The Lexington Farmers' Market May 5, 2010
Greetings!

Lilies

There's no better place to shop for Mother's Day than the Lexington Farmers' Market. Flowers, truffles, soaps, jams and jellies, body care products, oils and spices, LFM merchandise and gift certificates all make great unique gifts for mom. And of course we have plenty of food to make a special brunch or breakfast in bed. Spend the day with Mom strolling through the Sunday market and grab a bite to eat there, or get some ingredients to make lunch together. Strawberries are coming in this week, so come early to make sure you'll have them for this week's recipe.

After the beautiful weather the last few days it's easy to forget how severe the storms were last weekend. We'd like to thank all of our dedicated customers and vendors who made it out to the market on Saturday, and apologize if anyone tried to brave the weather Sunday, as it was just too bad out to set up. We'd also like to remind you how shopping at the market can get you in touch with the realities of farming. Many of our farmers had some crop loss and while we are thankful that it doesn't look like anyone will be out for the season, major weather events like last weekend can significantly impact a farmer's bottom line and what he or she can bring to market. Thank you for supporting your local farmer and your local economy!

The Tuesday/Thursday market on S. Broadway and Maxwell opened this week from 7am-4pm so you won't have to wait until the weekends to see your favorite farmers and vendors.

Don't forget we accept Debit and EBT cards at all markets! Come to the Friends of the Farmers' Market table to swipe your card.

Weekly Recipe
Strawberry Shortcakes

Ingredients

Strawberries:

  • 4 pints strawberries, lightly rinsed, hulled and halved
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sugar
  • 2 cups heavy (whipping) cream
  • 1 tablespoon sugar
  • 6 shortcakes (see recipe below), for serving
  • 6 whole strawberries, for garnish

Shortcakes:

  • 2 cups self-rising flour
  • 2 1/2 tablespoon sugar
  • 1/8 teaspoon salt
  • 1/2 cup (1 stick) cold, unsalted butter, cut into small pieces
  • 3/4 cup milk
  • 2 tablespoon heavy (whipping) cream

Preparation

For the shortcakes:
1. Preheat the oven to 400°F. Grease a baking sheet.

2. Combine the flour, sugar and salt in a bowl.

3. Add the butter. Using a pastry blender or your fingers, rub it into the dry ingredients until mixture resembles a coarse meal. Stir in the milk until a very soft dough is formed. Do not overwork.

4. Drop the dough in 6 equal portions onto the prepared baking sheet. Lightly pat the dough into rounds-3 to 3 1/2 inches in diameter-and lightly brush the tops with the cream.

5. Bake the shortcakes in the center of the oven for 15 to 20 minutes or until golden brown. Cool on a wire rack.

For the Strawberries:
1. Place strawberries in a bowl. Sprinkle with lemon juice and sugar, then gently toss with a rubber spatula. Let rest for 1 1/2 to 2 hours for juices to develop.

2. Just before serving, whip cream with 1 Tbsp sugar until it holds soft peaks.

3. To serve, slice off the top third of each shortcake. Place the bottoms on 6 dessert plates and top with 1/3 cup of the prepared berries and juice, plus a spoonful of whipped cream. Cover with the top. Spoon over more berries and juice, then dollop with whipped cream. Garnish each with a whole berry and drizzle with any remaining juice.

COMMISSIONER FARMER LAUNCHES 'EAT TO WIN'
TO ENCOURAGE HEALTHY LIFESTYLE CHOICES

FRANKFORT, Ky. - Agriculture Commissioner Richie Farmer has launched a campaign to encourage Kentucky students to adopt healthy eating habits that will last a lifetime.

Eat to Win is an educational program aimed at teaching children about the advantages of eating fresh fruits and vegetables and buying locally produced Kentucky Proud food while maintaining a healthy weight and being physically active. Former University of Kentucky basketball star and current NBA player Tayshaun Prince and professional golfer Whitney Wade, a native of Glasgow, have joined Commissioner Farmer to promote the program.

