The Lexington Farmers' Market August 25, 2010

Lexington feels a little "fuller" now that UK is back in session. We got the chance to see a lot of new students and parents down at the market last weekend checking out all the great things Lexington and its Farmers' Market has to offer. I think many out-of-towners were pleasantly surprised at the width and breadth of the market offerings and how vibrant a Saturday morning in the Fifth Third Pavilion can be. Hopefully by now most Lexingtonians are quite familiar with what the Lexington Farmers' Market brings to the community, but we know there are plenty of people who've never taken the chance to come see. Invite a neighbor, bring an out of town guest, or offer to drive senior citizen who can get out on his own. We always welcome new faces and love seeing our loyal customers!

 

This weekend you will find a booth in the center of the pavilion honoring the lives of Dr. Larry Turner and the other passengers on Flight 5191. You can purchase produce at any market stand and donate at this booth to help feed the hungry through the Lexington Rescue Mission. Check the "News Flash" section below for more information.

WEEKLY RECIPE

Squash Casserole

 

This family favorite recipe is contributed by Pam Miller, who was instrumental in starting the Lexington Farmer's Market during her term as Mayor of Lexington.


*Local yellow squash and zucchini are starting to wane, so look hard at market to find some and/or substitute some patty pan squash for one or both kinds.

 

Ingredients

 

2 cups thinly sliced yellow squash

 

2 cups thinly sliced zucchini squash

 

2 cups diced tomatoes

 

1 cup grated sharp cheddar cheese

 

� cup diced green pepper

 

� cup diced sweet onion

 

2 thinly sliced and chopped cloves of garlic

 

(Hold the tomatoes and cheese aside to add after the other ingredients have been fully cooked in the skillet)

 

Mix all the other vegetables together and pour into a large skillet that has had some extra virgin olive oil added.  Cook over medium high heat until everything has softened, about 10 minutes cooking time.  Stir the mixture frequently while cooking.

 

After cooking is complete, remove from heat and stir in cheese until melted and well blended.  Then mix in the tomatoes.  A small amount of salt and pepper may be added to suit taste.

 

Wipe the inside of a large casserole dish with melted butter or vegetable oil.  Pour everything from the skillet and smooth out the mixture into the bottom of the casserole dish.

 

Add a thin layer of freshly grated parmesan cheese over the vegetable mixture.

 

Cut up your choice of bread into � squares and arrange a solid layer of bread cubes on top of the vegetable, then lightly pat them down over the surface of the mixture.  Multigrain bread is a suggestion to add a slightly nutty taste, or day old wheat bread or other solid type bread works well.  Drizzle 2-3 tablespoons melted butter over the bread cubes and place in the oven that has been preheated to 350 degrees.

 

Let bake in the oven for 20 minutes until brown.  If more browning is desired, you can place under the broiler for a minute or two (watch carefully).

Remembering Flight 5191

 

"Giving Back" to Kentucky Agriculture,

Assisting the Less Fortunate

 

          Dr. Larry W. Turner was a passenger on Comair Flight 5191 that crashed upon takeoff early on Sunday morning August 27, 2006.  The Turner family will once again honor his memory by setting up a booth at the Lexington Farmers' Market to receive donations of produce for the Lexington Rescue Mission to provide meals for the homeless.  

 

          You are invited to participate on Saturday, August 28 by visiting the downtown Lexington Farmers' Market, purchasing produce and bringing it to the "Remembering Flight 5191" booth.  All donated produce will be given to the Lexington Rescue Mission to provide meals for the homeless in our community.

 

Dr. Turner was Associate Dean for Extension in the University of Kentucky College of Agriculture at the time of the crash.  One area in which he was very involved was helping farmers finding alternative crops after the tobacco buyout, including assisting several communities across the state begin farmers' markets.  Additionally, Dr. Turner was passionate about helping the less fortunate.  He had visited the Central Soup Kitchen in Washington, D.C. and was working to replicate that partnership between farmers and people in need in Kentucky.

 

The Turner family will always be extremely grateful for the tremendous support they received following the crash of Flight 5191.  This is one small way they in which they can honor Larry and "give back" to Kentucky agriculture and the community. 

