Greetings!
To all my friends in the USA, have a great 4th of July holiday, for everyone else, my wish is that you have a lovely week! 4th of July, being such a big, very american holiday, I will not be publishing the newsletter next week. Also, my dear friend from Newcastle on Tyne, England is going to be visiting and we'll be very busy showing her all the sights!
We'll be hiking up to some of the best views in the country while Jacky is here and I'll be teaching her some exercises to do before and after our hiking adventures - ever the coach!
When we do any outdoor adventure like hiking, kayaking, and sailing, or star gazing, Ned and I have a special treat that we bring along and share at the top of the mountain, or on the other shore... Next week we'll be sharing our cookies and wine with Jacky while she's participating in our adventures. We have a small travel wine canteen that holds about 10 oz., just the right size for sharing. Jacky knows that we like Walkers shortbread cookies, which are made in the UK, so she'll be bringing some with her that we'll also share. This is a cool ritual that we started several years ago and it makes all of our adventures feel not only special, but personal too.
Think of a ritual that would work to make your summer expeditions more fun and give it a try. Let me know what you think of and I'll share some of your ideas in a future newsletter.

A Fabulous Summer Smoothie Recipe |
The abundance of fresh fruit this time of year makes smoothies a good choice for a summer treat - they are healthier than a high fat dish of ice cream!
Here's one of my favorites, which actually has no dairy in it at all, yet tastes creamy and delicious. Give it a try and let me know what you think.
1 ½ cups frozen blueberries
1 cup frozen banana chunks*
½ - 1 cup almond or coconut milk
Use stevia to taste if you need sweetener
*Frozen banana chunks can be made any time you have a banana or two that are starting to get brown spots (this is the time when they are the sweetest). Simply peel and cut them into chunks that fit into an ice cube tray, freeze them and then remove from the tray, place in a freezer bag and toss them back in your freezer until you're ready to use them. Frozen bananas will keep for about three months.
Combine all of your ingredients in a blender and process until smooth. Stop the blender every once in a while to scrape down the sides and push any of the unblended fruit into the blades with a rubber spatula. If you like a thick smoothie, use less almond milk, a thinner one will use more. Play with it until it's just right for you!
This wonderful little treat has only 213 calories per 8 oz. serving, and depending on which non dairy milk you chose, less than 2 grams of fat. A much healthier alternative to the same amount of regular vanilla ice cream which has over 500 calories and 34 grams of fat...