"It's important for children to eat right in order to maximize their performance in the classroom, on the field of play and in the game of life," Commissioner Farmer said. "Eat to Win is designed to help students make positive lifestyle choices."

Posters promoting the program are being posted in schools throughout the Commonwealth. The Eat to Win Web site, www.eattowinky.com, contains valuable information about the need for fruits and vegetables in the everyday diet; the importance of buying fresh, local Kentucky Proud foods; nutritional tips, and much more.

Commissioner Farmer launched Eat to Win in response to statistics from the Centers for Disease Control and Prevention that revealed that:
         Only 13.2 percent of Kentucky's youth eat fruits and vegetables five or more times a day, compared with the national average of 21.4 percent;
      40.5 percent of Kentucky students drink one or more soft drinks per day, compared with the national average of 33.8 percent;
59 percent of American high school students skip breakfast three or more times a week; and
37 percent of Kentucky youth are either obese or overweight.
"In this day and age, it's tough for children as well as adults to make sure they're not just well fed, but fed well," Commissioner Farmer said. "Eat to Win is a tool to help our young people grow up to be healthy, happy and successful."

PARKING is always FREE at all of our markets if you know where to look!  On Saturday it's as easy as parking in the Financial Center Garage across the street from Cheapside Park and next to the blue 5/3 building. This lot is generously provided to us by Central Parking and for this we are extremely grateful.  Beyond that garage, all street parking is free on Saturdays and there are also several pay lots in the area.

Finally, if you have ever lost items at any of our markets and they have not been returned, please check with Jeff, the market manager, during market hours or by phone at (859) 608-2655.

HERE'S A BIT OF WHAT YOU'LL FIND AT MARKET THIS WEEK...

"FRESH LOCAL HONEY" by NICK and BEV NICKELS

Fayette County

We WILL BE at the Lexington Farmer's Market downtown on Saturday, May 8th and at Southland Drive on Sunday, May 9th if it doesn't rain.

We offer the highest quality raw clover honey, pure beeswax candles and pollen.

Our delicious raw honey comes only from the fields and orchards surrounding Lexington, Kentucky. Our raw honey is unheated, and unprocessed so that all its attributes are fully preserved. Honeycomb in a jar with strained honey is also available.

Our candles are 100% unbleached, all natural beeswax. Beeswax candles are long lasting and clean burning. They contain no toxins or soot common to commercially produced paraffin candles. They are the candles of choice for those who have asthma, allergies, or headaches due to paraffin or scented candles. They are naturally fragrant with a subtle honey scent. They are made with filtered beeswax; so they produce a bright, clear, steady flame and beautiful illumination.

Bee pollen is nature's most complete food, rich in vitamins, minerals, amino acids and a complete source of protein. It can give us that extra edge to stay healthy. An all-around nutritional supplement, bee pollen is ideal for daily use. The bee pollen granules can be sprinkled over salad or cereal, added to liquids or eaten as is.

BlueMoon Farm ***Sustainably Grown***

Madison County

What a lousy market weekend last week!  We are still drying things out!  The sandbags which hold our tents down can really soak up a LOT of water!  They are draining in the sun, but have a long way to go!  After the extra stress of Saturday, we were really glad to be home listening to the rain pounding down all day Sunday on our tin roof.  And glad too, to be here when the drain outside the cellar door plugged up and water started pouring in under the door!!  What a rain!!  We dumped our rain gauge at 6 inches Sunday morning, and at 11 PM that night it was back up to 5 1/2 inches and it was still raining.  Monday morning the ground had gotten so soggy that the gauge had fallen over, so we have to estimate that we got at least 12" altogether.  Our neighbor says his gauge showed the same.  The Kentucky River came up into our bottoms, and it was an amazing sight on Monday, but it is now going down fast, and things look pretty good down there!  We feel lucky!  Others had it much worse than we did.

And so we prepare for Mothers' Day weekend!  We will be bringing some beautiful MULTI-HERB POTS for an instant herb garden for your Mom.  Or select your own choice of herbs from our many varieties of individual POTTED HERBS.....from BASIL,  LAVENDER, and LEMON GRASS,  to ECHINACEA, ROSEMARY, OREGANO and most everything in between!  Choose Mom's favorites and plant her a small kitchen garden right outside the door......or in a pot on the deck!