 

 

SPECIAL EVENTS...

 

On Saturday and Sunday, the Friends of the Lexington Farmers' Market will be in attendance to sell market merchandise and answer questions.

 

Saturday: The Lexington Learning Cooperativekids' activity booth will feature Gymboree. The Lexington Legends will have giveaways, games and information about the Legends and events at Applebee's Park. The Alzheimer's Associationwill be promoting their 2010 Memory Walk event. Skullers Clock Restoration group will have more information restoring a Lexington landmark and icon. The Legacy Trailwill have more information and maps of the trail that leads from downtown to the Horse Park. As mentioned above, the Turner family will collect food donations to go to the Lexington Rescue Mission.

 




PARKING is always FREE at all of our markets if you know where to look!  On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

I write this the day before I go in to have my right knee replaced.  So, I won't be at the market for a week or two - but somebody from the family will be there on Saturdays and Sundays. 

Come see us for your grilling needs.  We have been selling lots of Brats and Italian Sausage for cooking on the grill.  Also, consider buying something that you can cook in the crock pot so that it doesn't heat up your kitchen too much.  A Fresh Ham roast or Boston Butt roast cooked all day in the slow cooker makes great pulled Pork or the world's Best barbeque when you add your own special sauce!

Try something different this week.  Put some honey on cheese.  We have wonderful cheese handmade cheese right in our Market.  How about a slice of crisp apple with Sapori D'Italia (www.artisankentucky.com) cheese on top dappled with my honey.  Yummy!


Try Bluegrass Chevre goat cheese too.  They are right next to me on Saturdays.  Put some of their feta cheese on salad greens and drizzle some of my honey on it as well.  Talk about an explosion of honey!

We are so happy to say that our BABY SQUASH MEDLEY is up to full production.  We've waited all summer to offer these beautiful yummy little squash to you.  We pick them 3 days a week, with the blooms left on when we can.  They pack all the punch of a full-size squash, and are simple to prepare.  Steam or saut�, add a dash of soy sauce, and you've got a delicious side dish!  They are also beautiful thinly sliced, raw, in a salad.   You just might see some BABY SQUASH in the omelets at Chef Jacob's Cookin' Up KY booth this Saturday too!

 

We've been saut�ing some of our Bracken County SHIITAKE or OYSTER MUSHROOMS in olive oil with garlic to top our salads.  The following dressing would be excellent on top!

 

It's an easy Basil Garlic Vinaigrette, using a few ingredients you can get from us at the market! :

1/8 ounce fresh minced BASIL

3/4 teaspoon minced fresh GARLIC

1/2 tablespoon regular or Bourbon Smoked SALT

1/2 teaspoon regular or Bourbon Smoked PEPPER

3/4 teaspoon sugar

1/2 teaspoon Dijon mustard

3/8 cup Balsamic vinegar

1 cup extra virgin olive oil

Thoroughly blend all ingredients except the oil in a blender or food processor.

Using a whisk, slowly whisk in the olive oil.

We'll see you at the market this weekend, and promise there will be Feta!  It's already made and looking good, so no excuses on this end.  At least three times in the past week, I have either heard on NPR, or seen on one of the food channels, an adventurous recipe for a watermelon salad with sliced black olives, red onions marinated in a couple of tablespoons of lime juice, feta, fresh mint and a splash of olive oil.  We will try it out before Saturday and give you a report.  I plan to mix the ingredients according to taste, but you can also Google the exact recipe and find several versions.

By request, we'll also have the tortas filled with sundried tomatoes, sunflowers seeds and herbs, as well as fresh chevre with chipotle.

And finally, we have ordered a commercial ice cream machine and hope to have sorbetto at our booth within the next couple of weeks - or as soon as we get all of our permits lined up.  Fresh chevre sorbetto anyone?                                                                                                                                                                                     Stay tuned!

Our fall raspberries are producing now. They were a bit early but they are of good flower and sweet. We are picking every Mon, Wed, Fri to supply our customers with the freshest fruit possible. No chemicals were used on the production of these berries.

