What a relief! This break in the weather has provided a much needed respite for our crops and our farmers. We hope that everyone is getting into a back to school routine or having a pleasant wind down to their summer. Don't forget that the Lexington Farmers' Market is a year-round market and our outdoor markets continue until the end of October for the Sunday market and the end of November for the Tuesday, Thursday and Saturday markets. There are many more months of outdoor farmers's markets and fresh produce and other items to take advantage of, so come see us every week!

WEEKLY RECIPE

Corn Fritters with Salsa

yield: Makes 2 (brunch or lunch main course) servings

active time: 25 min

total time: 35 min

Ingredients

For salsa

  • 2 plum tomatoes, coarsely chopped
  • 1/3 cup chopped white onion
  • 2 tablespoons chopped fresh cilantro
  • 1 to 2 tablespoons chopped pickled jalape�o chilies
  • 1 tablespoon fresh lime juice


For fritters

  • 2 ears corn, shucked
  • 1 large egg
  • 1/2 cup milk
  • 1/3 cup yellow cornmeal
  • 2 1/2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 to 3 tablespoons vegetable oil

 

Accompaniment: sour cream

Preparation

Make salsa:
Stir together all salsa ingredients and season with salt.

Make fritters:
Cut corn kernels from ears and scrape cobs to extract juice, then discard cobs. Whisk together egg and milk until smooth and stir in cornmeal, flour, and salt. Stir in corn, including juice.

Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderate heat until hot but not smoking, then drop in 2 tablespoons batter each for 4 fritters. Fry until lightly browned, about 2 minutes per side, and drain on paper towels. Make more fritters in same manner, adding oil as necessary.

Serve fritters with salsa.

The 3rd Annual Slow Food Locust Grove Family picnic will take place, Sunday, August 22nd from 11 a.m. - 4:30 p.m. on the grounds of Historic Locust Grove.

 

Locust Grove, an 18th century farm, is an original home of "slow food"

with our hearth kitchen, smoke house, and dairy - the perfect location to celebrate food and farming.

 

This family-oriented festival will feature:

 

* Cast Iron Chef Cook-off contest

* "Best Dessert with local fruit" contest

* Exhibits and demonstrations by slow crafters and green businesses.

* Screening of a new documentary called FRESH, the movie

* Bluegrass and Kentucky music by Whistlin' Rufus

 

Plant, produce and seed swaps are encouraged! Local chefs will prepare local food to purchase and bringing your own picnic basket is also encouraged. Drinks can be purchased on-site. Gelato Gilberto will be serving fresh local gelato. Ears What's Popping will sell local popcorn.

 

We'll have talks and demonstrations on how to raise chickens in your backyard, canning and preserving your bounty.  Children can learn how to make butter and hearth cooking will take place.  Also, learn how to make cheese and to smoke meats.

 

Admission to the event is only $5 car, bikers & walkers free, and it also includes a visit to the recently restored ca. 1790s home and gardens.

SPECIAL EVENTS...

 

On Saturday and Sunday, the Friends of the Lexington Farmers' Market will be in attendance to sell market merchandise and answer questions.


Saturday: Chef KC Bruch and students from Sullivan University's culinary program will be doing cooking demonstrations with items right from the market.

The Lexington Learning Cooperativekids' activity booth will feature the Lexington History Museum. The Lexington Legends will have giveaways, games and information about the Legends and events at Applebee's Park. Greyhound Pets of Americawill be back with information on retired racing dog adoption.

 

The Homegrown Authors series will return again this week. The Carnegie Center for Literacy and Learning and the Morris Bookshop are cosponsoring the series this summer at the Lexington Farmers' Market. On select Saturdays you can meet a local author and buy a signed copy of his or her book at market. This week Barbara Napier (author of Hot Food and Warm Memories) and Evelyn B. Christensen (author of numerous learning aids for students)

 

 

Sunday: Home at Lastwill have information on pet adoption and Century 21 will be fundraising for Easter Seals.



