Greetings!
It's blueberry time! Blueberries are hands down my favorite fruit, I eat them every day for either breakfast or lunch. And best of all, they are very high in antioxidants, making them one of the healthiest fruits!
I remember as a kid, my Mom would make a hole in an empty coffee can - a very large coffee can, and string a rope through so that we kids could wear the can around our necks. Then, we'd all pile into the car and ride across town to a piece of undeveloped property that my family owned to pick the wild blueberries. We often got scolded for eating more than we picked, but they were just too yummy to resist! Wild blueberries are smaller than the cultivated variety that you see in most supermarkets, but they are also much sweeter. Truly, this was the only item that we kids enjoyed picking! Beans or tomatoes from our garden were not nearly so much fun!
Ned and I are off to Maine next week for some biking and kayaking and I plan to bring as many wild blueberries home as we can fit into the car! The wild variety that grows there is what I remember blueberries from my childhood tasting like. They are just as delicious frozen as they are fresh and a freezer full of wild blueberries is a dream come true for me!
Since July is also National Blueberry month, I've included a fabulous blueberry parfait recipe for your summer enjoyment!

Yummy Summer Berry Parfait |
This is another hot weather favorite of mine. Just the ticket when you want something cool, creamy and refreshing for dessert. You can use my favorite blueberries, or blackberries, strawberries, peaches or any combination you like. You can also use frozen berries, as long as you thaw them first...
Ingredients:
1 cup fresh blueberries
1 cup fresh blackberries
2 cups plain Greek Yogurt
1/2 cup chopped walnuts or slivered almonds
1 ounce dark chocolate
Spoon 1/4 cup blackberries in the bottom of each parfait glass
Spoon in 1/4 cup Yogurt
Spoon in 1/4 cup of blueberries
Add another 1/4 cup Yogurt
Sprinkle nuts on top
Grate or peel the dark chocolate onto the top
Makes 4 servings.
This yummy dessert has lots of antioxidants from both the chocolate and the berries, approx: 280 calories, 9 grams of fat, 12 grams of protein, 22 grams sugar, and 5 grams of fiber per serving.
If you want a fancy garnish, use an edible flower or a mint leaf!