Are you planning to fix Mom breakfast in bed Sunday morning?  You can get nice fresh eggs from a couple of different vendors at the market, and we have everything else to make a spectacular celebration breakfast......from a BOUQUET of WILDFLOWERS to adorn the tray or table to BACON or SAUSAGE from Stone Cross Farm in Taylorsville,  terrific ARTISAN BREAD from Sunrise Bakery in Lexington, all kinds of KENNY'S CHEESES from Barren County to put in the ASPARAGUS omelet made with Colcord Farm ORGANIC ASPARAGUS from Bourbon County, and seasoned our own yummy GARLIC POWDER.

Maybe a nice lunch or dinner is more your Mom's desire?  We can fix you up for a casual barbeque, with BURGERS, HOT DOGS, or BRATS,  or a more formal meal of STEAK, FILET MIGNON, PORK TENDERLOIN or BEEF ROAST.  We even have seasonings to help you out......from BOURBON BARREL FOODS in Louisville.....the only SMALL BATCH SOY SAUCE in the U.S.  It's made from KY-grown non-GMO soybeans, and aged in bourbon barrels.  Their vegetarian-friendly WORCESTERSHIRE SAUCE also mellows in bourbon barrels before bottling.  The teriyaki (which they call KENTUCKYAKI) is sweetened with KY sorghum, and flavored with KY Bourbon, and the SALT, PEPPER and PAPRIKA are all SMOKED over  bourbon barrel wood fires.  If your Mom loves to cook, you might think about a gift pack of the smoked salt, pepper and paprika along with some of our own GARLIC POWDER or PEPPER POWDERS!

While our LETTUCES,  SPINACH, RADISHES and BROCCOLI RAAB were totally washed out in the flood, I'm sure you can find some great ones from other vendors.

We'll have our GARLIC SCAPE PESTO to use in a vinaigrette for the salad or as a dressing for the asparagus, or CHAMPAGNE DRESSING- delicious right out of the container!  And for a decadent dessert, a yummy PASTRY from Sunrise Bakery heated slightly and served with a scoop of vanilla ice cream!!  To really WOW your Mom, how about a warmed GARLIC CHOCOLATE CHIP COOKIE with a scoop of ice cream?   The flavor combination is gaining fans by the week!

Need a small "thinking of you on Mothers' Day" gift for a friend?  How about a lovely bar of HANDMADE SOAP from Stone Cross Farm?  They're gentle on your skin and have wonderful scents.

Please let us know if there's anything special we can help you with.... garlic@bluemoongarlic.com

BlEUGRASS CHEVRE

Fayette/Clark County

We'll be at the market Saturday with plenty of special things for Mother's Day, including our soon-to-be famous chocolate goat cheese.  I know, I know, some of you made funny faces at such a concoction - UNTIL YOU TRIED IT!   It's a cross between chocolate mousse and chocolate cheesecake, and decorated with edible flowers, of course.  There were a few strawberries at the market last week, hopefully more this week, and they are a luscious accompaniment.

We'll also have lots of pretty goat milk soaps - lavender, mint and citrus - packed in their own little gift bags. And Lucy will be there with her Woodford County sorghum.

Don't forget, you can stay warm and dry no matter what the weather, in the snug new Pavilion.

Come for lunch or dessert and bring a big bag.

Let us know if you need anything special - Susan at gourmetgoats@msn.com

RAGGARD CREEKSIDE FARM

Shelby County

Life on the farm has changed dramatically since the arrival of my granddaughter, Kali.  She is almost 9 months old and has a hard time letting us get any work done!   While we transplant tomatoes she sits with her feet propped up on the tray of her stroller for only a limited amount of time before she starts to yell at us to gain attention.  If that doesn't work she starts looking for anything close to her she can get her hands on.    I'm sure she can't wait to get her hands in the dirt and try to "help" us out. She keeps us on our toes.

