Today I'm going to give you "The REAL Facts" about the egg study that's been making the rounds in the press, a favorite recipe, and an end of summer sale on my Pilates DVD's. I'm also going to share an inspirational true story. Enjoy!

 

My friend Jill had been obese and diabetic for her entire adult life, then morbidly obese, and she was still getting bigger.... One day she simply said - enough is enough! She talked with her doctor, and underwent gastric bypass surgery. In gastric bypass the stomach is surgically reduced so you can only eat a very small amount of food at any one sitting. Nutrition and fitness counseling is provided, but many people find it difficult to follow the recommended lifestyle changes. Most people do lose about half of their body weight, but, in fact, by the third year many begin gaining it back, and after five years most are seriously overweight again. 

When I saw Jill about a year ago, she was indeed, half the person she had previously been. I was very impressed, but that was only the beginning of her new healthy lifestyle. She truly meant it when she'd said - never again! So, after having lost that significant amount of weight, Jill began a weekly exercise routine that included walking, first around the block, then a mile, then she started jogging. Last year she ran a 5K (3 miles). This spring she did a 10K (6.2 miles), and last weekend she completed a half marathon, 13.1 miles, on her 50th birthday! Wow, how cool is that? What a fabulous birthday gift to herself and her family! Friends and family, including myself, came from around the country to run with her or to cheer her on. She is truly an inspiration to us all. She looks fabulous, her risk for heart disease has plummeted, and her blood sugar is normal. And not only has she kept the weight off, but she is continuing to lose fat and gain muscle, making her even healthier and more fit. You go girl!

Go Ahead and Eat Some Eggs! 

Last month, the journal Atherosclerosis published a study examining the association between the number of egg yolks consumed per week and the amount of plaque in the carotid artery of stroke patients. The study concluded that eating egg yolks may be bad for people at risk for cardiovascular disease. Smoking was used as one of the factors in the study, but somehow when the media reported about the study, egg consumption became just as bad as smoking when it comes to speeding up plaque deposits! Yes I know, hard to imagine the media would sensationalize something...

So, many of you have asked for my opinion on this study, as it's been given a lot of press, so let me assure you - YOU DO NOT have to stop eating eggs! This study does not agree with previous studies and here's why:

This particular study is an observational one, not a double blind, clinical study. The researchers merely asked stroke victim about their smoking habits and egg consumption. Other lifestyle habits, such as saturated fat intake, waist circumference, amount of exercise, etc. were not taken into consideration. Drawing the conclusion that eggs are bad for you based upon a study like this is ludicrous. I'm going to completely ignore the media hype about this study and continue eating eggs. I recommend you do the same.

 

And now that you know eggs are not as bad for you as smoking a pack a day :), here's my favorite recipe for Eggs Benedict with Ned's Faux Hollandaise sauce: 

 

Faux Eggs Benedict

 

Faux Hollandaise Sauce  (Makes enough for 4-5 eggs)

~ 2 egg yolks, 2 TBSP lemon juice, 10 oz. butter (melted & warm) (or warm oil), salt & white pepper to taste

~ Puree yolks, juice, s & p in blender on medium, then slowly drizzle butter or oil in while blending, till you get the desired consistency. Do not add the butter or oil all at once.

 

Poached Eggs

~ Barely boiling water in a shallow pan, with 1 tsp white vinegar

~ Crack each egg into a ramekin, then tip onto a spoon and gently into the water

 

Assembly

~ Toasted English Muffin half on bottom, smear with Hollandaise, then add your choice of smoked salmon/ham/Canadian bacon/prosciutto (and/ or spinach for Florentine)

~ Put the poached egg on top and drizzle with Hollandaise, add a pinch of cayenne or paprika, and garnish with chive, parsley or basil

 

Yowza, that's good!