 

We just had our last batch of chickens harvested for the season. We have a nice selection of Roasters and Fryers. They are pasture-raised without antibiotics, added hormones or any other synthetic substances, They are USDA inspected and vacuum sealed for ultimate freshness.

 

Our late crop of zinnias and sunflowers are in along with the various annuals we grow for the creation of our beautiful bouquets. We cut the day before market so we can ensure a long vase life for our customers. Please stop by and see what we have to offer on Tuesday, Thursday and Saturday.

New Update:  Tomatoes & Sweet Corn are Ready!

Our early-planted Heirloom Tomatoes are starting to ripen along with several crops of the Bi-Color Super Sweet Corn.  We are extra excited to have both of these prior to the first of July this year.

 

Summer veggies include:

Cucumbers including Slicers - salad Cukes, and English burpless; Yellow Squash and Green Zucchini, your favorite Baby Squash Mix, fresh Okra, stringless Snap Beans and the popular Roma Green Beans, Green Tomatoes, just-pulled Onions and an assortment of fresh Herbs including Sweet Basil.

 

We are still harvesting your favorite greens:

Fresh Cabbage, Green Garlic, Kale Greens, Swiss Chard, last of the Lettuces, and the Beet Greens found on our colorful red, gold, pink striped and even white beets.

 

Roots and tubers this week include:

Green Onions, baby Leeks, Purple Top Turnips, Fresh Beets as described above, and an assortment of Early New Potatoes - gold, red, and the all-blues - ready for a colorful potato salad.

 

Our fresh Flower Bouquets and our Edible Flowers to garnish your salads and desserts are also ready to harvest.  If you are working in your own garden or raised beds, we also have bags of organic compost with us at each market.

 

Elmwood Stock Farm continues to attend each LFM market day including Tuesdays and Thursdays at the Broadway/Maxwell location, Saturday downtown in the Park, and Sundays on Southland Drive - we can be found in front of the Goodyear store.  Look for us to secure your own share of locally grown, organic, wholesome, healthy farm food each week of the growing season. New Update on Meats and Eggs:

 

Our young pullet hens are starting to lay eggs along with our favorite older hens - stop by and visit with us at the market to learn more about how the age of the hen affects the size of the egg.

 

This Saturday, July 3rd, we'll have very fresh (never frozen) whole hens and various cuts of organic chicken.  We also have frozen poultry each market day.

 

We offer our certified organic eggs from free-ranging hens on grass pasture, organic poultry, and grass-fed beef from our organic Angus cattle. RAGGARD CREEKSIDE FARM

The animal encounters have been slow so far this year, but that doesn't mean everything has been short of excitement. Ed barely chugged the red and white truck home Saturday night after some technical problems.... It wasn't too much of a hassle, depending on how you look at it. We only had to take everything off the truck and put it in a trailer attached to our other vehicle, a Pathfinder, after emptying the trailer of items we had stored in it. The Season begins!!!

 

We have some of our own tomatoes starting to turn so we should have some before long!!! We'll have big red tomatoes along with our juicy smaller varieties, and heirlooms again this year (German Pinks, Black Russians, etc.) We now have zucchini, squash, cucumbers, green onions, beets, cabbage, kale, collar greens, and some banana peppers! Other great veggie's coming along!! We have Bray Orchard Kentucky Peaches!! They were great this week. Sweet and juicy!!!

 

We'll also have some tomatoes, beans, and corn from our southern states until ours are ready!! We will also be starting on Tuesday and Thursday at Maxwell and Broadway on June 29th!! We'll still be at Saturday and Sunday market.

La Petite Cr�perie brings a little taste of France to the Bluegrass

 

The idea for opening a walk-up cr�perie was hatched many years ago when I was a student in France.   After discovering cr�pes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up cr�pe windows are like hot dog stands in New York; they are everywhere. 

 

My husband Mark and I took many more trips to France and ate countless more cr�pes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of cr�pes to our friends, family and my French students, we think we've hit on a good combination.  

 

La Petite Cr�perie hopes to recreate the experience of ordering a French cr�pe � emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet cr�pe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar cr�pes are made with homemade butter from the market.   We also make a hearty breakfast cr�pe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.