We will be coming to market this Saturday!! (Also, Sunday on Southland at same location.) We will be located on back row on Short Street behind the pavilion but up from the location last year. Look for the red Creekside Farm sign above our tents. This Saturday, we will have lots of tomato plants!! Many varieties, heirloom, pinks, yellows, blacks and lots of reds!!!  Spinach, radishes and green onions are also ready. We'll also have some tomatoes, beans and other vegetables from our southern states until ours are ready...

Come by and see us!!

LA PETITE CREPERIE

Fayette County

La Petite Crêperie brings a little taste of France to the Bluegrass

The idea for opening a walk-up crêperie was hatched many years ago when I was a student in France.   After discovering crêpes they became a staple of my diet because as a hot, quick meal they fit right in with the poor student budget.    The best part was that they were never far away.   Walk-up crêpe windows are like hot dog stands in New York; they are everywhere.

My husband Mark and I took many more trips to France and ate countless more crêpes.  We decided that the good people of Lexington should be able enjoy them here.   After years of tweaking batters and looking for just the right griddle, and after serving hundreds of crêpes to our friends, family and my French students, we think we've hit on a good combination.

La Petite Crêperie hopes to recreate the experience of ordering a French crêpe à emporter.  Half of the fun is watching, smelling, and anticipating how delicious it's going to be.  Our batter contains only eggs from the market, Weisenberger white and wheat flours, Kentucky produced whole milk, water, canola oil, sugar and salt. Our sweet crêpe fillings include honey and jam from Farmers' Market vendors, and the butter and sugar crêpes are made with homemade butter from the market.   We also make a hearty breakfast crêpe with market eggs, cheese and vegetables.   Our menu will vary as other fruits, berries and vegetables come into season.

La Petite Crêperie will be open most Saturdays at Cheapside from 7:00 am until 2:00 pm and most Sundays at Southland from 10:00 until 2:00.See us at Mayfest in Gratz Park on  May 8-9.   You can visit our website, www.petitecreperie.com to find out exactly where we will be and when.  Bon appétit!

Before or after the market, come by our shop at 406 South Broadway for a shot of Cuban coffee, stuffed ravioli, delightful biscotti (which are perfect for dunking in your Cuban coffee) all made in house by our own Chef Stacey.

HILLSIDE HERITAGE FARM

Garrard County

Greetings from one on the new members of the Lexington Farmers' Market.  I wanted to introduce ourselves to those of you who are friends of the LFM and receive this newsletter. We are a family farm in Garrard County.  My wife teaches Kindergarten in Danville, I teach Math and Introductory Computer classes at BCTC, Maria lives in Lexington and does landscaping and is tending our apple orchard, Clay is a sophomore at Berea College studying Agriculture, and Hannah is in Middle School in Garrard County, both of them help me with our farm chores.

We have a 100 acre hill farm within a stones throw of the Kentucky River. I just returned from my morning chores with the joy that comes from new life.  We were blessed with a new litter of pigs this morning.  This makes a total of 71 piglets that have been born this spring and we are only about half way through our spring farrowing.  We expect to have approximately 150 piglets this spring and then to repeat that number again this fall.  I'll be keeping you posted with information from the farm as the year progresses.  Our herd is made up primarily of Tamworths and Berkshires with a sprinkling of Large Black sows - all heritage breeds of hogs that do not thrive under the confinement conditions of modern factory farming.  We have found the ideal farm raised meat hog to be a cross between these breeds.  It gives us a pig that thrives when living outside on grass and dirt, grows at a moderate rate so that the meat is tasteful, and has just the right amount of fat.

With that information you have probably already determined that we are the market's new pork producers.  We will be offering you the best pasture-raised, antibiotic, hormone and steroid free pork you have ever tasted.  We will have homegrown vegetables and fruits as the season progresses, but our emphasis will always be on providing you with the type of pork that is hard to find anywhere else.

We invite you to visit our website (which we will be updating soon) www.hillsideheritagefarm.com and also ask you to join us on Facebook where I plan to start doing regular updates.

Our entire family looks forward to getting to know each of you.

John Contini