PARKING is always FREE at all of our markets if you know where to look!  On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

We started filling mail orders for GARLIC today, so things are even busier than they have been!   It's a nice time of reconnecting with all our "garlichead" friends around the country, but takes a LOT of hours to get it all done.

 

We also picked our first SQUASH of the year today, can you believe it?  We'll have a limited amount of our BABY SQUASH MEDLEY this week, predominately Ronde de Nice- an heirloom, light green round zucchini and some larger ones perfect for stuffing!

 

And now, in the interest of saving a few minutes, I will repeat last week's entry......

 

Ready to make pesto??  Approximately one cup of pesto requires 1 cup of loosely packed BASIL LEAVES, so base your calculations on that.  Epicurious.com suggests this basic recipe:

Ingredients:

1 cup packed fresh basil leaves

2 tablespoons pine nuts or shelled pistachios

1 large clove garlic, mashed

2 tablespoons grated Parmesan cheese

3 to 4 tablespoons extra-virgin olive oil

 

Directions:

In a blender or food processor fitted with the metal blade, pulse until minced the basil, pine nuts, garlic, and Parmesan cheese.

With the motor running, slowly pour the olive oil in a steady stream and process until emulsified.

Transfer to a small bowl, cover, and refrigerate, until ready to serve, up to 5 days.

Makes about 1 cup

Another recipe uses a cup of olive oil and a cup of heavy cream to make a pasta sauce....YUM!!

 

We'll have lots of FRESHLY CUT BASIL again this weekend....you'll probably smell it if you're anywhere near our booth!  Of course we'll have the GARLIC for your recipe too!  If you are just too hot and worn out to make your own pesto, we've had folks just blend basil in a little olive oil and add it to our GARLIC SCAPE PESTO! 

 

Have you seen our beautiful HANDCRAFTED GARLIC BRAIDS yet?  We'll have a full rack of them again this week.  They make great wedding or housewarming gifts, or a thoughtful birthday gift for your favorite foodie!  Braids were devised centuries ago as a way to store garlic long term.  The entire plant is left intact, which slows the evaporation process of the cloves.  The extra added bonus is that they are so beautiful to look at!!

 

BLT season is in full swing, and we are having a hard time keeping Stone Cross Farm BACON in stock!  Folks are raving over its flavor, and with the fresh tomatoes available right now, it makes a sandwich that can't be beat!   Stone Cross' other PASTURE-RAISED PORK products are equally great!  PORK CHOPS and ROASTS (shoulders for pulled pork!), TENDERLOINS, and a whole array of European Sausages.... We'll see you at the market this weekend, and promise there will be Feta!  It's already made and looking good, so no excuses on this end.  At least three times in the past week, I have either heard on NPR, or seen on one of the food channels, an adventurous recipe for a watermelon salad with sliced black olives, red onions marinated in a couple of tablespoons of lime juice, feta, fresh mint and a splash of olive oil.  We will try it out before Saturday and give you a report.  I plan to mix the ingredients according to taste, but you can also Google the exact recipe and find several versions.

By request, we'll also have the tortas filled with sundried tomatoes, sunflowers seeds and herbs, as well as fresh chevre with chipotle.

And finally, we have ordered a commercial ice cream machine and hope to have sorbetto at our booth within the next couple of weeks - or as soon as we get all of our permits lined up.  Fresh chevre sorbetto anyone?                                                                                                                                                                                     Stay tuned!

Our fall raspberries are producing now. They were a bit early but they are of good flower and sweet. We are picking every Mon, Wed, Fri to supply our customers with the freshest fruit possible. No chemicals were used on the production of these berries.

 

We just had our last batch of chickens harvested for the season. We have a nice selection of Roasters and Fryers. They are pasture-raised without antibiotics, added hormones or any other synthetic substances, They are USDA inspected and vacuum sealed for ultimate freshness.

