendors, and the butter and
sugar crpes are made with homemade butter from the market. We also make a hearty breakfast crpe with
market eggs, cheese and vegetables. Our
menu will vary as other fruits, berries and vegetables come into season.