 

Our late crop of zinnias and sunflowers are in along with the various annuals we grow for the creation of our beautiful bouquets. We cut the day before market so we can ensure a long vase life for our customers. Please stop by and see what we have to offer on Tuesday, Thursday and Saturday.

New Update:  Tomatoes & Sweet Corn are Ready!

Our early-planted Heirloom Tomatoes are starting to ripen along with several crops of the Bi-Color Super Sweet Corn.  We are extra excited to have both of these prior to the first of July this year.

 

Summer veggies include:

Cucumbers including Slicers - salad Cukes, and English burpless; Yellow Squash and Green Zucchini, your favorite Baby Squash Mix, fresh Okra, stringless Snap Beans and the popular Roma Green Beans, Green Tomatoes, just-pulled Onions and an assortment of fresh Herbs including Sweet Basil.

 

We are still harvesting your favorite greens:

Fresh Cabbage, Green Garlic, Kale Greens, Swiss Chard, last of the Lettuces, and the Beet Greens found on our colorful red, gold, pink striped and even white beets.

 

Roots and tubers this week include:

Green Onions, baby Leeks, Purple Top Turnips, Fresh Beets as described above, and an assortment of Early New Potatoes - gold, red, and the all-blues - ready for a colorful potato salad.

 

Our fresh Flower Bouquets and our Edible Flowers to garnish your salads and desserts are also ready to harvest.  If you are working in your own garden or raised beds, we also have bags of organic compost with us at each market.

 

Elmwood Stock Farm continues to attend each LFM market day including Tuesdays and Thursdays at the Broadway/Maxwell location, Saturday downtown in the Park, and Sundays on Southland Drive - we can be found in front of the Goodyear store.  Look for us to secure your own share of locally grown, organic, wholesome, healthy farm food each week of the growing season. New Update on Meats and Eggs:

 

Our young pullet hens are starting to lay eggs along with our favorite older hens - stop by and visit with us at the market to learn more about how the age of the hen affects the size of the egg.

 

This Saturday, July 3rd, we'll have very fresh (never frozen) whole hens and various cuts of organic chicken.  We also have frozen poultry each market day.

 

We offer our certified organic eggs from free-ranging hens on grass pasture, organic poultry, and grass-fed beef from our organic Angus cattle. RAGGARD CREEKSIDE FARM

The animal encounters have been slow so far this year, but that doesn't mean everything has been short of excitement. Ed barely chugged the red and white truck home Saturday night after some technical problems.... It wasn't too much of a hassle, depending on how you look at it. We only had to take everything off the truck and put it in a trailer attached to our other vehicle, a Pathfinder, after emptying the trailer of items we had stored in it. The Season begins!!!

 

We have some of our own tomatoes starting to turn so we should have some before long!!! We'll have big red tomatoes along with our juicy smaller varieties, and heirlooms again this year (German Pinks, Black Russians, etc.) We now have zucchini, squash, cucumbers, green onions, beets, cabbage, kale, collar greens, and some banana peppers! Other great veggie's coming along!! We have Bray Orchard Kentucky Peaches!! They were great this week. Sweet and juicy!!!

 

We'll also have some tomatoes, beans, and corn from our southern states until ours are ready!! We will also be starting on Tuesday and Thursday at Maxwell and Broadway on June 29th!! We'll still be at Saturday and Sunday market.

La Petite Cr�perie brings a little taste of France to the Bluegrass

 

The idea for opening a walk-up cr�perie was hatched many years ago when I was a student in France.   After discovering cr�pes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up cr�pe windows are like hot dog stands in New York; they are everywhere. 

 

My husband Mark and I took many more trips to France and ate countless more cr�pes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of cr�pes to our friends, family and my French students, we think we've hit on a good combination.  

 

La Petite Cr�perie hopes to recreate the experience of ordering a French cr�pe � emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet cr�pe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar cr�pes are made with homemade butter from the market.   We also make a hearty breakfast cr�pe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season. 

 

La Petite Cr�perie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm. and most Sundays at Southland from 10:00 until 2:00.  You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon app�tit!
